- In non-reactive container (glass, good ceramic or stainless steel) combine the cubed chicken, garlic, salt, cinnamon, black pepper, allspice, oil and lemon juice, mix well, cover (you can use saran wrap).
- *Note* You should marinate the chicken for several hours in the refrigerator to get the best taste out of the chicken.
- Thirty minutes before grilling remove from refrigerator, allowing it to reach room temperature.
- Thread onto skewers *note*.
- If using wooden skewers, be sure to soak them in cold water for at least 20 minutes prior to using.
- Grill over medium charcoal fire, basting and turning several times, until delicately browned.
- The recipe also says you can also grill in the oven, but if you've got a charcoal grill, it works much nicer.
- But if you dont have a charcoal grill; pre-heat the grill. Place chicken on skewers over an oven sheet and cook until browned (6-8 minutes), turning skewers and basting occasionally with the marinade to keep moist.
- I serve this with baked pita,hummus, Kibbee, and a nice green salad with feta cheese dressing.
LAMB SHISH KEBAB

Not sure if the 2lb of lamb for 4 people is really right though, I'll be using closer to 1lb. UPDATE: having made this with 1lb, I would definately double the spices as it didn't have the kick I wanted. Serve with nice yoghurty sauce!

- Mix all marinade ingredients in a large bowl. Add lamb cubes and marinate for 1 hour or overnight.
- Preheat broiler or light the barbecue.
- Divide the meat and vegetables evenly into 4 parts, and skewer the pieces on 4 skewers.

- Place lamb in a large container with a cover.
- In a medium bowl mix olive oil, lemon juice, garlic, wine, bay leaf, salt, pepper, oregano, and rosemary.
- Pour marinade over lamb cubes, stir thoroughly, and refrigerate,covered, at least 24 hours, stirring occasionally.
- About 1 hour before serving time, preheat broiler.
- Drain lamb kebabs, reserving marinade.
- Thread separate skewers of lamb, onion, green pepper, and mushrooms and place on a broiling tray.
- Baste vegetables with some of reserved marinade.
- Broil about 4 inches from heat, turning frequently, as follows: green pepper, about 7 minutes; onions, about 12 minutes; mushrooms, about 3 minutes.
- Remove skewers and allow to cool slightly, until ingredients and skewers can be handled.
- Leave broiler on.
- Remove skewers from ingredients and rethread 4 or 8 skewers (depending on size of skewers) so that each one includes, in alternating pieces, some lamb, onion, green pepper, mushrooms, and tomato.
- Baste again with any remaining marinade.
- Return skewers to broiler and, turning frequently, broil until meat is reheated and cooked medium-rare, vegetables are slightly blackened in spots, and tomatoes are very tender but not yet falling off skewers (5 to 7 minutes more).
- Serve with Rice Pilaf and Pita Bread.

Steps:
- Wash chicken breasts with cool water, then cut them into equal sized cubes.
- In a mixing bowl, squeeze the juice of 1/2 lemon over chicken cubes and coat them with the flour and a pinch of salt. Cut two lemons and put the pieces in the bowl with the chicken.
- Cover and refrigerate for 15 minutes.
- During that 15 minutes, in a mixing bowl, mix tomato paste, yogurt, mustard, garlic cloves, salt, black pepper, cinnamon, 7 spice/allspice, season-all and the juice of 1/2 lemon together.
- Rinse flour and lemon mixture off of the chicken cubes and discard the lemons.
- Coat the chicken with the spice mixture, cover bowl with saran wrap and refrigerate for at least 3 hours.
- I like to eat this meal with fattoush salad and baba ghannouj, and use the marinating time to prepare those things.
- Preheat the oven to 350 degrees.
- Fry the chicken cubes until they are almost completely cooked. Allow them to cool to the touch.
- When they have cooled, put about 6 cubes on each skewer.
- Mix the remaining sauce with 3T of water in the bottom of a Pyrex baking dish and balance the chicken skewers over the top.
- Bake the chicken for about 15 minutes until the sauce thickens and the chicken is thoroughly cooked.
- Serve with pita bread and/or rice.
AFRICAN-STYLE SHISH KEBAB
A fun twist on your average shishkebab. The recipe calls for the use of either lamb or beef. I think it may also be good on chicken. Serve with rice. Enjoy! Note: the timing does not include marinating.

BEEF SHISH KEBAB (BASTURMA MTSVADI)
My most vivid memories of Moscow come from walking down the Arbot and (at certain times) seeing the kiosks set up in the pedestrian walkways. The most delicious smells emanating from each kiosk would make you start drooling! Some kiosks would be making Pampushki (the Ukrainian Doughnuts), others would be making Chebureki (the Crimean Lamb Pie), and others would be making Shashlik (the beef or lamb shish kebab). The following recipe comes from Georgia and is their version of Shashlik. Unlike the Armenians or Turks, Georgians make their Shashlik with beef. The Georgian chef uses sparkling water rather than wine or vinegar to marinate the meat in. They report that using wine or vinegar actually toughens the meat rather than tenderizing it. I prefer the pomegranate juice, if I can get it.

- In a large glass bowl, combine the wine, garlic, grated onion, peppercorns, ans salt, then add the meat and toss to coat well. Refrigerate, covered, for 6 to 8 hours, turning the meat occasionally. Bring to room temperature before grilling.
- Prepare a charcoal grill for grilling. Coals must be coated with white ash before starting the grilling of the meat. Or preheat the broiler.
- Toss the onion and pepper wedges in a bowl with the oil.
- Remove the meat from the marinade and string it on long metal skewers, alternating meat cubes with onion and pepper wedges and pushing everything closely together.
- Grill (or broil) the skewers 4 inches above the coals, turning frequently and sprinkling with the marinade every 3 minutes. Cook 9 to 10 minutes for medium rare, 12 to 13 minutes for medium.
- To Serve:.
- Line two serving platters with the radicchio leaves or the red kale. Cut into the tomatoes as though you were going to cut them into quarters, but leave them intact at the stems. Place one tomato in the middle of each platter. Scatter lemon wedges and scallions on the platters. Stick the sharp end of each skewer into a zucchini slice. Place three skewers on each platter and bring the open ends together to form a tripod. Wrap the ends with a napkin to hold them together. Serve at once.

- Marinate the cubed meat in the marinade for at least 2 hours.
- Put the meat on skewers and grill or broil for 7-10 minutes or until the meat is browned and cooked to your preference.

- Combine in a large sealable plastic bag garlic, lemon juice, 1/4 cup olive oil, allspice, cinnamon and pepper. Seal bag and mix well.
- Cut meat into 1" cubes and place cubed meat in bag with marinade, reseal and place in refrigerator. Marinate 3- 24 hours.
- Cut peppers into 1" wide strips.
- Slice onions 1" thick and quarter.
- Place peppers, onions, mushrooms in a glass bowl or glass cake pan and brush with remaining 1/4 cup olive oil. Cover & refrigerate.
- Using 10 skewers assemble alternating pepper, meat, onion, mushrooms.
- Grill on medium high grill (I use a gas grill with cover) 10 - 12 minutes, rotate and continue cooking 10 - 12 minutes. (If cooking goat or lamb meat needs to be cooked but still red, beef needs to be pink.).
- 14 - 16 pita halves or 3 - 5 cups cooked rice.
- (marinating time is not figured into the prep and cooking time, I prefer to prepare everything the night before then allow to set at room temperature 10 -15 minutes while assembling kebabs).

- Peel the onions and cut into 6 wedges. Separate into "leaves" and set aside.

SHISH KEBAB
Steps:
- Skewer the lamb cubes on the skewers. Stir together the yogurt, olive oil and onion juice in a glass or ceramic pan or bowl and season with salt and pepper. Add the lamb skewers, coat with the marinade and refrigerate, covered, for 4 hours. Prepare a charcoal fire and let it die down a bit or preheat a gas grill for 15 minutes on low. Set the skewers on a skewer holder over the fire and grill until golden brown and succulent, turning often, about 20 minutes. Or, lacking a skewer holder, place them on the grill and grill to perfection. Serve with or on a piece grill-warmed pita bread and the cacik on the side.
- Toss grated cucumber with a light sprinkling of salt. Leave for 30 minutes. Drain the cucumber, squeezing out all the liquid. Pound the garlic in a mortar with 1 teaspoon salt until completely mashed. Stir the garlic into the yogurt and beat with a fork until smooth. Stir in the cucumber, the dill, mint and olive oil and stir until the consistency of a thick soup. Refrigerate for an hour and serve cold.
