SHIITAKE FRIED RICE

Number Of Ingredients 12

Coarse salt and ground pepper
11/2 cups brown rice
1 tablespoon plus 1 teaspoon vegetable oil, such as safflower
2 large eggs, lightly beaten
1 pound shiitake mushrooms, stems removed, thinly sliced
3 garlic cloves, minced
2 tablespoons minced, peeled ginger (from a 2-inch piece)
1/4 to 1/2 teaspoon red-pepper flakes
1 cup frozen shelled edamame, thawed
4 scallions, thinly sliced on the diagonal
3 tablespoons fresh lime juice
2 tablespoons soy sauce

Steps:

  • Bring a large saucepan of salted water to a boil; add rice. Boil until rice is al dente, 30 to 35 minutes. Drain and rinse well with cold water; drain again.
  • In a large nonstick skillet, heat 1 teaspoon oil over medium. Add eggs; season with salt and pepper and cook until set, 1 to 3 minutes. Transfer to a cutting board and let cool; roll up and thinly slice crosswise.
  • In same skillet, heat remaining tablespoon oil over medium-high. Add mushrooms, garlic, ginger, and red-pepper flakes; season with salt. Cook, tossing frequently, until shiitakes are tender, 2 to 4 minutes. Add rice, eggs, edamame, scallions, lime juice, and soy sauce. Cook, tossing, until rice is heated through, 2 to 3 minutes.

1 1/2 cups water
1/2 teaspoon salt
3/4 cup long-grain white rice
2 1/2 tablespoons vegetable oil
2 large eggs, beaten to blend
8 ounces fresh shiitake mushrooms, stems removed, caps sliced
1 large red or yellow bell pepper, thinly sliced
2 teaspoons minced peeled fresh ginger
2 green onions, chopped
1 tablespoon (or more) soy sauce

Steps:

  • Bring 1 1/2 cups water and salt to boil in medium saucepan over high heat. Mix in rice. Reduce heat to low, cover and cook until rice is tender and water is absorbed, about 18 minutes.
  • Meanwhile, heat 1 tablespoon oil in medium nonstick skillet over medium heat. Add eggs. Cook without stirring until eggs are set and bottom is brown, lifting edge of eggs occasionally to let uncooked portion run underneath, about 3 minutes. Turn out egg pancake. Cut in half, then cut crosswise into thin strips.
  • Heat 1 1/2 tablespoons oil in same skillet over medium-high heat. Add mushrooms; Sauté 4 minutes. Add pepper and ginger; Sauté 3 minutes. Add rice, egg strips, onions and 1 tablespoon soy sauce; toss. Season with salt and pepper. Serve, passing more soy sauce, if desired.

2 carrots, halved lengthwise and thinly sliced diagonally
10 ounces shiitake mushrooms, stemmed, caps thinly sliced
1 garlic clove, minced
1 teaspoon minced fresh ginger
6 ounces snow peas, strings removed and halved crosswise
2 cups cooked basmati rice
2 to 3 tablespoons soy sauce
2 tablespoons rice vinegar

Steps:

  • In a large nonstick skillet over medium heat, warm 1 teaspoon oil. Add eggs; swirl to coat bottom of pan. Cook until set, 1 to 2 minutes. Transfer to a cutting board. When cool enough to handle, thinly slice.
  • Add remaining oil and onion to pan; cook, stirring, until translucent, 2 to 4 minutes. Add carrots; cook, stirring, until they begin to brown, 4 to 6 minutes.
  • Add mushrooms; cook, stirring until tender, 2 to 5 minutes. Add garlic, ginger, and snow peas; cook, stirring, until snow peas are vibrant green, 2 to 3 minutes.

1/2 lb fresh shiitake mushrooms, stems discarded and caps thinly sliced
3 cups cold cooked white rice
1/2 teaspoon Asian sesame oil

Steps:

  • Heat a wok or a 12-inch nonstick skillet over moderate heat until hot, then add 1/2 teaspoon vegetable oil and swirl around wok. Add half of egg mixture and swirl wok to coat bottom with a thin layer about 5 inches in diameter. When egg crêpe is set, about 45 seconds, transfer with a wide metal spatula to a plate to cool. Make another egg crêpe with another 1/2 teaspoon vegetable oil and remaining egg mixture in same manner. Stack crêpes, roll into a cylinder, and cut crosswise into 1/4-inch-wide strips, then unroll.
  • Heat remaining 2 tablespoons vegetable oil in wok over high heat until it begins to smoke. Add ginger, white part of scallions, and salt and stir-fry until fragrant, about 30 seconds. Add shiitakes and stir-fry until tender, 3 to 5 minutes. Crumble rice into wok and stir-fry until lightly browned, 10 to 15 minutes. Remove from heat and add scallion greens, egg strips, and sesame oil, tossing to combine.

1 tablespoon olive oil

8 ounces steak, cut into cubes
2 cups shredded carrots
1 cup snow peas
1 cup sliced shiitake mushroom, stems removed
1/4 cup reduced sodium soy sauce
2 teaspoons toasted sesame oil
1/4 cup sliced scallion

Steps:

  • Cook rice according to the package directions.
  • Meanwhile, heat olive oil in a large skillet over medium high heat. Add eggs and swirl to coat the bottom of the pan. Cook until eggs are firm and set, about 1 to 2 minutes. Transfer eggs to a cutting board and set aside.
  • Add garlic and giner to the same skillet, cook for 1 minute. Add steak and cook until cooked through, 3 to 5 minutes. 1 large egg
12 tablespoons salted butter, divided
¾ teaspoon kosher salt, divided, or to taste
1 cup sliced fresh shiitake mushrooms
¼ teaspoon ground black pepper
3 stalks green onion, white and green parts separated and chopped
1 clove garlic, minced
1 tablespoon soy sauce
3 cups leftover cooked jasmine rice
1 ½ cups lump crabmeat
3 tablespoons chopped fresh chives

Steps:

  • Place egg, 1 tablespoon butter, and 1/4 teaspoon kosher salt in a cold, nonstick skillet. Place over medium-low heat and stir with a silicone spatula. Continue stirring until egg starts to set, then becomes a soft scramble with just a little bit of liquid left. Transfer to a bowl and set aside.
  • Melt 4 tablespoons butter in a wok over high heat. Add mushrooms, 1/2 teaspoon kosher salt, and pepper; saute for 2 minutes. Add white parts of green onions plus garlic; saute until mushrooms are browned, about 2 minutes.
  • Add 4 tablespoons butter plus soy sauce to the wok. Break up the leftover rice and add; stir-fry until rice is warmed through and evenly coated with the sauce, about 3 minutes. Add scrambled egg and green parts of the green onions; toss to mix everything. Taste and season with more salt if needed. Divide onto serving plates.
  • Melt 3 tablespoons butter over low heat in a saucepan. Add crabmeat and toss gently, avoiding breaking up the lumps, until heated through, about 2 minutes. Spoon crabmeat onto each plate and garnish with chives.

Egg, Asparagus, Corn and Shiitake Mushroom Fried Rice image

3 large eggs, lightly beaten
1 pinch sea salt
1/4 teaspoon ground white pepper, plus more
2 tablespoons canola oil, divided
2 cloves garlic, finely chopped
4 ounces baby asparagus spears, sliced into 1/2-inch pieces, tips cut into 3/4-inch slices
1 ear fresh corn, kernels cut from the cob
3 ounces fresh shiitake mushrooms, stemmed and thinly sliced
2 cups cooked jasmine rice, cold
2 tablespoons low-sodium light soy sauce
1 teaspoon toasted sesame oil
1 red chile, seeded and finely chopped

Steps:

  • In a small bowl, lightly beat the eggs and season with sea salt and a pinch of ground white pepper.
  • Heat a wok over a medium heat and add 1 tablespoon of the canola oil. Pour in the beaten eggs and stir to lightly scramble. When the egg has turned golden and is still fluffy, take off the heat, transfer the eggs to a bowl and set aside.
  • To cook the rice, reheat the wok over a high heat and, when it starts to smoke, add the remaining canola oil. Add the garlic and stir quickly for a few seconds, then add the asparagus and corn and cook for 2 minutes until the asparagus starts to turn a deeper green and the corn a golden yellow. Add the mushrooms and toss together, then add the cooked rice. Stir well and toss to combine all the ingredients, then cook for 1-2 minutes. Season with the light soy sauce, stir and mix well.
  • Return the scrambled eggs to the wok, season with the toasted sesame oil and remaining ground white pepper and give it a few more stirs.
  • Transfer to a large serving plate and garnish with the chopped chile. Serve immediately.

2 tablespoons vegetable oil
1 large egg, beaten
1 cup diced extra-firm tofu, patted dry
Kosher salt
1 cup thinly sliced stemmed shiitake mushrooms
1 tablespoon finely grated fresh ginger
1 teaspoon minced garlic
1 teaspoon soy sauce
3 cups cold cooked long-grain white rice
2 tablespoons chopped scallions

Steps:

  • Heat a large nonstick skillet or wok over high heat and then swirl in 1 tablespoon of the oil. When the oil begins to smoke, add the egg and swirl the skillet to make a flat egg pancake that's only half set, about 10 seconds; scoop onto a plate.
  • Add the tofu to the skillet, season with 1/4 teaspoon salt and stir-fry until golden, about 4 minutes. Transfer to a bowl. Add the remaining 1 tablespoon oil to the skillet, then add the shiitakes and cook until golden, about 3 minutes. Add the ginger, garlic, soy sauce and 1/4 teaspoon salt and stir-fry until fragrant, about 1 minute.
