1 cup rice (white, basmati, or jasmine)
1 tablespoon olive oil
2 large eggs, lightly beaten
2 garlic cloves, minced
1 tablespoon peeled and minced fresh ginger
8 ounces steak, of your choice cut in 1-in . cubes
2 medium carrots, sliced or 1/2 cup shredded carrot
1 cup snow peas, strings removed
1 cup sliced shiitake mushroom, stems removed
1/4 cup reduced sodium soy sauce
2 teaspoons toasted sesame oil
1/4 cup sliced scallion

Steps:

  • Cook rice according to package directions.
  • Meanwhile, heat olive oil in large skillet over medium-high heat. Add eggs and swirl to coat the bottom of the pan. Cook until eggs are firm and set, about 1-2 minutes. Transfer eggs to cutting board and set aside.
  • Add garlic and ginger to the same skillet; cook for 1 minute. Add steak and cook until cooked through; 3-5 minutes. Add the carrots, snow peas, and mushrooms. Add soy sauce and sesame oil and bring to a simmer. Stir in rice and heat through. Remove from heat and stir in scallions.
  • Slice eggs into thin strips. Spoon fried rice onto a serving platter, top with eggs and serve.

FRIED RICE WITH PEPPERS, ONIONS AND SHIITAKE MUSHROOMS

1 1/2 cups water
1/2 teaspoon salt
3/4 cup long-grain white rice
2 1/2 tablespoons vegetable oil
2 large eggs, beaten to blend
8 ounces fresh shiitake mushrooms, stems removed, caps sliced
1 large red or yellow bell pepper, thinly sliced
2 teaspoons minced peeled fresh ginger
2 green onions, chopped
1 tablespoon (or more) soy sauce

Steps:

  • Bring 1 1/2 cups water and salt to boil in medium saucepan over high heat. Mix in rice. Reduce heat to low, cover and cook until rice is tender and water is absorbed, about 18 minutes.
  • Meanwhile, heat 1 tablespoon oil in medium nonstick skillet over medium heat. Add eggs. Cook without stirring until eggs are set and bottom is brown, lifting edge of eggs occasionally to let uncooked portion run underneath, about 3 minutes. Turn out egg pancake. Cut in half, then cut crosswise into thin strips.
  • Heat 1 1/2 tablespoons oil in same skillet over medium-high heat. Add mushrooms; Sauté 4 minutes. Add pepper and ginger; Sauté 3 minutes. Add rice, egg strips, onions and 1 tablespoon soy sauce; toss. Season with salt and pepper. Serve, passing more soy sauce, if desired.

SWEET PEPPER RICE



Sweet Pepper Rice image

This colorful rice is perfect for a Mexican meal. The rice takes on the warm essence of sweet peppers, onions, and paprika as they slowly simmer together. Cayenne adds heat, but for a spicier version, include a diced jalapeno chili or two. This also makes a nice filling for bell peppers. Adapted from Field of Greens cookbook by Annie Somerville. I f you do use brown basmati rice, you may need to cook it a little longer, check pkg. directions)

1 cup basmati rice (I like to use brown basmati)
1 tablespoon olive oil
1 tablespoon unsalted butter
1/2 medium yellow onion, diced (about 1 cup)
1/2-1 teaspoon salt
1 -2 garlic clove, finely chopped
1/4 cup dry white wine (or veg. broth)
1 medium red bell pepper, diced (or yellow pepper) (optional)
1 teaspoon paprika
cayenne pepper
1/8 teaspoon black pepper
2 cups boiling water
2 -3 tablespoons cilantro, coarsely chopped (or parsley)

Steps:

  • Rinse the rice well. Drain and set aside.
  • Heat oil and butter in a large skillet that has a tight fitting lid. Add the onion and 1/2 teaspoons salt; saute over medium heat about 5 mins., until the onion is soft. Add the garlic and wine(or veg. broth) and cook 1-2 minutes , until the pan is nearly dry. Follow with the bell peppers(and chlies if using), 1/2 teaspoons salt, paprika, and a few pinches of cayenne, and the black pepper. Stir in the drained rice and saute with the onions and peppers until heated through, about 3 minutes.
  • Pour the boiling water over, making sure that is the rice is covered. When the water returns to a boil, reduce heat to low, cover the pan and cook until rice is tender, just under 20 mins.(longer for brown rice).
  • Gently stir in the cilantro and serve. Enjoy!

SWEET AND SPICY HAM FRIED RICE



Sweet and Spicy Ham Fried Rice image

Pair sweet chili sauce with chili oil to get a sweet heat for this ham-and-shiitake rice dish.

2 tablespoons vegetable oil
1 large egg, beaten
1 cup diced ham
1/2 cup sliced stemmed shiitakes
1/2 cup diced red bell pepper
1 tablespoon Asian sweet chili sauce
1 teaspoon finely grated fresh ginger
1 teaspoon soy sauce
Kosher salt
3 cups cold cooked long grain white rice
1 to 1 1/2 teaspoons Asian chili oil
2 tablespoons chopped scallions

Steps:

  • Heat a large nonstick skillet or wok over high heat and then swirl in 1 tablespoon of the oil. When the oil begins to smoke, add the egg and swirl the skillet to make a flat egg pancake that's only half set, about 10 seconds; scoop out onto a plate.
  • Add the remaining tablespoon oil, then add the ham and shiitakes and cook, stirring constantly, until golden, about 3 minutes. Add the bell pepper, sweet chili sauce, ginger, soy sauce and 1/4 teaspoon salt and cook, stirring constantly, until the pepper are crisp-tender, about 2 minutes.
  • Add the rice, stirring to break up any clumps, and spread it out in the skillet. Cook until heated through, about 3 minutes. Return the egg to the skillet and cook, stirring and breaking up the egg, to mix it in thoroughly, about 1 minute. Season with additional salt if needed. Stir in the chili oil, sprinkle with the scallions and serve.
