1 lb crawfish, chopped
1 onion, chopped
1 bell pepper, chopped
3 stalks celery, chopped
1 garlic clove
1/2 cup butter
8 ounces cream cheese
1/4 cup mayonnaise
1 teaspoon dry mustard
creole seasoning, salt, pepper to taste

Steps:

  • Sauté bell pepper, onions, celery, garlic and crawfish in butter.
  • Add cream cheese, lower temperature and cover to let cream cheese melt. Add mayonnaise, salt, pepper, creole seasoning to taste. Simmer approximately 15-20 minutes.
  • Add parsley if desired. Serve warm.

2 tablespoons salted butter
1/2 cup diced green bell pepper
1 small yellow onion, diced (about 1 cup)
1/2 cup diced celery
3 garlic cloves, chopped
1 jalapeno chile, diced
1 teaspoon kosher salt
1/2 teaspoon black pepper
2 teaspoons paprika
1/2 teaspoon cayenne pepper
1 pound frozen peeled crawfish tails, thawed according to package directions
8 ounces cream cheese, softened
2 cups grated extra-sharp Cheddar cheese (about 8 oz.)
1/4 cup heavy whipping cream
2 tablespoons Creole mustard
1 tablespoon Worcestershire sauce
2 teaspoons hot sauce
2 tablespoons fresh lemon juice
2 tablespoons chopped fresh flat-leaf parsley
Crackers, toasted baguette slices

Steps:

  • Melt butter in a large sauté pan or skillet over medium. Add bell pepper, onion, celery, garlic, jalapeño, salt, and black pepper, and cook 6 minutes. Add paprika and cayenne pepper, and cook 1 more minute.
  • Place crawfish, cream cheese, Cheddar cheese, and cream in a 6-quart slow cooker. Stir in bell pepper mixture, Creole mustard, Worcestershire sauce, and hot sauce. Cover and cook on HIGH 45 minutes. Reduce heat to WARM. Stir in lemon juice and parsley; serve with crackers or toasted baguette slices.

This is a warm spicy dip that melts in your mouth. I love making it for dinner parties and serving as the appetizer.

6 tablespoons unsalted butter
1 large onion, diced
1/2 green bell pepper, chopped
1/2 red bell pepper, chopped
1/2 cup mushroom, finely chopped
1 large garlic clove, minced
1/4 cup chopped flat leaf parsley
1 tablespoon dry white wine
1 lb crawfish tail, cooked and peeled
creole seasoning, to taste
fresh ground black pepper, to taste
hot sauce, to taste
8 ounces cream cheese, softened
2 tablespoons parmesan cheese, grated
1 loaf French bread
olive oil
fresh ground black pepper
paprika

Steps:

  • Preheat your oven to 375°F.
  • Melt butter in a sauce pan on medium heat. Add your onion, bell peppers, and mushrooms. Let cook 2-3 minutes or until onions start to turn translucent.
  • Add your garlic, parsley, white wine, crawfish, creole seasoning, fresh black pepper and hot sauce. Remember you can always add more seasonings later. Less sometimes is more unless you know exactly how you want/like it.
  • Let cook for 5 minutes, stirring occasionally. Add cream cheese and reduce heat, stirring until smooth. Taste and adjust seasonings to your taste. Pour into a baking dish and sprinkle Parmesan cheese on top. Bake for 15 minutes.
  • Slice french bread into inch thick slices. Brush one side with olive oil, and lightly sprinkle that side with fresh ground pepper and paprika.
  • Place slices of bread in the oven for 5-7 minutes or until toasted on each side.
  • Serve bread with crawfish dip.
  • You can substitute or add shrimp and crab in this recipe also.

1 (10 3/4 ounce) can cream of potato soup
5 green onions, chopped
1 tablespoon lemon juice
1/2 teaspoon black pepper
1 teaspoon creole seasoning
1/4 teaspoon pepper sauce

Steps:

  • Thaw crawfish tails.
  • Combine crawfish tails, soup, and cream cheese in a saucepan.
  • Heat until melted.
  • Add seasonings and onions.
  • Mix well.
  • Serve with corn chops. (I prefer Frito scoops.).

4 ounces (1 stick) butter
1 cup finely diced onion
1 cup finely diced scallion
3 lbs cream cheese
8 ounces sour cream
1/4 cup fresh lemon juice
2 lbs crawfish tails, peeled
1/4 cup extra-dry vermouth
2 tablespoons louisiana hot sauce, such as Crystal Hot Sauce
2 teaspoons cayenne pepper
2 teaspoons creole seasoning, such as Tony Chachere's Original Creole Seasoning

Steps:

  • In a large pan, melt the butter. Add the onions and scallions and cook until the onions are translucent, 5 to 8 minutes. Add the cream cheese, sour cream and fresh lemon juice and whisk until creamy and smooth.
  • Mix in the crawfish, vermouth, hot sauce, cayenne and Creole seasoning. Cook for 10 minutes over low heat, stirring constantly to prevent scorching.
  • Let cool and then refrigerate until ready to serve.

1 (16 ounce) package crawfish, peeled
1/2 cup butter, divided in half
1 bunch green onion, chopped
1/2 cup flat leaf parsley, chopped
3 tablespoons flour
1 pint half-and-half cream
3 tablespoons dry sherry
1 tablespoon garlic, minced
salt, to taste
black pepper, to taste
cracked red peppercorns, to taste

Steps:

  • In a large heavy skillet melt 1/4 cup butter.
  • Add crawfish and saute 10 minutes.
  • In another large skillet melt the remaining 1/4 cup butter and saute the green onions, garlic and parsley.
  • Blend in the flour with the onion mixture and gradually add the cream, stirring constantly to make a thick sauce.
  • Add the sherry and the crawfish to the cream sauce and the seasonings to taste, mixing well.

1 bunch green onion, sliced (about 1 cup)
1 small green bell pepper, diced
1 lb peeled crawfish tail, cooked peeled, thawed and undrained
2 garlic cloves, minced
1 (4 ounce) jar diced pimentos, drained
2 teaspoons creole seasoning
1 (8 ounce) package cream cheese, softened
French baguette, slices
thin sliced green onion
chopped flat leaf parsley

Steps:

  • Melt butter in a Dutch oven over medium heat; add green onions and bell pepper. Cook, stirring occasionally, 8 minutes or until bell pepper is tender.
  • Stir in crawfish and next 3 ingredients; cook, stirring occasionally, 10 minutes. Reduce heat to low. Stir in cream cheese until mixture is smooth and bubbly.
  • Garnish with green onion slices or chopped parsley.
  • Serve with toasted French bread slices.
