I came up with this recipe as I know there is several different combinations of cheesey potatoes out there, but this is the best cheesey potatoe casserole around! Well, at least I believe so. 1 can cream of chicken soup
1 can cheddar cheese soup
8 oz cream cheese
1/2 stick butter
1 pkg oreida frozen southern style hashbrowns
1 pkg cheddar cheese, shredded

Steps:

  • 1. I usually let my cream cheese get to room temp before I mix it. Also, I like to thaw out my hashbrowns so it can cook quicker. Blend the cream cheese and butter until smooth, add the cream chicken and cheddar cheese soup and mix in the potatoes a little at a time to get well coated. Pour into a 9x13 inch pan cover with tin foil and bake at 350 degrees for 45 minutes or until potatoes are done, uncover and top with shredded cheese the last 15 minutes until melted and serve. I usually double the recipe if I am having a family get together. Enjoy!
  • 2. You could also use the Country style hasbrowns if you prefer.

Sherry potatoes, thinly sliced potatoes baked in the oven with butter and dry sherry.

1 pound russet or yukon gold potatoes, scrubbed clean, sliced into 1/4-inch slices
1/4 cup butter (1/2 a stick), melted
1/4 cup dry sherry
Salt
Freshly ground black pepper
1 tablespoon fresh parsley, chopped

Steps:

  • Preheat oven to 375°F
  • Prepare potato slices in baking dish: Arrange potato slices in layers in a gratin pan or baking pan, sprinkling salt and pepper over each layer. Pour sherry over the potatoes. Pour the melted butter over the potatoes. Make sure the potatoes are well coated.
  • Bake: Bake at 375°F uncovered for 30-40 minutes or until potatoes are cooked, but not mushy, and they are slightly browned on top. Remove from oven, sprinkle with chopped fresh parsley to serve.

1 can (10-3/4 ounces) condensed cream of chicken soup, undiluted
1 cup sour cream
1 small onion, finely chopped

2 tablespoons butter
2 tablespoons all-purpose flour
1 ½ cups milk
¾ cup shredded Swiss cheese

  • Preheat the oven to 375 degrees F (190 degrees C). Grease a casserole dish.
  • Arrange sliced potatoes in the casserole dish; season with salt.

2 tablespoons salted butter
3 pounds Yukon Gold potatoes, peeled and very thinly sliced
Kosher salt and freshly ground black pepper
2 tablespoons chopped fresh chives, plus more for garnish
1 cup shredded Gruyère
1 cup shredded sharp Vermont white Cheddar
1/2 cup shredded fontina cheese
2 cups heavy cream
2 cloves garlic, minced
1/4 teaspoon grated nutmeg
1/2 cup sour cream

Steps:

  • Preheat the oven to 375 degrees F.
  • Butter a 12-inch cast-iron skillet. Arrange half of the potatoes in the skillet. Sprinkle with salt and pepper, half the chives, and half of each of the Gruyère, Cheddar and fontina cheeses. Repeat the layers once.
  • Heat the cream, garlic, nutmeg, 1/2 teaspoon salt and 1/2 teaspoon pepper in a medium saucepan over medium heat until bubbles form around the edges, about 3 minutes. SWEET POTATOES WITH SHERRY

3½ lbs. medium-sized, red-skinned sweet potatoes
8 TBSP. butter at room temperature
4 TBSP. brown sugar
3 TBSP. Cream Sherry
½ tsp. salt
¼ tsp. black pepper

Steps:

  • Preheat oven to 425°F. Pierce each of the sweet potatoes in several places with fork. Place them on a baking sheet lined with parchment paper and bake for about 55-60 minutes or until tender when pierced with knife. Cool slightly (until you can handle them).
  • Cut the sweet potatoes in half, lengthwise. Using a spoon, scoop the potato pulp into a bowl then add the butter and brown sugar to potatoes. Using a handheld mixer, beat until smooth. Add the sherry and season the potatoes generously with salt and pepper. Transfer the potatoes to a saucepan and reheat them gently over medium-low heat before serving.
