A really, really (really) simple soup my girlfriend always makes me when I'm under the weather. It's a nice tweak on the vegetable-boullion-with-pasta-star-soup I normally request. From "Vegan Planet" by Robin Robertson.

10 garlic cloves, peeled
2 tablespoons extra virgin olive oil
5 cups vegetable stock
salt
cayenne
1/2 cup star shaped pasta or 1/2 cup other tiny pasta
2 tablespoons dry sherry

Steps:

  • Place the garlic and olive oil in a blender or food processor and process until smooth.
  • Transfer to a large pot over medium heat and cook until very fragrant, about 3 minutes, being careful not to let the garlic brown.
  • Stir in the stock and season with salt and cayenne to taste.
  • Bring to a boil, reduce the heat to medium-low, and simmer for 20 to 30 minutes.
  • Meanwhile, cook the pasta in a pot of boiling salted water, stirring occasionally, until al dente, about 5 minutes. Drain and divide among 4 soup bowls.
  • When ready to serve, add the sherry to the soup, ladle into the bowls, and serve at once.

A basic, homey, simple soup. According to food historians, fassolatha (pronounced fah-so-LAH-thah) has been around since ancient Greek times. It is the national dish of Greece, representing the best of the Greek way of cooking: legumes, vegetables, herbs, and olive oil. Serving suggestions: Serve Fassolatha with a side of feta cheese sprinkled with pepper and oregano and doused in olive oil, crusty bread, black olives, and salty dishes like anchovies, smoked herring, or others of your choice.

1 1/2 cups white beans (Great Northern or cannellini)
2 bay leaves
2 carrots, sliced thickly
1 large mild onion, grated
5 -6 stalks celery, leaves and stalks, chopped
1 (28 ounce) can seeded seeded skinned chopped plum tomatoes
2/3 cup extra virgin olive oil
1 teaspoon salt (or to taste)
1 teaspoon pepper (or to taste)
flat leaf parsley, chopped
8 -10 cups water

Steps:

  • Rinse beans, soak for 24 hours and drain.
  • Place drained beans and bay leaves in a large soup pot with 8 cups of water. Bring to a boil, reduce heat to low and simmer for 2 hours. Remove bay leaves.
  • Add carrots, onion, celery, and simmer for 30 minutes longer.
  • Add tomatoes, salt, pepper, and olive oil, and cook for 30 minutes. The beans should be soft and creamy, but not to the point of disintegrating.
  • Remove from heat, season to taste, and serve in bowls, drizzled with olive oil and sprinkled with chopped parsley. Fassolatha bean soup is served warm or at room temperature.

My My My Minestra - Italian Vegetable Soup With Pasta image

Some of Italy's finest ingredients make up this warming soup. Adapted from 'Pasta Cooking' by Parragon.... the original recipe called for spinach, which I didn't fancy, so I subbed zucchini. I get the impression that our zucchini are generally a bit smaller than those in the Northern hemisphere, so balance the amount used with your other vegetables, just feel your way! You don't want your soup to be over-loaded with any one vegetable. Hope you enjoy!

1 medium onion, sliced
1 large carrot, cut into matchsticks
2 stalks celery, cut into matchsticks
3 medium zucchini, cut into matchsticks
2 tablespoons olive oil
3 pints water
salt and pepper
1 (420 g) can chopped tomatoes
120 g short-cut macaroni
2 garlic cloves, crushed
2 tablespoons chopped fresh parsley
1 teaspoon fresh rosemary
60 g parmesan cheese, grated

Steps:

  • Heat oil in large heavy pan and fry vegetable strips until just browning, stirring occasionally. Pour on water, season to taste with salt and pepper, and let simmer for 30 minutes.
  • Add tomatoes, garlic, macaroni, parsley and rosemary to the soup, and simmer for a further 10 minutes. Adjust seasoning to taste.
  • Serve with grated Parmesan cheese if desired.

KOREAN KIMCHEE

My dad got this recipe from a Korean lady when he was in korea about 28 years ago.My mom makes it really really hot by adding more pepper but I like it with less.

1 head cabbage
1/4 teaspoon red pepper flakes
1/2 cup salt
3 garlic cloves, chopped
2 cups water (to start with)

Steps:

  • Chop or slice cabbage into bite size pieces.
  • Put in a large bowl.
  • Add salt to about 2 cups water.
  • Stir to dissolve; pour over cabbage.
  • Add more water--enough to cover all cabbage and let stand overnight and all the next day.
  • Drain & rinse cabbage.
  • Add about 1 cup water the garlic and pepper flakes.
  • Let stand 2 more days then put in the fridge to chill and then eat.

200 g star pasta (stelline)
340 g asparagus
3 small potatoes
3 sprigs of fresh mint
1 liter vegetable stock or 1 liter chicken stock
1 tablespoon unsalted butter
1/2 onion, minced
salt and pepper

Steps:

  • Wash the asparagus spears and cut the green parts into rounds, keeping the tips as individual inch-long pieces and setting them aside.
  • Peel and dice the potatoes.
  • Mince the onion and sauté it in the butter with the asparagus rounds, potato, and mint. Check seasoning, add some of the broth, and cook the mixture for 20 minutes or so.
  • During this time boil the asparagus tips for a few minutes in a little more of the broth.
  • When the 20 minutes are up, blend the mixture containing the potatoes and stir it into the main broth pot together with the broth containing the asparagus tips, bring everything to a boil, add the stelline, and cook until they are done.
  • Serve.
