Ultimate Mexican casserole with refried beans, rice, ground beef and veggies, layered and baked to cheesy perfection! A healthy family favorite!

2 cups cooked brown rice (or quinoa or other grain of choice-about 2/3 cup uncooked)
1 tablespoon olive oil
1 yellow onion (chopped)
1 green bell pepper (chopped)
1 red bell pepper (chopped)
1 pound lean ground beef (or swap ground chicken or ground turkey)
2 tablespoons chili powder
1 1/2 teaspoons ground cumin
1/2 teaspoon kosher salt
1/2 teaspoon ground black pepper
1/4 teaspoon cayenne pepper
2 cloves minced garlic (about 2 teaspoons)
1 cup plain nonfat Greek yogurt
1 can reduced fat refried black beans (15 ounces)
3/4 cup freshly grated sharp cheddar cheese (divided)
3/4 cup freshly grated mozzarella cheese (divided)
1 10-ounce tomatoes with green chiles (such as Rotel)
Fresh cilantro (for serving)
Chopped green onions (for serving)

Steps:

  • Be sure to cook your rice if you haven't already (if you are just reading this and just now realized you don't have any cooked rice and don't want to wait, consider switching to quinoa, which cooks much more quickly than brown rice. Instant brown rice also works in a pinch).
  • Preheat the oven to 350 degrees F. Coat a large casserole dish (9x13 inch or similar) with nonstick spray and set aside.
  • In a Dutch oven or large, deep skillet, heat the olive oil over medium high. Add the onion, green bell pepper, and red bell pepper. Sauté until slightly softened, about 5 minutes.
  • Add the beef, chili powder, cumin, salt, black pepper, and cayenne pepper. Continue to sauté until the beef is cooked through and no longer pink, about 4 to 5 minutes. Add the garlic and cook just until fragrant, about 1 additional minute.
  • Remove from the heat. Stir in the rice and Greek yogurt until evenly combined. Taste and adjust seasoning as desired.
  • Assemble the casserole: Spread the beans into an even layer in the prepared baking dish.
  • Sprinkle 1/4 cup cheddar cheese and 1/4 cup mozzarella cheese over the beans.
  • Scatter the tomatoes with green chilis over the top.
  • Spoon the rice and ground beef mixture on top of the tomatoes, spreading it into an even layer.
  • Top with remaining 1/2 cup cheddar and 1/2 cupmozzarella.
  • Bake the casserole, uncovered, until the cheese is melted and the casserole is hot, about 15 minutes.
  • Turn the oven to broil, then continue cooking until the cheese is lightly browned, about 3 to 4 additional minutes, watching carefully so that the cheese does not burn.
  • Let rest 5 minutes, sprinkle with chopped cilantro and green onions, and serve.

This is an easy and very tasty dish. I often substitute ground turkey and low fat dairy products and it is still delicious! Serve with chips, salsa and green salad.

1 pound lean ground beef
2 cups salsa
1 (16 ounce) can chili beans, drained
3 cups tortilla chips, crushed
2 cups sour cream
1 (2 ounce) can sliced black olives, drained
½ cup chopped green onion
½ cup chopped fresh tomato
2 cups shredded Cheddar cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large skillet over medium-high heat, cook ground beef until no longer pink. Stir in salsa, reduce heat, and simmer 20 minutes, or until liquid is absorbed. Stir in beans, and heat through.
  • Spray a 9x13 baking dish with cooking spray. Spread crushed tortilla chips in dish, and then spoon beef mixture over chips. Spread sour cream over beef, and sprinkle olives, green onion, and tomato over the sour cream. Top with Cheddar cheese.
  • Bake in preheated oven for 30 minutes, or until hot and bubbly.

I've been making this for 30 + years or more. It's my family's favorite meal.

Number Of Ingredients 9

1 lb lean ground beef
2 Tbsp dried onions, minced
1 can(s) rotel diced tomatoes and green chilies (10 oz.)
1 can(s) cream of mushroom soup (10.75 oz.)
2 can(s) pinto beans, not drained (15.5 oz.)
16 white corn tortillas ( broken into 4ths)
1 pkg taco seasoning mix (mild) 1.5 oz.
2 c shredded, sharp cheese
2 tsp minced garlic

Steps:

  • 1. Brown ground beef in large skillet, crumble and add dried onions and garlic. Add the tomatoes, can soup, beans and Taco Seasoning Mix.
  • 2. In a 9 X 13 pan, put 1/2 the crumbled tortillas, then 1/2 the meat mixture----then a layer of tortillas and meat mixture.
  • 3. Bake in 400 degree oven for 30 minutes. Take out and sprinkle with cheese and bake 5 more minutes.

This is my mother-in-law's recipe, and one of my husband's favorite meals! It is a warm and delicious comfort food casserole. Note: Using the blue package of Herb Seasoned Pepperidge Farm stuffing is a MUST! It sets up the whole flavor of the meal. If you are trying to clear out the cupboard or are unable to get the blue package, then you'll need to use two of the standard sized boxes (8 oz.) of stuffing, preferably herb seasoned.

1 (16 ounce) package Pepperidge Farm stuffing (herb seasoned-blue package, see note above)
1/2-1 cup butter
2 (10 3/4 ounce) cans cream soup (celery, mushroom, chicken)
1 (5 ounce) can evaporated milk
1/2 small onion, chopped
4 cups cooked chicken, chopped (rotisserie chicken works great!)
1 (15 ounce) can sweet peas or 2 cups frozen peas

Steps:

  • Preheat oven to 350 degrees F.
  • In large pot, melt butter over medium-high heat.
  • Add dry stuffing, stir to coat evenly with butter.
  • Layer 1/2 stuffing on bottom of an ungreased 9 x 13 baking dish.
  • In large bowl, combine evaporated milk, cream soups, and onion.
  • Gently fold in peas and chicken.
  • Pour chicken/soup mixture over stuffing in baking dish.
  • Top with remaining stuffing.
  • Bake for 45 minutes, or until bubbling in the middle.
  • Serve and enjoy!
