SHANNON'S STRAWBERRY PINEAPPLE PARFAIT
This is a spin off from my Good For You parfait. It is also delicious, try them both :) If you like, this can be made into 2 smaller parfaits, just add another tablespoon of Grape Nuts to the list of ingredients and divide ingredients evenly between two parfait glasses.

- Crust:.
- In a large bowl combine all 3 ingredients and mix until the dough comes together when pinched between fingers.
- Filling:.
- In a medium mixing bowl, combine chopped strawberries and 1 Tbsp sugar. Mix well until coated. Set aside.
- Combine cream cheese, ½ cup sugar and vanilla in a medium mixing bowl. Beat with an electric mixer until your mixture is light and creamy. Fold in whipped topping.
- Add 2 Tbsp graham cracker mixture to the bottom of each cup.
- Press down on mixture with your fingers to create a crust.
- Add the cream cheese filling, dividing evenly between the 16 servings (reserve a little to dollop on top of each cup if desired).
- Spoon strawberries over each serving, dividing evenly.
- Top with additional whipped topping.
STRAWBERRY PARFAIT

Steps:
- Heat sugar and water in a small saucepan over a low heat until sugar has completely dissolved.
- Bring to a boil, then boil rapidly for 2 minutes.
- Meanwhile, whisk egg yolks in a bowl with a hand-held electric mixer for 3 minutes or until pale and mousse-like.
- Slowly add boiling syrup to yolks, whisking constantly, and continue to whisk for 5 minutes or until mixture is very thick and about 3 times its original volume.
- Crush strawberries with a fork to a coarse puree in a bowl.
- Slit open vanilla pods and scrape seeds into another bowl.
- Add cream and whisk until it forms soft peaks, then gently fold into egg mixture, followed by crushed strawberries.
- Divide mixture between 8 x ¾-cup (185ml) glass serving dishes or ramekins, cover well with plastic wrap and freeze for at least 4 hours.
- To serve, remove parfaits from freezer and leave to soften slightly at room temperature.
- Pile a few strawberries on top and serve.

- Preheat oven to 350°F Combine tofu, soy cream cheese, confectioners' sugar and vanilla in blender or food processor, and purée until smooth. Spoon into large serving bowl, and stir in fresh and dried strawberries.

STRAWBERRY MOUSSE PARFAIT
This is such a pretty recipe. I just love parfaits and I adore this light and fluffy mousse one. Butter cookies are among my fave and I love the fact that they are used in this recipe. Easy recipe with little prep needed.

Steps:
- Dice 1C Strawberries and mix with sugar and lemon. Cut remaining 1/3C into a large dice and set aside.
- Sprinkle gelatin evenly over water in a very small saucepan and let stand for 1 minute to soften. Then warm over low heat stirring until gelatin is dissolved. Stir gelatin into mashed strawberries.
- Set bowl in a a larger bowl of ice and cold water and stir frequently until a spoonful of gelatin mixture holds its shape briefly before dissolving back into mixture. About 5 minutes.
- Beat cream in another bowl with a whisk until it just holds stiff peaks. Fold about a 1/2C of cream into gelatin mixture.
- In a decorative glass or dish, begin layering whipped cream, mousse, cookie crumbs and whipped cream until glass is full.
