12 slices bacon
⅔ cup margarine
⅔ cup all-purpose flour
7 cups milk
4 large baked potatoes, peeled and cubed
4 green onions, chopped
1 ¼ cups shredded Cheddar cheese
1 cup sour cream
1 teaspoon salt
1 teaspoon ground black pepper

Steps:

  • Place bacon in a large, deep skillet. Cook over medium heat until browned. Drain, crumble, and set aside.
  • In a stock pot or Dutch oven, melt the margarine over medium heat. Whisk in flour until smooth. Gradually stir in milk, whisking constantly until thickened. Stir in potatoes and onions. Bring to a boil, stirring frequently.
  • Reduce heat, and simmer 10 minutes. Mix in bacon, cheese, sour cream, salt, and pepper. Continue cooking, stirring frequently, until cheese is melted.

This Loaded Baked Potato Soup takes a classic recipe and lightens it up for a much healthier, but still creamy and delicious, soup that you can eat all winter long!

Number Of Ingredients 13

3 slices bacon
1 1/2 lbs. russet potatoes, peeled and cut into 3/4-inch pieces ((reserve peels from two potatoes and chop coarsely) )
1 large onion, (finely chopped)
2 garlic cloves, (minced)
1 Tbsp all-purpose flour
4 cups low-sodium chicken or vegetable broth
1/4 tsp mustard powder
1 sprig thyme
1 cup half-and-half
1 cup 0% Greek yogurt
2 oz. (1/2 cup) shredded light cheddar cheese
Salt and pepper
2 chives, (sliced thinly)

Steps:

  • In a large dutch oven over medium heat, cook bacon until crisp, about 3 minutes. Using a slotted spoon, move bacon to paper towel-lined plate. When it cools a bit, crumble it.
  • Add chopped potato skins to pot and cook until browned and crisp, about 8 minutes. Transfer to plate with the bacon.
  • Add chopped onion to the pot and cook over medium heat until softened, 5-7 minutes. Stir in the garlic and cook until fragrant, about 30 seconds.
  • Stir in the flour and cook for another minute, before whisking in the broth and making sure to scrape up any brown bits on the bottom of the pot, until smooth. Stir in the potatoes, mustard powder, and thyme and bring the mixture to a simmer. Then, reduce the heat to medium-low, cover the pot, and continue cooking until the potatoes are nice and tender. This will likely take about 7-8 minutes.
  • Remove the sprig of thyme and put half the soup into a blender and blend until nice and smooth. Return blended soup to pot and whisk in half-and-half.
  • Put yogurt in a separate, small bowl and then stir in 1/2 cup of the hot soup (this will temper it) before whisking mixture into the pot of soup.
  • Stir in the cheese and sprinkle with salt and pepper to taste.
  • Serve in bowls, topped with bacon, potato skins, and chives.

The thickest and most delicious potato soup ever. I created this soup after having a similar soup at a restaurant. Incredible comfort food with ease! It's a very simple recipe to adjust to your taste. My family always asks for this soup in the winter. Garnish with chives, bacon crumbles, and Cheddar cheese.

6 strips bacon
5 Yukon Gold potatoes, cut into eighths
½ cup butter
1 small sweet onion, diced
2 cloves garlic, minced
3 tablespoons flour
1 teaspoon salt
1 teaspoon ground black pepper
1 pint half-and-half
3 (15 ounce) cans chicken broth
1 (8 ounce) container sour cream
2 cups shredded Cheddar cheese
1 teaspoon dried parsley

Steps:

  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until crisp, about 10 minutes. Remove from skillet and crumble. Reserve drippings.
  • Place potatoes in a pot; cover with water. Bring to a boil. Reduce heat to medium-low. Cook, covered, until tender, 15 to 20 minutes. Drain.
  • Melt butter in a large skillet over medium-high heat. Add onion and garlic; saute until onion is translucent, about 5 minutes. Stir in bacon crumbles, reserved bacon drippings, flour, salt, and pepper. Reduce heat; add the boiled potatoes, half-and-half, and chicken broth. Simmer until thickened, about 5 minutes. Add sour cream and 1 cup Cheddar cheese; cook and stir until heated through, about 5 minutes. Garnish soup with remaining Cheddar cheese and parsley.

4 large baking potatoes (about 12 ounces each)
2/3 cup butter, cubed
2/3 cup all-purpose flour
3/4 teaspoon salt
1/4 teaspoon white pepper
6 cups 2% milk
1 cup sour cream
1/4 cup thinly sliced green onions
1 cup shredded cheddar cheese
10 bacon strips, cooked and crumbled

Steps:

  • Preheat oven to 350°. Pierce potatoes several times with a fork; place on a baking sheet. Bake until tender, 65-75 minutes. Cool completely., Peel and cube potatoes. In a large saucepan, melt butter over medium heat. Stir in flour, salt and pepper until smooth; gradually whisk in milk. Bring to a boil, stirring constantly; cook and stir until thickened, about 2 minutes. Stir in potatoes; heat through., Remove from heat; stir in sour cream and green onions. 2 cups potatoes, diced but unpeeled
1/4 lb butter
2 cups yellow onions, finely diced
1/2 cup flour
1 quart warm water
1/4 cup chicken bouillon
1 cup potato flakes
2 cups heavy cream
2 cups milk
1/2 teaspoon Tabasco sauce
salt and pepper, to taste
garlic powder, to taste
dried basil, to taste

Steps:

  • Saute onions in melted butter for 10 minutes in large kettle. Add flour to onions and butter and cook for four to five minutes, stirring until flour is absorbed.
  • In a separate container, combine water, chicken bouillon, potato flakes, and seasonings. Stir until thoroughly mixed and no lumps remain. Add to onion mixture, one pint at a time.
  • Add milk and cream, stirring until smooth and lightly thickened. Reduce heat and simmer for 15 minutes.
  • In a separate container, the potatoes should be covered with water, brought to a boil, and simmered for 20 minutes.
  • Combine the potatoes with the soup to complete.

4 large baking potatoes (Idaho or russet)
12 slices thick-cut applewood smoked bacon
1/2 cup all-purpose flour
6 cups 2 percent low-fat milk, heated
5 ounces sharp Cheddar, grated
Kosher salt and freshly ground black pepper
4 ounces sour cream
3 tablespoons finely chopped fresh chives

Steps:

  • Preheat the oven to 350 degrees F.
  • Place the potatoes on a roasting tray and bake for 45 minutes. When done, the tip of a paring knife should go through the potatoes easily.
  • Slice the bacon into lardons (thin strips) and cook in a large, heavy-bottomed pot over medium heat until crisp. Remove the bacon from the pot with a slotted spoon and set aside, leaving the drippings in the pot.
  • Add the flour to the drippings in the pot and stir to combine. Cook, without adding color, until the flour and fat has combined, about 1 minute. Pour in the milk while you whisk to incorporate. Cook over medium heat until bubbly and thickened, stirring frequently, about 15 minutes.
  • Scoop out the potato pulp from the skins and add to the milk mixture. Mash with the back of a wooden spoon leaving it a little bit chunky.
  • Add the cooked bacon (leaving a little out for garnishing the soup), 1 cup of the cheese, and season well with salt and pepper. Stir until the cheese has melted. Remove from the heat.
  • Ladle the soup into bowls, drizzle with sour cream (from a squeeze bottle), sprinkle with remaining bacon bits, grated cheese and chives.
