I was introduced to this recipe when I was a little girl. Our neighbor used to make it and we would drink it by the capful! (I also ate whole lemons and limes) If you enjoy pungent flavors, drizzle this over a green salad and it should hit the spot. Amounts are approximate, so adjust to your palate.

1/2 cup olive oil
1/3 cup apple cider vinegar
1/4 cup soy sauce
1 clove garlic, crushed (optional)

Steps:

  • Combine all ingredient in a jar or cruet.
  • (it's important to shake it well before each pour).

From Ming Tsai's Simply Ming. If you cannot find Chinese Black Vinegar, use Balsamic. This works beautifully on everyday tossed greens and other impromptu salad combinations or as a marinade for poultry, meat, and fish.

1 cup grainy mustard
8 medium shallots, roughly chopped (About 1 Cup)
1/4 cup chinese black vinegar
1/2 cup naturally brewed rice wine vinegar
1/4 cup soy sauce
2 tablespoons sugar
2 cups grapeseed oil or 2 cups canola oil
kosher salt
ground black pepper

Steps:

  • In a blender or food processor, combine the mustard, shallots, vinegars, soy sauce, and sugar and purée.
  • With the machine running, slowly drizzle in the oil until an emulsion is formed.
  • Season with salt and pepper, remembering that not much salt will be needed because of the soy sauce.
  • Use or store. Lasts 2 weeks, refrigerated.

1/4 cup white wine vinegar, champagne vinegar, or aged sherry wine vinegar
2 to 3 teaspoons Dijon mustard
1 teaspoon kosher salt
Freshly ground black pepper
2 tablespoons finely minced shallots
2/3 cup extra-virgin olive oil

Steps:

  • In a small mixing bowl, whisk together the vinegar, mustard, salt, and pepper to taste. Stir in the shallots. Gradually whisk in the oil to make a smooth dressing. Use immediately or store covered, in the refrigerator, for up to a week.

Juice of 2 limes (about 1/4 cup)
3 tablespoons soy sauce
1 teaspoon hot sauce, such as sriracha
1 small shallot, finely chopped
One 1-inch piece fresh ginger, peeled and finely chopped
1 garlic clove, minced
2 teaspoons honey
1/4 teaspoon freshly ground black pepper
1/4 cup extra-virgin olive oil

Steps:

  • Put the lime juice, soy sauce, hot sauce, shallot, ginger, garlic, honey, and pepper in a mixing bowl. Slowly drizzle in the oil in a stream while whisking to emulsify the vinaigrette.
