SHAKE N BAKE VEGGIES
This is a healthier way to have "fried" veggies. I particularly love zucchini with this, but you can use almost any veggie and any flavor Shake N Bake!

Steps:
- Preheat oven to 425°F Beat egg in small bowl.
- Dip vegetables in egg; shake in coating mix.
- Spray shallow baking pan with cooking spray and place veggies inside. Bake 20 minute or until golden brown.
- Serve with dressing as a dip.
- *Two egg whites can be used in place of whole egg.

Steps:
- 1. Preheat oven to 400. Spray a cookie sheet with cooking spary
- 2. In a medium bowl add the muffin mix and the shake'n bake; stir to combine.
- 3. Stir in the salt and pepper.
- 4. In another bowl add the eggs and beat them.
- 5. Dip each tomato slice in egg, then muffin mixture.
- 6. Lay tomatoes on cookie sheet and bake 15 minutes pre side.
