SALMON WITH SESAME, SOY & GINGER NOODLES

This simple, Asian-inspired fish and fried noodle dish makes a perfect casual, mid-week supper

4 tbsp dark, light, low-salt (or a mixture) soy sauce
4 tbsp rice wine or mirin
1 stem ginger, finely chopped, plus 2 tbsp syrup from the jar
1 garlic clove, crushed
2 salmon fillets
140g any noodle
2 tbsp sesame seed
2 spring onions, chopped

Steps:

  • Heat oven to 180C/160C fan/gas 4. In a small jug, whisk together the soy, rice wine or mirin, stem ginger and syrup, and garlic. Line a roasting tin with baking parchment and put the salmon in it. Pour over half the sauce, then bake for 15 mins until the salmon is cooked through.
  • Meanwhile, bring a large pan of water to the boil. Add the noodles and cook following pack instructions, then drain well.
  • In a small frying pan, lightly toast the sesame seeds for 1 min, then add to the cooked noodles (reserving a sprinkle for the top). Pour the remaining sauce over the noodles, plus any from the roasting tin, and toss together. Serve with the salmon, scattered with the chopped spring onions and remaining sesame seeds.

This dish is incredibly flavorful and unbelievably simple. Soy sauce and orange juice permeate the fish, while toasted-sesame oil gives it a nutty accent. Boiling the marinade turns it into a thick glaze.

1/4 cup soy sauce
1/4 cup honey or sugar
1/4 cup fresh orange juice
1/2 teaspoon toasted-sesame oil
1 piece (1 inch) peeled fresh ginger, thinly sliced
4 skin-on salmon fillets (4 ounces each)

Steps:

  • Preheat broiler. Whisk together soy sauce, honey, orange juice, toasted-sesame oil, and ginger in a medium glass baking dish. Add salmon fillets, skin side up. Let stand for 15 minutes to marinate.
  • Transfer salmon to a rimmed baking sheet, flesh side up; reserve marinade. Broil salmon until flesh is slightly firm to the touch, 5 to 6 minutes. Meanwhile, bring marinade to a boil in a small saucepan. Cook until reduced by half, about 3 minutes. Drizzle glaze over salmon.

Number Of Ingredients 24

2 3/4 lbs salmon fillets, skinned, pin bones removed
1/2 cup japanese panko breadcrumbs or 1/2 cup other dried breadcrumbs
1/2 cup minced scallion
1/4 cup finely chopped fresh cilantro leaves
2 teaspoons minced fresh ginger
1 egg, slightly beaten
1 teaspoon sambal oelek chili paste (optional)
1 teaspoon minced garlic
1 teaspoon salt
1 1/2 teaspoons soy sauce
1/4 cup soy sauce
1/4 cup sugar
3/4 cup mayonnaise
3 cups shaved purple cabbage
3 cups shaved green cabbage
1/2 cup shaved red onion
1/4 cup vegetable oil or 1/4 cup peanut oil
2 tablespoons vegetable oil or 2 tablespoons peanut oil
3 tablespoons rice wine vinegar
2 tablespoons toasted sesame oil
1/2 teaspoon toasted sesame seeds
1/4-1/2 teaspoon crushed red pepper flakes
kosher salt
6 sesame seed rolls or 6 other soft hamburger buns, for serving

Steps:

  • SALMON BURGERS:.
  • Using a sharp knife, cut the salmon into 1" pieces and transfer to the bowl of a food processor. Pulse slowly until the fish is finely chopped.(Take care not to over process or salmon will become a paste).
  • Transfer to a mixing bowl and add the panko, 1/4 cup of the scallions, 2 tablespoons of the cilantro, minced ginger, egg, sambal oelek (if using), garlic, 1/2 teaspoon salt, and 1-1/2 teaspoons of the soy sauce.
  • Using a rubber spatula, mix gently but thoroughly to combine. Divide the mixture into 6 even portions and shape into patties about 4" wide and 3/4" thick. Transfer to a parchment-lined baking sheet and cover with plastic wrap. Refrigerate while you prepare the mayonnaise and the slaw.
  • SOY MAYONNAISE:.
  • In a very small saucepan combine the remaining soy sauce and the sugar and cook until reduced to a syrup, 2 to 3 minutes. The soy-sugar mixture should coat the back of a spoon. Set aside to cool completely.
  • When cooled add 1-1/2 tablespoons of the soy glaze to the mayonnaise and refrigerate until ready to serve with the burgers. (The remaining soy glaze may be kept indefinitely at room temperature and used to drizzle on grilled salmon, grilled tuna, or pork to name a few.).
  • SESAME SEED SLAW:.
  • Combine the purple and green cabbages, remaining 1/4 cup of scallions, red onion, 1/4 cup vegetable oil, rice wine vinegar, remaining 2 tablespoons cilantro, sesame oil, remaining 1/2 teaspoon salt, and crushed red pepper, and toss throughly to combine. Transfer to a serving bowl and sprinkle with sesame seed. Refrigerate while you prepare the burgers.
  • COOK BURGERS AND ASSEMBLY:.
  • Heat a large skillet over medium-high heat and add the remaining 2 tablespoons of oil. When the oil is hot, season both sides of the burgers lightly with kosher salt and add the burgers to the skillet and cook, turning once, until golden brown on both sides and salmon is just cooked through, about 3-1/2 minutes per side.
  • Serve the salmon on warm buns, buttered with soy mayonnaise on the bottom side of bun, garnish top with smidgen of soy mayonnaise and the sesame slaw.
  • Enjoy!

3 tablespoons tamari
1 lime, juice and zest of, grated
1 tablespoon hot pepper sauce
3 inches fresh ginger, peeled and grated
4 salmon fillets
1/2 cup rice vinegar
2 teaspoons sesame oil
1/4 cup honey
4 cups napa cabbage, shredded
1/4 cup chives, snipped
3 tablespoons toasted sesame seeds

pepper

Steps:

  • Mix 2 tablespoons vegetable oil, tamari, lime peel and juice, hot pepper sauce and ginger. Add salmon and marinate (turning occasionally) for 30 minutes.
  • In bowl whisk vinegar, honey, sesame oil and remaining 2 tablespoons vegetable oil. Add cabbage and toss to coat. Add chives and sesame seeds. Season to taste with salt and pepper.
  • Grill salmon on medium high heat for 4 minutes per side for fully cooked salmon or 3 minutes per side for medium rare salmon.
  • Serve salmon on top of the slaw.

1 1/2 lbs / 680 gr (or four 6-oz pieces) salmon, skin on or off
4 tablespoons olive oil
2 tablespoons toasted sesame oil
2 tablespoons rice wine vinegar
2 tablespoons coconut palm sugar (or brown sugar if you don't care about the paleo thing)
2 tablespoons wheat-free soy sauce (or coconut aminos)
2 garlic cloves, minced
1 tablespoon freshly grated ginger
2 tablespoons toasted sesame seeds
Ginger Honey Glaze
4 tablespoons honey (pick one with a mild taste)
1 tablespoon toasted sesame oil
1 teaspoon wheat-free soy sauce (or coconut aminos)
1/2 teaspoon freshly grated ginger
1/2 teaspoon toasted sesame seeds

Steps:

  • In a bowl combine olive oil, sesame oil, soy sauce, garlic, ginger, vinegar, and brown sugar. Whisk well until combined. In a shallow sealable container or in a large Ziploc bag, combine salmon and marinade. Cover or seal and marinate in the refrigerator for 30 minutes. In the meantime in a small bowl combine all glaze ingredients. Set aside. Preheat the broiler in your oven to high and place a rack in the middle. Line a baking sheet with aluminium foil and lightly grease with olive oil. Remove the chicken from the marinade and place onto the lined baking sheet. Sprinkle with a bit of salt and pepper and place under the broiler. Cook for 10 minutes. Remove and brush the top with glaze. Cook for further 2 minutes or until opaque and easily flakable with a fork. Remove immediately, sprinkle with toasted sesame seeds and chopped scallions if desired, and serve.

1 tablespoon rice wine vinegar
1 teaspoon sesame oil

  • Preheat broiler.

  • Brush Salmon with Soy Sauce. Broil for 5 min or until cooked through. In a small bowl whisk together remaining ingrediants. Quarter pit and peel avocado and cut into 1/2 inch slices. The avocados in this recipe offer a cool, smooth counterpart to the spiciness of the fish and the rice. Even though they have been cooked with the rest of the meal, they maintain their shape and flavor delightfully. If you have space in your Dutch oven, try adding a handful of snow peas and sliced shiitake mushrooms to round out this Asian-inspired meal. While using plain water will result in a wonderful meal, you can add more depth of flavor by substituting broth. The rice will completely absorb the liquid during cooking, and in the process the fish will take on a delicate, poached texture that is a treat to eat. If you live in a dry climate, you may want to add an extra 2 tablespoons of water.

1 cup jasmine rice
1/2 to 3/4 pound salmon fillet or steak
2 carrots, julienned
2 tablespoons soy sauce

1 teaspoon grated fresh ginger
2 garlic cloves, minced
1 teaspoon red pepper flakes
1/2 teaspoon sesame seeds
1 tablespoon fresh lemon juice
1/4 head red cabbage, shredded (about 2 cups)
1 avocado, sliced

Steps:

  • Preheat the oven to 450°F.
  • Coat the inside and lid of a cast-iron Dutch oven with 2 teaspoons of the sesame oil or spray with canola oil.
  • Rinse the rice in a strainer under cold water until the water runs clear. Tip the rice into the pot. Add 1 cup plus 1 tablespoon water and stir to make an even layer. Place the salmon in the pot and scatter the carrots on top of the fish.
  • In a small bowl, mix the remaining sesame oil, the soy sauce, vinegar, sugar, ginger, garlic, red pepper flakes, sesame seeds, and lemon juice. Stir until the sugar is dissolved. Pour half of the mixture into the pot.
  • Layer in the cabbage and top with the avocado.
