CRISPY SESAME CHICKEN

500 g (1lb) chicken breasts (cubed into bite-size pieces )
1 egg (beaten)
2 tbsp soy sauce
1 cup flour
½ cup cornstarch / cornflour
oil (for frying)
1 tbsp canola / vegetable oil
3 garlic cloves (crushed )
1/3 cup soy sauce
1/3 cup water
¼ cup brown sugar (You could add up to one third cup sugar if you prefer the sauce to be sweeter.)
2 tbsp rice vinegar / lemon juice
2 tsp sesame oil
2 tbsp sesame seeds
1 tbsp cornstarch / cornflour (mixed with 2 tbsp water )

Steps:

  • Place the chicken in a bowl then add the egg and soy sauce. Massage the egg and soy into the chicken well then allow to sit for a few minutes while you make the sauce.
  • To make the sauce, heat the oil in a large pan then cook for garlic for 30 seconds until fragrant.
  • Pour in the soy sauce, water, sugar, vinegar and sesame oil. Bring to a simmer then pour in the cornstarch slurry. Reduce the heat then simmer until the sauce is thick and glossy. Remove from the heat and set aside.
  • Heat enough oil to fry the chicken in a deep pan or pot. Place a wire rack over a sheetpan.
  • Combine the flour and cornstarch in a separate bowl then coat the chicken in the flour mixture, making sure each piece is completely covered.
  • Carefully add the chicken to the hot oil, cooking in batches to avoid over-crowding the pan, until the chicken is golden brown and crisp. Remove with a slotted spoon and allow to drain on the wire rack while you cook the remaining chicken.
  • Place the pan with the sauce back on the heat and bring to a simmer. Add the fried chicken and sesame seeds to the pan then toss to coat the chicken in the sauce. Season to taste with more soy, vinegar or sesame oil as necessary then serve over rice or noodles.

I can't remember where this recipe came from, but from all the spots on the recipe card I'm sure it is an oldie. This is a meal that everyone in my family can agree on, which is a rarity! Doubles or even triples well.

1/3 cup hickory flavored barbecue sauce
2 tablespoons honey
1 tablespoon fresh lemon juice
8 chicken thighs
2 teaspoons sesame seeds
salt and pepper

Steps:

  • Combine barbecue sauce, honey and lemon juice.
  • Rinse and pat dry thighs, salt and pepper lightly, place meaty side down in a shallow baking pan.
  • Keep thighs from touching.
  • Brush with half the sauce.
  • Bake at 375 for 30 minutes, uncovered.
  • Turn over, brush with the rest of sauce, bake for 30 minutes more.
  • Place on serving platter and sprinkle with sesame seeds.

1/2 cup olive oil
2 tablespoons untoasted sesame seeds, white or black
2 tablespoons tahini
3 cloves garlic, minced or grated
Zest and juice of 1 lemon
Hot sauce, optional
Kosher salt and freshly ground black pepper
8 chicken thighs, bone in and skin on
3 tablespoons finely chopped parsley

Steps:

  • In a mixing bowl, whisk together the olive oil, sesame seeds, tahini, garlic, lemon zest and juice and hot sauce to taste if using. Season with salt and pepper. Add the chicken and marinate in the refrigerator for 1 hour and up to 8 hours.
  • Set up your grill for indirect heat. If using a charcoal grill, build the coals on one side only. If using a gas grill, heat one side only. Remove the chicken from the marinade and place on the indirect heat side of the grill, skin-side up. Close the grill and cook until golden brown, 15 to 18 minutes. Flip and move to the direct heat side of the grill to char on the other side. Cook until the skin is charred and crispy and the chicken is cooked through; the internal temperature should be 160 degrees F, 2 to 3 more minutes. Remove from the grill and let rest for a few minutes. Garnish with the parsley before serving.

3 tbsp soy sauce
3 tbsp honey
2 tbsp oil
1 tbsp garlic & ginger paste
8 skin-on chicken thighs
1 large head broccoli , cut into florets
1 tbsp sesame seeds
rice , to serve (optional)

Steps:

  • Heat oven to 200C/180C fan/gas 6. Mix the soy, honey, 1 tbsp of the oil and ½ tbsp garlic & ginger paste in a bowl. Pour over the chicken thighs and leave to marinate if you have time, but don't worry if not - they will be delicious either way. Tip the chicken with all the marinade into a roasting tin, skin-side up. Cook for 45 mins until sticky and the skin is crispy.
  • When the chicken has 15 mins left, start cooking the rice following pack instructions, if using, and heat the remaining oil in a frying pan. Add the remaining garlic & ginger paste, sizzle for 1 min, then tip in the broccoli along with a splash of water. Cover and cook for 10 mins until tender, then take the lid off, tip the sesame seeds into the pan and give everything a good toss around. Season. Serve with the chicken, and all the caramelised bits from the bottom of the tin.

LET'S MAKE THE MARINADE
1 Tbsp smoked or regular sesame seed oil
2 Tbsp soy sauce, low soduim
2 Tbsp agave nectar or (brown sugar can be used)
2 Tbsp rice wine vinegar
2 clove garlic, minced
1 Tbsp cornstarch
1/2 c water
SKINLESS CHICKEN THIGHS
8 boneless skinless chicken thighs
1 Tbsp mrs dash herb & garlic seasoning
1/2 c scallions diced for garnish
2 Tbsp sesame seeds for garinish
TERIYAKI SAUCE OR YOU CAN BUY IT
2 Tbsp honey or agave nectar
2 Tbsp soy sauce, low sodium
2 Tbsp rice wine vinegar
2 Tbsp cooking sherry
1 Tbsp minced ginger
1/2 c hoisin sauce

Steps:

  • 1. Rinse chicken thighs and remove visible fat. In a large Ziploc bag, combine sesame seed oil, soy sauce, Agave Nectar, rice wine vinegar, garlic, cornstarch and water. Then add chicken thighs. Marinade overnight or 2 hours or so before cooking.
  • 2. Preheat oven 400° degrees, remove chicken thighs from marinade and place them on baking sheet lined with aluminum foil. Bake for 25 - 30 minutes until golden brown. Then remove from oven and let rest for about 5 - 10 minutes.
  • 3. While thighs are cooking, to make teriyaki sauce, in a small sauce pan add honey, soy sauce, vinegar, sherry, ginger and Hoisin sauce and let simmer for about 3 - 5 minutes over medium heat until the sauce becomes glossy and caramelized. Remove from heat and set a side.
  • 4. After thighs have rested, slice in strips and place in serving dish and pour Teriyaki sauce over sliced thighs, garnish with scallions and sesame seeds. Serve with white or brown rice.
  • 5. My Pantry Tip One thing I do when my shopping is complete on the weekends. I prep all of my fresh herbs for my meals. Example - I will wash my scallions and let them air dry on a paper towel. Once they are dried, I diced them and put them in a plastic container lined with paper towel to absorbed moisture and place them on my refrigerator door. The will keep for about a week.

SARASOTA'S SESAME GRILLED CHICKEN THIGHS

This is such a simple marinade and great using inexpensive chicken thighs which are simply grilled. You could easily serve this for a dinner party or even every day. I love this served with an edamame salad or a simple green salad with a sesame dressing to combine all the flavors. I love some easy grilled vegetables with this to make just a light dinner. If you want some brown rice with, water chestnuts, scallions and a little soy would draw all the flavors in too. Put the chicken in the marinade which takes 2 minutes to make, shake up the baggie and then 8 hours later ... grill. Even a indoor grill pan will work for this.

8 -10 boneless skinless chicken thighs
12 tablespoons soy sauce

Steps:

  • Marinade -- Mix everything except the sesame seeds in a measuring cup. Pour 1/2 or a bit more into the baggie and save the remaining amount to use as a glaze as the chicken grills. Put the marinade in a baggie and then add the chicken. Toss to coat well and just let it go. 4-8 hours is idea. I prefer 8, but even 1 or 2 will give it some good flavor. This will also work with bone in thighs as well, and for that matter, pretty much any cut of chicken, but I just love the dark meat of the thighs for this.
  • Grill -- Just grill the the chicken on medium high heat to get good grill marks but don't let it flare up. I like to use the marinade to baste a few times as the chicken grills.
  • Sesame seeds -- as the chicken grills, add the seeds to a small dry skillet and just cook 1-2 to minutes to lightly toast. That is all you need. Now, I put them in a small bowl so I can coat the chicken with them.
  • Finishing the chicken -- The last minute, brush lightly with the marinade flip once and then remove from the grill. Just using tongs. I lightly dip the top of the thighs into the toasted sesame seeds. Not too heavy, just a light topping. And they are done.

4 each bone-in, skin on chicken thighs
1 pinch salt and ground black pepper to taste
2 tablespoons sesame oil
4 garlic clove (blank)s garlic cloves, minced
6 tablespoons water, divided
¼ cup soy sauce
¼ cup hoisin sauce
1 tablespoon honey
2 tablespoons cornstarch
2 tablespoons chopped green onions
1 tablespoon toasted sesame seeds

Steps:

  • Season chicken thighs with salt and pepper.
  • Turn on a multi-functional pressure cooker (such as Instant Pot®) and select Saute function. Heat sesame oil in the pot. Add chicken thighs and saute until browned on the first side, 3 to 4 minutes. Add garlic and flip the chicken, sauteing until the other side is browned and the garlic is fragrant, 3 to 4 minutes more. Hit Cancel and transfer the chicken to a plate using tongs or a slotted spoon.
  • Pour 1/4 cup water into the pot and use a wooden spoon to scrape any browned bits from the bottom. Whisk soy sauce, hoisin sauce, and honey together in a bowl until smooth. Return chicken to the pot and pour sauce over the top.
  • Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 10 minutes. Allow 6 to 10 minutes for pressure to build.
  • Release pressure using the natural-release method according to manufacturer's instructions, about 5 minutes. Release remaining pressure carefully using the quick-release method, about 5 minutes. Unlock and remove the lid. Remove chicken with tongs or a slotted spoon and set aside.
  • Mix remaining 2 tablespoons water with cornstarch in a small bowl. Turn on Saute function and whisk cornstarch slurry into the sauce. Simmer until the sauce thickens, about 2 minutes. Cancel Saute function. Return chicken to the sauce, sprinkle with green onions and sesame seeds, and toss everything together.
