1 cup mayonnaise
2 tablespoons frozen orange juice concentrate, thawed
1 tablespoon yellow miso (fermented soybean paste)*
1 tablespoon oriental sesame oil
1 teaspoon grated peeled fresh ginger
1/2 teaspoon grated orange peel
1 1/2 pounds skinless salmon fillet, cut into 3/4-inch cubes (about 48 pieces)
2 tablespoons vegetable oil
5 tablespoons sesame seeds (white and/or black)
Cocktail toothpicks

Steps:

  • Whisk first 6 ingredients in medium bowl to blend well. Season orange-miso sauce to taste with salt and pepper. (Can be made 1 day ahead. Cover; refrigerate. Bring to room temperature before serving.)
  • Line large baking sheet with foil. Place salmon and vegetable oil in large bowl; toss to coat. Sprinkle salmon with salt and pepper. Place sesame seeds on small plate. Coat 1 surface of each salmon piece with sesame seeds. Arrange salmon, sesame-coated side up, in single layer on prepared baking sheet. (Can be made 6 hours ahead. Cover; chill.)
  • Preheat oven to 400°F. Bake salmon uncovered until just cooked through, about 5 minutes; transfer to platter. Skewer each piece with toothpick. Serve warm, passing orange-miso sauce.

1 orange
½ napa cabbage, thinly sliced
¼ red cabbage, thinly sliced
3 carrots, peeled and coarsely grated
3 green onions, white and green parts thinly sliced
3 tablespoons oil
2 tablespoons rice vinegar
salt, to taste
black pepper, to taste
4 salmon fillets
2 tablespoons sesame seed, divided, plus more for garnish
1 lemon, sliced, optional

Steps:

  • Preheat oven to 425°F (220°C).
  • Using a sharp knife, cut off the top and bottom of the orange, then cut away the peel from the sides.
  • Slice alongside the membrane of the orange to remove each segment until the orange is fully supremed.
  • In a large bowl, mix the orange supremes, napa cabbage, red cabbage, carrots, green onions, oil, rice vinegar, 1 tablespoon of the sesame seeds, and season with salt and pepper. Set aside.
  • Season the salmon fillets on both sides with salt, pepper, and the remaining 1 tablespoon of sesame seeds.
  • Transfer the fillets to a greased rimmed baking sheet.
  • Bake for 8-12 minutes, until the salmon has just started to form a golden crust.
  • Plate the salmon and slaw on a plate with a few lemon wedges, if desired. Sprinkle over a pinch of sesame seeds and serve.

1/3 cup dry white wine
1/3 cup fresh orange juice
2 1/2 tablespoons soy sauce
1 2 1/2-pound salmon fillet
3 large navel oranges
1/2 cup matchstick-size strips red pepper
1/2 cup thinly sliced red onion
2 1/2 tablespoons chopped fresh cilantro
2 teaspoons minced peeled fresh ginger
2 teaspoons grated orange peel
1 teaspoon oriental sesame oil
1/2 teaspoon coarse kosher salt
1/4 teaspoon dried crushed red pepper
Vegetable oil
1 tablespoon sesame seeds, toasted

Steps:

  • Whisk first 3 ingredients in small bowl to blend; transfer to 13x9x2-inch glass baking dish. Place salmon, skin side up, in orange juice mixture; cover with plastic and chill at least 2 hours and up to 4 hours. Bring to room temperature 30 minutes before cooking.
  • Using small sharp knife, cut peel and white pith from oranges. Working over bowl, cut between membranes to release segments into bowl.
  • Mix red pepper and next 7 ingredients in medium bowl to blend. Fold in reserved orange segments and any accumulated juices. (Can be prepared 1 hour ahead. Let stand at room temperature.)
  • Preheat oven to 450°F. Line rimmed baking sheet with foil; generously brush with vegetable oil. Place fish, skin side down, on prepared baking sheet. Sprinkle with salt and pepper. Bake until fish is just opaque in center, about 20 minutes. Using large spatula, gently loosen salmon from foil. Using foil as aid, carefully lift salmon from sheet and allow salmon to slide from foil onto platter. Mound orange relish down center of fish, sprinkle with sesame seeds, and serve.

ORANGE SESAME GLAZED SALMON W/ EXTRA CRISPY SKIN

I love crispy skins, but my hubby does not so I always take his. :)) Here are some tools you'll need if you want to achieve that yummy crispy skin: foil, a baking sheet, and a non-coated cooling rack or a toaster oven rack that will elevate the fish from bottom of the cookie sheet...yes you could use a broiling pan, but those things are a pain to clean and you wouldn't get such yummy extra crispy skins :) I choose to broil mine but this will work well on the grill too. Just be sure to brush the hot grill rack with olive oil so the skin does not stick.

4 (4 ounce) salmon fillets, skin on, rinsed, patted dry
1 tablespoon olive oil
1/3 cup low sodium soy sauce
3/4 cup water (1/2 cup reserved for cooking process)
2 teaspoons sesame oil
2 teaspoons seasoned rice vinegar
1/2 cup orange marmalade
2 tablespoons brown sugar, packed
1 teaspoon sriracha sauce (if you don't like it spice, omit)
1/4 cup red onion, chopped
1 garlic clove, minced
1 tablespoon fresh gingerroot, grated (you can leave the skin on)
1 bunch green onion, chopped (white parts included, reserve some for garnish)
1/8 teaspoon garlic salt (or to taste)
1/2 teaspoon fresh cracked black pepper (or to taste)

Steps:

  • In a small bowl mix together all marinade ingredients. Be sure to reserving 1/2 cup of the water to use during the cooking process. Set aside.
  • Preheat oven to broil with oven rack placed in the upper center position. Prepare a baking sheet by layering 2 strips of foil to cover the bottom of pan, then place an non-coated cooling rack over that.
  • Brush skin side of salmon with olive oil (this will help to insure skin doesn't stick and become extra crispy), place fillets about 1-2 inches apart on the cooling rack in the center of backing sheet. Reserve half of marinade for glazing. Brush tops and sides of the salmon fillets with marinade. Let sit for 5-6 minutes.
  • Broil, uncovered, for 15-20 minutes (or until fish flakes easily with a fork). Because you're broiling, it will cook quickly. Glaze OFTEN with reserved marinade to get a super sweet and sticky coating. Pour reserved water in bottom of pan half way through cooking time (helps finish cooking the fish and also keeps it moist and flaky).
  • I like to serve mine with ginger lime shrimp and a roasted veggie like asparagus :).

1/2 teaspoon white pepper
1/2 teaspoon salt
4 salmon fillets (1 1/2 lb in total)

  • In a skillet, grill sesame seeds at medium heat, shaking the skillet from time to time, for about 5 minutes or until golden and beginning to smell.
  • In a food processor, ground the sesame seeds, orange zest, pepper and 1/4 teaspoon of salt until it has the texture of breadcrumbs.
