SPICY SESAME NOODLE, GREEN BEAN, AND CARROT SALAD



Spicy Sesame Noodle, Green Bean, and Carrot Salad image

1/4 cup fresh lime juice
3 tablespoons canola oil
3 tablespoons soy sauce
2 tablespoons (packed) dark brown sugar
1 tablespoon oriental sesame oil
1 tablespoon minced garlic
1 tablespoon grated orange peel
2 small serrano chilies, stemmed, thinly sliced into rounds
9 ounces green beans, trimmed, cut diagonally into 1/2-inch pieces
1 9-ounce package fresh linguine
2 cups shredded peeled carrots
1 cup thinly sliced green onions

Steps:

  • Stir first 8 ingredients in medium bowl to blend. Season dressing with salt and pepper. Let stand 30 minutes to blend flavors.
  • Cook green beans in large pot of boiling salted water until crisp-tender, about 2 minutes. Using slotted spoon, transfer beans to cold water to cool. Drain well. Pat dry with paper towels.
  • Return water to boil. Add pasta and cook until just tender but still firm to bite, stirring often, about 2 minutes. Drain. Rinse pasta under cold water. Drain well.
  • Combine green beans, pasta, carrots, green onions and dressing in large bowl. Toss to coat. Season with salt and pepper. (Can be made 6 hours ahead. Cover; chill.)

1 pound fresh green beans, trimmed
1 tablespoon reduced-sodium soy sauce
2 teaspoons canola oil
1 teaspoon sugar
1 teaspoon cider vinegar
1 teaspoon sesame oil
1/4 teaspoon salt
2 teaspoons sesame seeds, toasted

Steps:

  • Place beans in a large saucepan and cover with water. Bring to a boil. Cook, uncovered, for 8-10 minutes or until crisp-tender. Drain and rinse in cold water; pat dry. Place in a serving bowl., In a small bowl, whisk the soy sauce, canola oil, sugar, vinegar, sesame oil and salt. Pour over beans and toss to coat. Sprinkle with sesame seeds; toss again. Serve at room temperature.

1/4 cup(s) fresh lime juice
3 tablespoon(s) canola oil
3 tablespoon(s) soy sauce
2 tablespoon(s) dark brown sugar (packed)
1 tablespoon(s) toasted sesame oil
1 tablespoon(s) minced fresh garlic
1 tablespoon(s) orange zest
2 small serrano chilies (or chili of your choice), thinly sliced into rounds (remove seeds if you want less heat)
9 ounce(s) green beans,trimmed and cut on the diagonal into 1/2 inch pieces
1 package(s) 9-oz. pkg. fresh linguine (or dry if preferred)
2 cup(s) peeled carrots, shredded
1 cup(s) green onions, thinly sliced

Steps:

  • Stir first 8 ingredients in a medium bowl and blend well. Season with salt and pepper taste and let stand approx. 30 minutes to allow flavors to meld.
  • Cook green beans in salted water (or steam) until crisp-tender. Remove with a slotted spoon (save water) and place in ice water to cool. Drain well and dry thoroughly with paper towels.
  • Return water to a boil and add pasta noodles - cook until just tender, but still al dente. Rinse pasta under cool water. Drain well and pat dry with paper towels.
  • Combine green beans, pasta, carrots, green onions and dressing in a large bowl. Toss to coat. Season with more salt and pepper, if desired.

2 tablespoons toasted sesame seeds
2 tablespoons fresh lemon juice
1 1/2 teaspoons vegetable oil
1 teaspoon salt, plus more to taste
Freshly ground pepper to taste

Steps:

  • Bring a large pot of salted water to a boil. Add the green beans and cook until tender, about 5 minutes. Drain and rinse under cold running water. Place in a bowl and toss with the sesame seeds, lemon juice, oil, salt and pepper. Divide among 4 plates and serve.

1 pound green beans
3 tbsp sesame seeds
2 tbsp peanut or vegetable oil
2 green cayenne chilies, seeded and sliced into rings (Serrano chilies okay)
2-3 tbsp fresh lemon juice
Cilantro or mint, finely chopped
Salt to taste

Steps:

  • Cook beans until just tender. Drain, refresh in cold water. Trim ends of beans and slice on the diagonal into ½ inch lengths. Place in large bowl. Dry roast sesame seeds in heavy skillet until lightly golden. Grind to a coarse powder in spice grinder. Heat oil in small heavy skillet on medium high heat. Stir-fry chilies for about 30 seconds, or until just brown. Pour chilies and hot oil over beans and toss. Sprinkle with sesame seeds and salt and toss. Add lemon juice to taste and toss. Serve warm or room temp. Sprinkle with mint or cilantro just before serving.
