SALMON WITH SESAME, SOY & GINGER NOODLES



Salmon with sesame, soy & ginger noodles image

This simple, Asian-inspired fish and fried noodle dish makes a perfect casual, mid-week supper

4 tbsp dark, light, low-salt (or a mixture) soy sauce
4 tbsp rice wine or mirin
1 stem ginger, finely chopped, plus 2 tbsp syrup from the jar
1 garlic clove, crushed
2 salmon fillets
140g any noodle
2 tbsp sesame seed
2 spring onions, chopped

Steps:

  • Heat oven to 180C/160C fan/gas 4. In a small jug, whisk together the soy, rice wine or mirin, stem ginger and syrup, and garlic. Line a roasting tin with baking parchment and put the salmon in it. Pour over half the sauce, then bake for 15 mins until the salmon is cooked through.
  • Meanwhile, bring a large pan of water to the boil. Add the noodles and cook following pack instructions, then drain well.
  • In a small frying pan, lightly toast the sesame seeds for 1 min, then add to the cooked noodles (reserving a sprinkle for the top). Pour the remaining sauce over the noodles, plus any from the roasting tin, and toss together. Serve with the salmon, scattered with the chopped spring onions and remaining sesame seeds.

SESAME-GINGER PORK WITH SOBA NOODLES

Number Of Ingredients 12

8 ounces soba noodles or whole-wheat spaghetti
4 teaspoons toasted sesame oil, divided
1 tablespoon minced pickled ginger
1 (1 1/4-pound) pork tenderloin, cut into 1-inch chunks
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
4 scallions (green and white parts), chopped
1 tablespoon sesame seeds
1 cup reduced-sodium chicken broth
1/4 cup reduced-sodium soy sauce
1/2 cup sliced water chestnuts, drained
1/4 cup chopped fresh cilantro leaves

Steps:

  • Cook the soba noodles according to the package directions. Drain and transfer to a large zip-top plastic bag. Add 2 teaspoons of the oil, seal the bag, and shake to coat the noodles.
  • Meanwhile, heat the remaining 2 teaspoons oil in a large skillet over medium heat. Add the ginger and cook, stirring, for 1 minute. Increase the heat to medium-high; add the pork, and cook, stirring, until browned on all sides, about 5 minutes total. Add the salt and pepper and stir to coat the pork. Add the scallions and sesame seeds and cook, stirring, for 1 minute. Add the broth and soy sauce reduce heat to medium, and simmer until the pork is cooked through, about 5 minutes. Remove from the heat and stir in the water chestnuts.
  • If you're stopping here:
  • Let cool to room temperature, then transfer the mixture to a large zip-top plastic bag or plastic container and refrigerate along with the bag of noodles for up to 3 days.
  • When you're ready to eat:
  • Combine the pork mixture and soba noodles in a large skillet set over medium heat and simmer for 5 minutes to heat through. You can also reheat the noodles and pork mixture together in the microwave for 3 to 5 minutes on HIGH. Meanwhile, chop the cilantro.
  • Remove from the heat, stir in the cilantro, and serve.

GINGER CHICKEN & SHRIMP STIR-FRY WITH SESAME NOODLES

1 lb spaghetti
3 tablespoons olive oil
3/4 lb chicken breast, cut into strips
1 lb frozen cocktail shrimp, thawed and de-tailed
1 bunch scallion, chopped into 2-inch pieces
4 -5 ounces mushrooms, sliced (original recipe calls for Shiitake)
1/2 red bell pepper, seeded and cut into pieces
6 garlic cloves, pressed
2 inches fresh ginger, peeled and grated
1 teaspoon coarse black pepper
1/3 cup soy sauce (original recipe calls for tamari (dark soy sauce)
2 tablespoons sesame oil
2 tablespoons toasted sesame seeds

Steps:

  • Cook spaghetti until al dente. Drain in colander.
  • While noodles cook, heat olive oil over high heat until rippling in a large nonstick skillet.
  • Add chicken and stir fry till golden. Add scallions, mushrooms, red pepper, garlic and ginger and stir-fry 2 minutes. Add shrimp after 1 minute. Season with salt and pepper and keep warm.
  • While spaghetti drains, add sesame oil and soy sauce to pasta pot. Add spaghetti and toss to coat.
  • Either add stir-fry to noodles and toss to mix or serve stir-fry on top of noodles.
  • Top with toasted sesame seeds.

3 large whole skinless, boneless chicken breasts, about 3 pounds
24 ounces fresh Chinese thin egg noodles or fresh linguine
6 cloves garlic, minced
2 tablespoons minced fresh ginger
1/2 cup Oriental sesame paste
5 1/2 tablespoons low-sodium soy sauce
1 tablespoon sugar
1 tablespoon hot chili oil
3 tablespoons Oriental sesame oil
3 tablespoons rice vinegar
3 tablespoons white wine or dry vermouth
6 scallions, sliced
6 tablespoons chopped fresh coriander

Steps:

  • Preheat the oven to 375 degrees.
  • Divide the breasts in half, remove the cartilage and place them in a roasting pan. Roast for 25 minutes. Remove from the oven and cool.
  • Cook the noodles in boiling water until done, about two minutes. Drain and run cold water over them. Drain.
  • Combine the garlic, ginger, sesame paste, soy sauce, sugar, chili oil, sesame oil, rice vinegar and wine; mix well. Toss with the noodles and scallions.
  • Shred the chicken and mix with the noodles. Add the coriander and toss.

8 ounces skinless, boneless chicken breast
1 cup dry white wine
2/3 pound Kirby cucumbers
2 cloves garlic
Enough fresh or frozen ginger to yield 1 tablespoon coarsely grated
2 tablespoons Asian sesame paste
1 1/2 tablespoons reduced-sodium soy sauce
1 teaspoon sugar
2 teaspoons Asian sesame oil
1 teaspoon hot-chili oil
1 tablespoon rice vinegar
1 tablespoon white wine or dry vermouth
8 ounces very thin Chinese noodles or Italian spaghettini
2 scallions
Few sprigs cilantro to yield 2 tablespoons chopped
10 cherry tomatoes

Steps:

  • Bring some water to boil in a covered pot for the pasta.
  • Poach the chicken breasts in 1 cup of white wine, adding water if necessary to cover, for 10 to 15 minutes; drain, then shred.
  • Wash, trim and coarsely shred cucumbers; mince garlic; grate ginger. Combine with sesame paste, soy sauce, sugar, sesame oil, hot-chili oil, rice vinegar, and wine or vermouth; mix thoroughly.
  • Cook noodles according to package directions.
  • Wash, trim and slice scallions. Mix scallions with cucumber mixture, and chicken.
  • Wash, dry and chop cilantro.
  • When noodles are cooked, drain and mix with chicken and sauce, and sprinkle with cilantro. Decorate with tomatoes.

This recipe was in the 6/1/09 issue of First magazine. The Asian style vegetables called for are like Green Giant Asian style vegetables with sauce. The dressing called for is like Neuman's Own Sesame-Ginger Dressing. The recipe program would not let me put that into the ingredient listing.

4 ounces spinach flavored spaghetti
2 (12 ounce) bags frozen asian-style vegetables
1/3 cup creamy peanut butter
1/3 cup sesame-ginger salad dressing
1/4 cup fresh cilantro, chopped
1 orange, thinly sliced

Steps:

  • Cook spaghetti, according to package directions.
  • Rinse in cold water; drain.
  • Prepare frozen vegetables according to package directions; keep warm.
  • In bowl, combine peanut butter, sesame-ginger dressing and chopped cilantro. Stir in vegetables. Let cool.
  • Arrange orange slices on a platter. Top with cooked spaghetti and vegetable mixture.

1/2 cup reduced-sodium soy sauce
1/4 cup packed brown sugar
2 tablespoons rice vinegar
2 tablespoons canola oil
2 tablespoons orange juice
1 tablespoon minced fresh gingerroot
1 teaspoon sesame oil
1 garlic clove, minced
1 teaspoon Sriracha chili sauce or 1/2 teaspoon hot pepper sauce
SALAD:
2 cups frozen shelled edamame, thawed
1/2 pound uncooked Japanese soba noodles or whole wheat linguini
1 package (14 ounces) coleslaw mix
1 cup shredded carrots
1 cup thinly sliced green onions
3 tablespoons sesame seeds, toasted

Steps:

  • In a small bowl, whisk the first 9 ingredients; set aside. Cook edamame and soba noodles according to package directions; drain. Rinse noodles in cold water; drain again., Just before serving, combine the coleslaw mix, carrots, green onions, noodles and edamame in a large bowl. Add dressing; toss to coat. Garnish with sesame seeds.

For dressing
½ cup seasoned rice vinegar
½ cup vegetable oil
¼ cup mayonnaise (regular or reduced fat)
¼ cup soy sauce
1/3 cup finely grated fresh ginger
2 garlic cloves, finely chopped
2 teaspoons sesame oil
3 8-ounces packages thin Chinese noodles
½ cup cilantro, chopped
½ cup scallions or chives, thinly sliced
2 carrots, julienned or cut into shavings with vegetable peeler
½ cup red bell pepper, thinly sliced
½ cup thinly sliced radishes
¼ cups toasted sesame seeds
4 cups thinly sliced napa or savoy cabbage

Steps:

  • Whisk together all ingredients for dressing. Set aside. (Dressing can be made in advance and refrigerated, if desired.) Cook noodles until just tender. After draining, plunge into bowl filled with ice water to cool and stop them from overcooking. Drain again and place in large bowl. Chop cilantro and scallions and slice other vegetables. Add to the noodles. Pour dressing over noodles. (You may not need all of it.) Toss to distribute dressing. Slice cabbage and spread over a large serving platter. Mound noodle salad over the cabbage. Sprinkle with sesame seeds. Serve at room temperature, or cover and chill before serving.

3 tbsp soy sauce
1/4 cup fresh lime juice
1 tsp dark sesame oil
1/8 tsp cayenne pepper
1 tsp grated fresh ginger
1/8 tsp minced garlic
1/4 cup canola oil or vegetable oil
Salad:
2 tsp canola or vegetable oil
2 baby bok choy, roughly chopped into 1" cubes
Salt and freshly ground pepper, to taste
1 carrot, peeled and shredded
1 cup shredded daikon or seeded cucumber
2 tbsp chopped fresh cilantro
1 red bell pepper, cored, seeded and cut lengthwise into 1/8" thick slices
8 oz cooked boneless, skinless chicken breast, sliced crosswise into 1/4" thick strips
6 oz package cellophane or wheat noodles, cooked, cooled under cold water and drained well
1 tbsp toasted sesme seeds

Steps:

  • To make vinagrette: in a bowl whisk together honey, soy sauce, lime juuice, sesame oil, cayenne, ginger and garlic. whisk in canola oil until smooth; refrigerate. To make salad: in a large fry pan over high heat, warm oil until nearly smoking, add bok choy, and season with salt and pepper. cook, strirring occasionally, until lightly browned, 2-3 min. transfer to a baking sheet and refrigerate 10 min. in a large mixing bowl, combine vinagrette, carrot, daikon, cilantro, red pepper, chicken, bok choy and noodles. toss to mix well and tranfer to a serving bowl. garnish with sesame seeds

FRESH TUNA WITH SESAME, GINGER & CORIANDER NOODLES

2 x 200g packs 2 tuna steaks
2 teaspoons sesame oil
2 tablespoons soy sauce
1 tablespoon balsamic vinegar
2cm piece fresh root ginger, peeled & grated
250g pack fine egg noodles, cooked & cooled
20g pack fresh coriander, chopped
2 tablespoons sesame seeds, lightly toasted

Steps:

  • Place the tuna in a shallow dish with the sesame oil, soy sauce, balsamic vinegar & ginger. Mix well & leave to marinate for 10 minutes. Preheat the grill or BBQ to a moderate setting, cook for 5-6 minutes each side. Alternatively, pan-fry for 3-4 minutes each side, or to taste. Mix together the cooked noodles, coriander & sesame seeds. Serve the tuna on a bed of the noodles, & drizzle with a little extra soy sauce & sesame oil if desired.
