SENSEI'S JAPANESE SWEET & SOUR SAUCE
I like this a lot better than those recipes that call for pineapple juice. I got it from my Japanese Sensei at school. It's very nummy-yummy.

Steps:
- Mix vinegar, soy sauce, sugar, salt, water, garlic, and ginger in small sauce pan.
- Heat on stove, use cornstarch to thicken if you want it thick.
- If you want to stir-fry with it, you don't have to add the cornstarch and thicken it up.
- If you do thicken it, you can use it as a dipping sauce.

- In 2 quart saucepan, mix sugar and starch.
- Add enough water to pineapple liquid to make 2 cups.
- Stir juice mixture, vinegar,& catsup into starch mixture.
- Cook stirring constantly, until mixture thickens and boils.
- Stir in pineapple.
- Keep warm over very low heat.

Shochu (Japanese spelling), Awamori (Okinawan) or Soju (Korean spelling) is distilled alcoholic beverage very popular in Japan, Okinawa, and Korea. It is not sake (rice wine) and recommend sake, vodka or whiskey _not be_ used because shochu tastes totally different from those. In Japan Chu Hai can be purchased in cans and though not very good, they are hugely popular there among younger generation. Most younger people in Japan prefer wine or chuhai and not sake. This one is very basic Chu Hai.
