Busy days don't always give you time to make everything from scratch. This is delicious chili using a bit of a shortcut. Cook completely on the stovetop, or finish in the crock pot.

Number Of Ingredients 11

2 lb ground beef
1 c onion, diced
1 tsp minced garlic
1/8-1/4 tsp ground cayenne pepper
1/4 tsp chili seasoning of choice (i used tastefully simple's "wahoo! chili" blend)
1 pkg bear creek "darn good" chili mix
2 can(s) (6 oz) tomato paste
7 c hot water
2 can(s) (4 oz) diced green chiles, or diced jalepenos (if you want spicier)
1 can(s) (14.5 oz) diced tomatoes
1 can(s) (15.5 oz) kidney beans, drained

Steps:

  • 1. Brown ground beef with onion, garlic, and seasonings. Drain.
  • 2. Add water and bring to a boil. Whisk in tomato paste and Bear Creek chili mix.
  • 3. Stir in tomatoes, beans, and green chiles.
  • 4. Either reduce heat and simmer for 25 minutes, or pour into a crock pot and cook on low for 2-4 hours. Top with cheese and sour cream to serve, if desired.

CHUNKY CHILI

2 tablespoons butter
1 medium sweet onion, very finely chopped
1 1/2 pounds ground beef
2 cans red kidney beans, drained
1 jar marinara meat sauce (recommended: Paul Newman's)
1 package chili seasoning, minus 1 tablespoon reserved for rolls (recommended: Shilling's)
Shredded cheese, for garnish
Sour cream, for garnish
Minced chives, for garnish

Steps:

  • In a large skillet over medium heat, melt butter. Add onion and saute until softened. Crumble in the ground beef and cook until browned. Add beans and marinara sauce and combine thoroughly. Stir in chili seasoning, reduce heat, and simmer for 15 minutes. Spoon into individual bowls and garnish with shredded cheese, a dollop of sour cream, and chives.

Good, Easy to Make Homemade Chili image

This is my mother's recipe that she has perfected over the years. She has won many a chili competitions with it. It is very good reheated for lunches and snacks.

Number Of Ingredients 10

1 1/2-2 lbs ground beef (for vegetarians you can substitute tofu for the ground beef and it turns out good.)
1 green pepper
1 onion
1 head garlic
4 (14 1/2 ounce) cans diced tomatoes or 4 (14 1/2 ounce) cans crushed tomatoes
2 (14 1/2 ounce) cans chili beans
1/2 cup chili powder
1/4 teaspoon thyme
1/16-1/8 teaspoon cayenne pepper (depending on desired spicyness. don't add much more than this it gets real hot)
salt and pepper

Steps:

  • Brown meat (drain grease).
  • Cut up vegetables.
  • Put everything in a pot and boil on stove around 3 hours covered(crock pots also work, but I've found it doesn't turn out as good. It is always better heated up the next day).
  • That's it.

5 BEAN CHILI

Number Of Ingredients 13

1 1/2 pounds lean ground beef
2 cups chopped onion
1 (15-ounce) can light red kidney beans, drained
1 (15-ounce) can dark red kidney beans, drained
1 (15-ounce) can cannellini beans, drained
1 (15-ounce) can butter beans, drained
1 (15-ounce) can pinto beans, drained
2 (14 1/2-ounce) cans diced tomatoes with jalapenos
2 (1 1/4 ounce) packets chili seasoning mix
1 (8-ounce) can tomato sauce
1 cup water
Salt and pepper
Suggested servings: cornbread, sour cream, cheese, chips, and fresh cilantro

Steps:

  • In a skillet over medium-high heat, brown ground beef with the onions. Be sure to break up clumps as much as possible. Put the mixture in a slow cooker.
  • Add remaining ingredients and stir together. Cover and cook on high setting for 4 hours or on low for 7 to 8 hours.
  • Ladle into bowls and serve with your favorite chili fixings.
