If there is one thing Lebanon, PA is known for, it's their bologna. A good friend of mine made these deviled eggs for a holiday party and she told me that I could get the recipe from the Seltzer's Lebanon Bologna website. So here it is! I hope you enjoy them as much as everyone at the party did. This puts an entirely new twist on a boring deviled egg. Make sure that you are using Lebanon Bologna and not the minced stuff. The filling can also be made the night before. Just cover the egg filling with plastic wrap and store the egg halves in a plastic baggie until you are ready to fill them. (Total time includes time it takes to boil eggs. Everything else only takes a few minutes).

6 eggs
water (for boiling eggs)
1 teaspoon salt
4 slices seltzer's lebanon bologna (any variety, chopped fine)
4 tablespoons mayonnaise
1 teaspoon dried mustard (or 1 tbsp yellow mustard)
salt & pepper
paprika (to garnish)

Steps:

  • Hard boil eggs. To do this, place eggs in large pot and fill with water until eggs are covered by 1 inch of COLD water. Add 1 tsp salt to prevent the shell from sticking.
  • Place on the stove and heat water to a rolling boil over HIGH heat and allow eggs to boil for 1-2 minutes.
  • Remove from heat and cover with lid. Allow eggs to sit in water for 10-15 minutes.
  • When they are cool enough to handle, remove them from water with a slotted spoon. Add eggs to cold water for 5 minutes. Peel.
  • Slice eggs in half lengthwise and remove yolks.
  • Mix with remaining ingredients (except paprika).
  • Arrange egg halves on a serving plate.
  • Place mixture into egg halves and sprinkle with paprika, if desired.

This is the best spread you can make. It's great for finger sandwiches or a whole sandwich in your lunch can. I've tried most of the others and they don't even come close. This stuff is addictive.

1 lb lebanon bologna
3 hardboiled egg
4 sweet gherkins
3 tablespoons mayonnaise

Steps:

  • Put Bologna, eggs, and pickles into a food. processor 1 at a time and transfer to a bowl. Add Mayo and mix well. Use more or less Whip to your taste. It should be firm and not runny.

A girlfriend's mom made this spread years ago for our Teen Club Luncheon back in Iowa in the 50's. I asked her to tell my Mom how to make it. I made the recipe for my kids while they were growing up & they still love it. Sweet relish and eggs round out the flavor of bologna in this simple but delicious spread. Serve it on cocktail toast, or use it in sandwiches. The amount of egg, creamy salad dressing and relish should be adjusted to taste.

4 eggs
1 (16 ounce) package bologna
1 (16 ounce) jar creamy salad dressing
1 cup sweet pickle relish

Steps:

  • Place eggs in a medium saucepan and cover with cold water. Bring water to a boil and immediately remove from heat. Cover and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, cool, peel and chop.
  • Grind the bologna and eggs in a meat grinder with a medium blade.
  • In a large bowl, mix the bologna mixture with desired amount of creamy salad dressing and desired amount of sweet pickle relish. Refrigerate 2 to 3 hours, or until chilled.
