Just 20 minutes to make, and only 7 ingredients, this is by far the quickest and easiest seitan recipe ever!! This vegan chicken alternative is simple to whip up and perfect to add to any meal. Crispy crunchy on the outside, and tender chewy in the middle. The perfect meaty texture to amp up any vegan meal! If you are new to making seitan this is the perfect recipe for beginners to try.Inspired by @futurelettuce

3/4 cup vital wheat gluten
1/4 cup all-purpose flour
1 teaspoon vegetable broth powder
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1/4 teaspoon salt
2/3 cup water
3 tablespoons Thai sweet chili sauce
3 tablespoons hoisin sauce
2 tablespoons soy sauce
2 tablespoons water
1 tablespoon rice vinegar
1/2 teaspoon sesame oil
2 tablespoons light oil for frying ((such as canola or vegetable))
1 tablespoon sesame seeds (for garnish)
1 small handful chopped green onions or chopped chives (for garnish)

Steps:

  • Add about an inch of water to a pot with a steamer basket and bring to a light boil.
  • In the meantime, whisk together the vital wheat gluten, flour, vegetable broth powder, onion powder, garlic powder, and salt in a medium bowl. Pour in the water and mix to form a ball of dough. Lightly grease the steamer basket, then tear off bite-sized pieces of the seitan dough and place them in a single layer in the steamer basket. Cover, and steam the seitan for 10 minutes.
  • In the meantime, in a small bowl or a measuring glass, mix together the Thai sweet chili sauce, hoisin, soy sauce, water, rice vinegar, and sesame oil. Set aside. (See notes for other sauce options).
  • When the seitan is done steaming, heat 2 tablespoons of oil in a large skillet or non-stick pan. Use tongs to remove the seitan bites from the steamer basket, and place them into the hot oil in the pan. Be careful as it may splatter. Cook the seitan bites a few minutes per side until they are golden brown and crispy. Remove from the heat and add the sauce and toss to coat. Garnish with green onions and sesame seeds if desired and serve hot.

I made this when studying abroad in Spain, so other than the seitan nothing is hard to find or too specialty.

8 ounces ball seitan
2 (12 ounce) cans white beans
2 medium tomatoes
2 stalks celery
1 carrot
1 onion
2 bay leaves
2 vegetable bouillon cubes
2 garlic cloves
2 1/2 cups water
salt
pepper

Steps:

  • Dice both of the tomatoes roughly and add them to a soup pot with the heat on medium.
  • Add the sliced carrot and spices (including bayleaf and bullion cubes).
  • Let the tomatoes break down and become sauce like.
  • Dice and add diced onion and garlic.
  • Slice or chunk (however you prefer it, I personally like thin slices) your seitan, let it simmer for a bit.
  • Add one cup of water.
  • Drain and add the white beans. (any beans would work really) and let the sauce thicken.
  • Add the rest of the water.
  • Once the soup or diablo is thicker add the celery and let simmer until the celery is soft.
  • Add whatever spices you think it needs more, and you're done! Let it cool for a little while so all of the flavors can develop, trust me, you'll enjoy it more if you're tongue isn't burnt also.

Spicy and flavorful. This is one of my all-time favorite meals. My meat-eating family loves it too. Serve over pasta.

1 ½ pounds seitan, cut into 1/4-pound, hand-size slices
½ cup finely chopped fresh parsley
1 lemon, juiced, divided
1 pinch garlic powder, or to taste
salt and ground black pepper to taste
16 ounces drained artichoke hearts
1 (26 ounce) jar spicy tomato sauce (such as diavolo)
½ cup red wine
1 ½ cups onion and garlic-flavored croutons
1 tablespoon olive oil
2 cups shredded mozzarella cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Season seitan slices with parsley, 1/2 of the lemon juice, garlic powder, salt, and black pepper. Fold each slice in half, seasoned-side facing inwards, and place in a 9x13-inch baking dish.
  • Sprinkle remaining lemon juice over artichoke hearts; spread artichokes out between seitan slices.
  • Stir spicy tomato sauce and wine together in a bowl; pour over seitan and artichokes. Toss croutons and olive oil together in another bowl. Spread croutons and mozzarella cheese over tomato sauce.
  • Bake in the preheated oven until golden brown and bubbly, 30 to 40 minutes.
