Cucumber-Seaweed Salad image

A ginger and coconut aminos dressing brings together this healthful salad of crunchy cucumbers and toothsome seaweed.

Salad:
3/4 ounce dried wakame seaweed, cut into 1-inch pieces
2 cucumbers, peeled, seeded, and diced
Dressing:
2 tablespoons apple cider vinegar
1 1/2 tablespoons coconut aminos
1 tablespoon extra-virgin olive oil
Juice of 1/2 small lemon
1/2-inch piece of fresh ginger, peeled and grated
Pinch of fine sea salt

Steps:

  • In a bowl, soak the wakame in warm water for 5 to 10 minutes. Drain in a colander. Combine the seaweed and cucumber in a bowl. In another bowl, whisk together the vinegar, coconut aminos, olive oil, lemon juice, ginger, and salt. Toss the vegetables with 2 tablespoons dressing. Taste and add more dressing if desired.

3/8 cup rice wine vinegar
1/2 teaspoon salt
3/8 cup miso (soybean paste)
1 cup sesame oil
6 cups shredded dashi kombu (kelp)
2 English cucumbers, peeled, seeds removed and cut into chunks
2 tablespoons sesame seeds

Steps:

  • Through the feed opening of a running blender, add, 1 at a time, vinegar, salt and miso, then leaving the blender running, add the oil in a slow thin stream. Toss the dashi kombu enough dressing to coat and let sit for 1 hour.
  • Toss cucumber with just before serving, transfer to serving bowls and sprinkle with sesame seeds.

1 ounce wakame or assorted seaweeds
1/2 pound thin-skinned cucumber
4 ounces konyaku, shredded (optional)
1/2 to 1 pound cooked chicken or cooked shrimp (optional)
1/4 cup minced shallot, scallion or red onion
2 tablespoons soy sauce
1 tablespoon rice wine vinegar
1 tablespoon mirin
1 tablespoon sesame oil
1/4 teaspoon cayenne, or to taste
Salt, if necessary
1 tablespoon toasted sesame seeds (optional)

Steps:

  • Rinse seaweed, and soak it in at least 10 times its volume of water.
  • Wash and dice cucumber; do not peel unless necessary. When seaweed is tender, 5 minutes later, add konyaku if you are using it, then drain and squeeze mixture to remove excess water. Pick through seaweed to sort out hard bits; chop if pieces are large. Combine cucumber and seaweed; shred or chop chicken or shrimp if necessary, and add to bowl.
  • Add all remaining ingredients except sesame seeds, and toss; taste, and add salt or other seasonings as necessary; serve garnished with the sesame seeds.

3/4 ounce dried wakame seaweed (whole or cut)
3 tablespoons rice vinegar (not seasoned)
3 tablespoons soy sauce
2 tablespoons Asian sesame oil
1 teaspoon sugar
1 teaspoon finely grated peeled fresh ginger
1/2 teaspoon minced garlic
1 small tart apple (1/4 pound) such as Granny Smith
2 scallions, thinly sliced
2 tablespoons chopped fresh cilantro
1 tablespoon sesame seeds, toasted

Steps:

  • Soak seaweed in warm water to cover, 5 minutes. Drain, then squeeze out excess water. If wakame is uncut, cut into 1/2-inch-wide strips.
  • Stir together vinegar, soy sauce, sesame oil, sugar, ginger, and garlic in a bowl until sugar is dissolved. Cut apple into 1/4-inch dice and add to dressing with seaweed, scallions, and cilantro, tossing to combine well. Sprinkle salad with sesame seeds.

1 1/2 pounds Kirby cucumbers, sliced paper thin
2 1/4 tablespoons salt
1/4 cup fuero wakame (dried green seaweed strips), reconstituted in 1 cup water
1/2 cup Sunomono Su Konbudasi (vinegar-and-kelp sauce; see note)
2 to 4 teaspoons sugar
6 lemon slices
1 tablespoon sesame seeds, toasted

Steps:

  • In a bowl, thoroughly mix the cucumbers with the salt by hand for about 2 minutes and let them sit for 10 minutes. Fill the bowl with cold water and strain.
  • Strain the seaweed. In a clean bowl, combine the vinegar sauce and sugar to taste. Toss in the cucumbers and the seaweed until well combined with the sauce.
  • Serve mounded on individual plates with a slice of lemon and sprinkled with sesame seeds.

1/2 cup wakame seaweed, hiziki or 1/2 cup arame seaweed
1 medium japanese cucumber (or English cucumber)
2 tablespoons rice vinegar
1/2 teaspoon sugar (optional)
1 teaspoon soy sauce

Steps:

  • Bring a small pot of water to a boil.
  • While the water is coming to a boil, soak the seaweed in cool water for 10 minutes.
  • Put the seaweed into the boiling water, remove immediately, then plunge into the cold water.
  • Dry the seaweed, trim any rough parts, and chop.
  • Meanwhile, cut the cucumber in half length-wise. If there are lots of seeds, scrape them out. Slice as thinly as possible.
  • Mix the cucumber and seaweed.
  • Combine the remaining ingredients and pour over the vegetables.
  • Chill up to 2 hours before serving.
