A great meaty loaf with no bread, so it's great for low-carb diets. Tasty and sure to satisfy! This beef and pork sausage meatloaf is loaded with pepper jack cheese, bacon, chopped pistachios, and spinach.

1 pound bacon, cut into 1 inch pieces
2 onions, chopped
5 pounds ground beef
5 pounds spicy ground pork sausage
3 (10 ounce) packages frozen chopped spinach , thawed, drained and squeezed dry
3 (4 ounce) cans sliced black olives, drained
3 cups pistachio nuts, chopped
1 cup ketchup
3 eggs
1 (1.25 ounce) packet meatloaf seasoning mix
1 pound pepper jack cheese, cubed
½ cup ketchup, or as needed

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Place bacon in a large deep skillet over medium-high heat. Add onions, and cook, stirring frequently, until bacon is crisp and onions are transparent. Drain off excess grease, and set aside to cool.
  • In a large bowl, mix together the ground beef, pork sausage, bacon and onions, spinach, olives, pistachio nuts, 1 cup of ketchup, eggs, and meatloaf seasoning until well blended. Pat meat into a loaf shape, and place in a large baking pan. A roasting pan will work well. Poke cheese cubes into the top of the loaf so they are completely covered. Brush remaining ketchup generously over the top.
  • Bake for 1 1/2 hours in the preheated oven, or until the internal temperature of the loaf is 180 degrees F (82 degrees C).

i create this meatloaf recipe with a style of Seattle Hot Dog,the topping inside the meatloaf included sauteed onions,jalapenos and cream cheese,no cabbage in this recipe,one bite it make you say HOMERUN?

1 tablespoon(s) extra virgin olive oil
1 large vidalia sweet onion,peeled and diced
3 - fresh jalapeno peppers,sliced
3 tablespoon(s) honey mustard
2 pound(s) lean ground beef
3/4 cup(s) dry bread crumbs
2 egg whites
1 packet dry onion soup mix
2 teaspoon(s) crushed red pepper flakes
3/4 cup(s) sweet and spicy barbecue sauce
2 package(s) cream cheese,softened
1 cup(s) shredded monterey jack cheese

Steps:

  • Preheat oven to 350 degrees F.
  • Heat olive oil in a large skillet over medium heat,add diced vidalia onion and sliced jalapenos,saute for 5 minutes or until are tender.Turn off the heat,stir in honey mustard and set aside.
  • In a large bowl,combine ground beef.bread crumbs,egg whites,dry onion soup mix,red pepper flakes and barbecue sauce;mix well until blended.
  • Add half of meat mixture into a 9x5-inch loaf pan.Spread cream cheese over the meat mixture,Add sauteed onion-jalapeno mixture and sprinkle with shredded monterey jack cheese.Top with remaining half of the meat mixture.
  • Bake in the preheated oven for 30 minutes.Let stand for 15 minutes before slicing
