  • In a large bowl, combine the first six ingredients; toss to coat. Arrange steak fries in a single layer in a greased 15x10x1-in. baking pan. , Bake at 450° for 15-20 minutes or until lightly browned. Sprinkle with cheese.

6 russet potatoes, wedged
Peanut oil, to fry
French-fry seasoning, recipes follow
1 teaspoon dry porcini mushrooms, ground
1 teaspoon coarse sea salt
1/2 teaspoon black pepper
1/8 teaspoon dry mustard powder
1 teaspoon Sherry vinegar
1 teaspoon freshly chopped dill leaves
1 teaspoon sea salt
1/2 teaspoon coarse black pepper
1 lemon, zested
1 teaspoon smoked paprika
1 teaspoon freshly chopped parsley leaves
1/4 teaspoon garlic powder
1/4 teaspoon black pepper

Steps:

  • Heat deep-fryer with peanut oil to 350 degrees F.
  • Fry potatoes in a deep-fryer until golden brown and tender. Approximately 6 minutes. Toss with your choice of seasoning.

1 bag frozen fries, such as ore ida texas crispers, 1 lb. 14 oz
1 t. ground cumin
minced zest of 1 lime
sauce: 2 t. unsalted butter
1 t. red pepper flakes
2 t. masa harina or flour
2 cups whole milk
2 cups shredded monterey jack cheese
salt and fresh lime juice to taste

Steps:

  • 1. Preheat oven to 450 with a baking sheet inside. Toss together fries, cumin and zest in a bowl. Transfer to hot baking sheet. Bake fries until crisp, according to package directions. For the sauce, heat butter and pepper flakes in large pan over medium. Whisk in masa harina and cook 1 to 2 minutes. Gradually add milk, whisking until smooth. Bring mixture to a boil; reduce heat and simmer until thick, 2 to 3 minutes. Whisk in cheese until melted. Season with salt and lime juice. Serve fries with cheese sauce and Texas style chili. So easy! The prep for this recipe takes less than 5 minutes! The result is delicious fries that my whole family loves. Dip them in ketchup, honey mustard, ranch, or your favorite dipping sauce! This is tweaked (only very slightly) from the Oven Steak Fries recipe from FlyLady.com.

1 tablespoon grill seasoning
4 medium russet potatoes, scrubbed and cut into eighths
2 sheets aluminum foil
cooking spray

Steps:

  • Preheat the oven to 500 degrees F (260 degrees C).
  • Mix olive oil and grill seasoning together in a large bowl. Add potato wedges and toss to coat.

So I tried batter - after all it makes chicken, shrimp, and onion rings crispy so why not potatoes. Now even my husband can't get enough of these French fries. They even stay crispy when you reheat in the microwave.

2 ½ pounds russet potatoes, peeled
1 cup all-purpose flour
1 teaspoon garlic salt
1 teaspoon onion salt
1 teaspoon salt
1 teaspoon paprika
½ cup water, or as needed
1 cup vegetable oil for frying

Steps:

  • Slice potatoes into French fries, and place into cold water so they won't turn brown while you prepare the oil.
  • Heat oil in a large skillet over medium-high heat. While the oil is heating, sift the flour, garlic salt, onion salt, (regular) salt, and paprika into a large bowl. Gradually stir in enough water so that the mixture can be drizzled from a spoon.
  • Dip potato slices into the batter one at a time, and place in the hot oil so they are not touching at first. The fries must be placed into the skillet one at a time, or they will clump together. Fry until golden brown and crispy. Remove and drain on paper towels.
