3-1/2 cups fresh or frozen green beans (about 1 pound)
2 tablespoons butter, melted
1/4 to 1/2 teaspoon seasoned salt
1/4 to 1/2 teaspoon chili powder
1/8 teaspoon garlic powder
1/8 teaspoon onion powder

Steps:

  • Place beans in a steamer basket; place in a saucepan over 1 in. of water. Bring to a boil; cover and steam for 7-8 minutes or until crisp-tender. In a small bowl, combine the butter and seasonings. Drain beans; add butter mixture and toss to coat.

2 tablespoons olive oil
1 tablespoon garlic, peeled and minced
1 green onion, chopped
1 sweet bell pepper, seeded and chopped
1 teaspoon dried basil
1 teaspoon salt
1/2 teaspoon pepper
1 (20 ounce) package frozen green beans
1/4 cup grated parmesan cheese (optional)

Steps:

  • For OAMC (Once A Month Cooking preparation), combine everything in bowl, then place in freezer bag.
  • Place optional cheese in a smaller bag and insert in freezer bag.
  • Squeeze out as much air as possible before sealing.
  • Freeze until needed.
  • When ready to serve, heat skillet to medium-high and saute with 2 T water for about 8-10 min until beans are are brightly colored and tender.
  • Transfer to platter, sprinkle with cheese if desired.
  • OR.
  • Roast on baking sheet 475F until browned, about 10 minutes; add cheese if desired.

1/2 lb fresh green beans (or 1 10-ounce pkg. frozen; or 1 16-ounce can cut green beans)
3 slices bacon, cooked and crumbled
1 medium onion, chopped
2 teaspoons cornstarch
1/2 teaspoon salt
1/4 teaspoon dry mustard
1 tablespoon brown sugar
1 tablespoon vinegar

Steps:

  • Cook green beans (you can steam the fresh ones about 15-18 minutes; or fix frozen according to pkg directions, or heat canned).
  • Saute onion in bacon fat or butter/margarine until tender and starting to turn brown.
  • Mix cornstarch, salt, mustard, brown sugar, and vinegar together with 1/2 cup of the water from the green beans.
  • Add this to the onions in the pan and cook, stirring, until slightly thickened.
  • Drain the cooked green beans and mix into the thickened onions; adjust salt and pepper and stir, coating green beans and cooking until reheated if necessary.
  • Top with crumbled bacon and serve.

I call them 3 way because you can really use any 3 kinds of beans you like. AND once combined you have 3 options to choose what to do with them. I adapted this recipe to suit my family and the freezer. The original is from Beyond Macaroni and Cheese.

Caramelized green beans and convenient. I use disposable tins for simple clean up. I was curious about the technique used-raw green beans with sauce, frozen, and later baked with no defrosting. Skeptical that this recipe would work well for a meal revolving around a turkey in the oven meal, but it worked perfectly with our grilled turkey.I portioned ours out into small disposable tins. Did not have enough sauce to submerge the beans but made sure top of beans were sealed with sauce. Hubby raved about this because sauce caramelized not that canned soup taste. Keeps in freezer up to two months. Originally from Cooks Country November 2008 and Kitchen Parade 2008.

3 tablespoons unsalted butter
8 ounces fresh mushrooms, caps broken into pieces, stems roughly chopped
1 teaspoon kosher salt
1/2 teaspoon black pepper
6 garlic cloves, minced
1/2 teaspoon dried thyme
1/4 cup flour
1 1/2 cups chicken stock
1/2 cup dry white wine
1 1/2 cups cream
2 tablespoons dry sherry
additional kosher salt & freshly ground black pepper, if needed
2 lbs fresh green beans, stems trimmed, broken into bite-size pieces
1/4 cup cornstarch
1 cup panko breadcrumbs
2 tablespoons melted butter
1/2 teaspoon kosher salt
fresh ground pepper
3 ounces canned fried onions, chopped

Steps:

  • SAUCE: In a large pot or Dutch oven, melt the butter on medium heat til melted, add the mushrooms, salt and pepper and cook for about 8 minutes, stirring often, until the mushrooms are cooked and the mushroom liquid has evaporated.
  • Add the garlic and thyme and cook for about a minute. .
  • Sprinkle the mushrooms with flour and stir in as best you can. A tablespoon at a time, stir in the chicken stock, letting each tablespoon become absorbed before adding another. (This will take several minutes, be patient or you'll risk a lumpy mess.).
  • Stir in the wine and cream, bring to a boil, reduce heat and simmer, stirring occasionally, until the sauce is thickened, about 15 minutes, stir in the sherry. .
  • Taste the sauce and add salt and pepper, if needed. (It should be slightly salty and slightly peppery since the beans themselves are unseasoned.).
  • BEANS While the sauce cooks, toss the RAW beans and cornstarch well, transfer to 9x13 dish lined with foil and sprayed or smaller tins.
  • Pour hot mushroom sauce over top. Gently press beans into the sauce so that all the beans are submerged. Cool completely. Cover with plastic wrap, making sure there's no air between the beans and the plastic. Wrap with foil. Freeze. Do NOT thaw before baking.
  • TOPPING No more than a day before, mix the panko, butter, salt and pepper in a skillet. On medium heat, let the crumbs brown, stirring often, being careful not to burn. Stir in the fried onions.
  • BAKING Preheat oven to 400°F IMPORTANT: remove plastic wrap from casserole, then replace the foil. Bake for 30 minutes, stir, leave the foil off and bake for another 45 to 50 minutes. (Mine are done in 75 minutes but that might be b/c container is small--original recipe says total of 90 minutes.) Spread topping over the casserole, bake for another 10 minutes until golden.

1 teaspoon minced garlic
1 pound fresh green beans, trimmed
1 cup water
⅛ teaspoon salt
1 pinch ground black pepper

Steps:

  • Place bacon in a large, deep skillet. Cook over medium high heat until the fat begins to render. Stir in onions and garlic; let cook for 1 minute. Stir in beans and water. Let the beans cook until the water has evaporated and the beans are tender. If the beans are not tender once the water has evaporated, add a small amount more water and let them cook until tender. Season with salt and pepper (to taste) and serve.

An excellent pot luck or OAMC recipe that I got from a friend at a pot luck dinner several years ago. Serves 25 or more and freezes well. Good served as a side dish with hamburgers, meat loaf, pork chops or hot dogs. A nice combination of green beans, wax beans, lima beans, and pork and beans. Substitute rinsed and drained chick peas or garbanzo beans or any other beans you like. Add some crispy bacon bits to the casserole or serve bacon bits and grated cheddar cheese to top individual servings.

2 lbs ground beef
2 cups onions, chopped
1 cup celery, chopped
1 (10 3/4 ounce) can cream of tomato soup, undiluted
1 (6 ounce) can tomato paste
1/2 cup ketchup
1 (14 ounce) can green beans, drained
1 (14 ounce) can wax beans, drained
1 (14 ounce) can lima beans, drained
2 (14 ounce) cans pork and beans
1/2 cup brown sugar, packed
2 tablespoons prepared mustard

Steps:

  • In large Dutch oven, brown beef over medium high heat, stirring to keep broken up. Drain excess fat.
  • Add onion and celery and cook until tender.
  • Stir in tomato soup, tomato paste, ketchup. Simmer 15 to 20 minutes.
  • Spoon into a large roasting pan.
  • Add green beans, wax beans, lima beans, pork and beans, brown sugar and mustard. Stir well. (Freeze in smaller containers now for baking at a later date.).
  • Bake, uncovered, at 350 degrees Fahrenheit for one hour, stirring occasionally.
