SEASONED TATER TOTS (MEXI-FRIES)

Seasoned Tater Tots (Mexi-Fries) image

I've found a few recipes online for Mexi-Fries, but few made them exactly like our local Taco Time restaurant. So I tried this recipe, and it's better than most other recipes I found online. It makes a quick and easy side dish to go with tacos or other simple Mexican dishes, or whenever you want to spruce up plain Tater Tots.

32-oz bag(s) frozen tater tots (any brand of frozen shredded potato puffs, 'tater bites, etc.)

nonstick cooking spray

HOMEMADE CRISPY SEASONED FRENCH FRIES

Homemade Crispy Seasoned French Fries image

My family loves French fries and with 4 children the bag fries from the store just weren't enough and became too expensive. So I tried batter - after all it makes chicken, shrimp, and onion rings crispy so why not potatoes. Now even my husband can't get enough of these French fries. They even stay crispy when you reheat in the microwave.

Provided by Cassie

Categories     Side Dish     Potato Side Dish Recipes

Time 25m

Yield 8

Number Of Ingredients 8

2 ½ pounds russet potatoes, peeled
1 cup all-purpose flour
1 teaspoon garlic salt
1 teaspoon onion salt
1 teaspoon salt
1 teaspoon paprika
½ cup water, or as needed
1 cup vegetable oil for frying

Steps:

  • Slice potatoes into French fries, and place into cold water so they won't turn brown while you prepare the oil.
  • Heat oil in a large skillet over medium-high heat. While the oil is heating, sift the flour, garlic salt, onion salt, (regular) salt, and paprika into a large bowl. Gradually stir in enough water so that the mixture can be drizzled from a spoon.
  • Dip potato slices into the batter one at a time, and place in the hot oil so they are not touching at first. The fries must be placed into the skillet one at a time, or they will clump together. Fry until golden brown and crispy. Remove and drain on paper towels.

Seared Red and Black Pepper Crusted Tuna with Pineapple-Red Chile Sauce and Seasoned French Fries image

Provided by Bobby Flay

Categories     main-dish

Time 45m

Yield 4 servings

Number Of Ingredients 20

6 cups fresh pineapple juice
2 tablespoons olive oil
1 Spanish onion, coarsely chopped
4 cloves garlic, coarsely chopped
1 tablespoon ancho chile powder
2 teaspoons chile de arbol
1 tablespoon honey
Salt and freshly ground pepper
1/4 cup coarsely cracked black pepper
1 tablespoon cascabel chile powder
1 tablespoon ancho chile powder
1 tablespoon pasilla chile powder
4 (6-ounce) tuna fillets
Olive oil
Salt
3 tablespoons kosher salt
2 tablespoons ancho chile powder
1 teaspoon ground cumin
3 cups vegetable oil
4 large Idaho potatoes, peeled and sliced lengthwise into julienne

Steps:

  • Place pineapple juice in a medium saucepan over high heat and reduce to 3 cups. Heat olive oil in a medium saucepan over medium heat. Add the onions and garlic and cook until soft. Add the ancho and chile de arbol powder and cook for 2 minutes. Add the reduced pineapple juice, bring to a boil, and cook until reduced to 2 cups. Place mixture in a blender and blend until smooth. Strain into a clean medium saucepan over medium heat, add the honey and cook for 5 minutes. Season with salt and pepper to taste.
  • Mix together the spices in a medium bowl. Brush the tuna on each side with olive oil and season with salt. Dredge 1 side of each tuna in the spice mixture. Heat a cast iron skillet over medium-high heat until almost smoking. Add 1 tablespoon of olive oil and sear the tuna spice-side down for 2 to 3 minutes, until a crust forms. Turn over and continue cooking for 1 to 2 minutes for rare doneness.
  • Mix together the salt, ancho powder and cumin in a small bowl. Heat vegetable oil to 325 degrees F in a fryer. Fry the potatoes in batches until lightly browned. Drain on paper towels. Increase the temperature of the oil to 375 degrees, put the potatoes, in batches, back into the oil and fry until brown and crisp. Remove the fries from the oil with a slotted spoon to a plate lined with paper towels and immediately season with the spice mixture.

SEASONED GRILLED FRIES

Seasoned Grilled Fries image

Here is a nice technique for grilling fries that is pretty low calorie and also tasty. The whole family liked these, and next time we want "French Fries" I will probably make these. They are easier and healthier and yummier. From Bobby Flay and "Boy Meets Grill" on Food Network. I don't have "ancho chili powder", so I just used regular chili powder.

Time 35m

Yield 8 serving(s)

Number Of Ingredients 5

3 lbs idaho potatoes
1/2 cup canola oil
2 tablespoons dried ancho chile powder
1 tablespoon kosher salt
2 teaspoons ground cumin

Steps:

  • Put the potatoes, unpeeled, into a large pot and cover with cold water. Bring to a boil and simmer until almost tender, about 15-20 minutes. Do not overcook, or they will fall apart and you won't be able to cut them into fries.
  • Drain and dry the potatoes and allow to cool enough to handle.
  • Carefully cut each potato lengthwise into about 6 wedges. (Original recipe said 4 wedges, but those are too thick in my opinion.) You do have to be careful, since they are already cooked, that they could crumble or fall apart.
  • Place the wedges on a baking sheet and brush both sides of the potatoes with oil.
  • In a small bowl combine chili powder, salt and cumin. Sprinkle over the potatoes.
  • Grill the potato wedges for 3 to 4 minutes per side, until golden brown.

MONTREAL SEASONED OVEN FRIES

This is a recipe I litally threw together in a pinch to accompany burgers flavored with montreal steak seasoning. The fries turn out tender on the inside and crispy on the outside with the flavors of montreal steak seasoning. Please be warned, though, that these are lightly salty. DH and I enjoy a bit of saltiness, so that wasn't a problem for us.
