6 fluid ounces water
1 cup fresh blueberries
4 cubes ice

Steps:

  • In a blender, combine orange juice concentrate, water, blueberries and ice cubes. Blend until slushy. Pour into glasses and serve.

I am creating this adult slushie for the Seaside Brasserie - Create your own Lemonade Challenge. Please note the vodka in this recipe is optional. You can control the flavor of this lemonade slushie easily; if you like an intense flavor add more of the syrup, if you like a subtle flavor add less syrup. I hope you will enjoy. If you have any leftover syrup you can add it to a cocktail or serve it with ice, club soda and fruit.

LEMON - BLUEBERRY SIMPLE SYRUP
1/2 cup(s) vanilla sugar
1/2 cup(s) water + 1/2 vanilla bean, (use seeds only)
1/3 cup(s) meyer lemon, fresh squeezed
1 cup(s) wild blueberries, fresh or frozen
LEMON SODA SLUSHIE
2 cup(s) lemonade soda, chilled
5 - 6 cup(s) ice
1/4 - 1/3 cup(s) vodka, chilled (optional)
GARNISH
4 lemon, slices, thin
1/8 cup(s) blueberries

Steps:

  • Simple Fruit Syrup We will start with the flavored simple syrup. In a medium pan add: sugar, water and lemon juice, stir and place on stove top over medium heat and stir until the sugar has dissolved.
  • Next stir in the blueberries and bring to a boil. Once they start to boil turn down the heat and simmer for 3 - 5 minutes. Stir frequently.
  • Remove the fruit mixture from stove and strain. Add the vanilla seeds, stir well, then set aside to cool until needed.
  • Now that the syrup is cooled we can get on with it. In a blender add the lemonade soda, and vodka (if using).
  • Next, add the ice and puree until smooth and at a thickness you like.
  • Pour the frozen lemonade soda mixture into your glasses.
  • Then add as much syrup as you want to the top of your frozen lemonade and with a spoon, swirl it into your drink. Top with more syrup and garnish with thin lemon slices and a few fresh blueberries. You will want a straw and a spoon to enjoy this treat.

These super-refreshing fruit slushies are so easy to make and use just four ingredients. A quick homemade lemonade is frozen in ice cube trays for a make-ahead hack. Perfect for kids, but just as appealing to adults-especially spiked with a little vodka or gin!

1/2 cup sugar
1 bunch mint, leaves and stem torn into chunks (about 4 ounces)
2 lemons, rinds peeled with a vegetable peeler and lemons juiced (about 1/4 cup juice)
1 cup frozen blueberries

Steps:

  • Combine the sugar, mint, lemon rinds and 1/2 cup water in a small saucepan. Bring to a boil over medium-high heat, then reduce to a simmer and cook, stirring once or twice, until the sugar has dissolved, about 5 minutes.
  • Strain through a fine-mesh sieve into a large liquid measuring cup. Stir in the lemon juice (you will have about 1 cup liquid). Pour into an ice cube tray and freeze until solid, 6 hours or up to overnight.
  • Add 1/2 cup water to a blender (see Cook's Note), then add the lemonade ice cubes and the blueberries and blend until smooth. Divide between glasses and serve immediately.

1 cup sugar
1 cup fresh lemon juice (about 6 lemons)
1 1/2 cups frozen blueberries

Steps:

  • Combine the sugar with 6 cups water in a medium saucepan and bring just to a simmer over medium-low heat, stirring until the sugar is dissolved. Turn off the heat and cool to room temperature, then stir in the lemon juice.
  • Add a few blueberries to each compartment of 2 ice cube trays and cover with lemonade (you will use about half the total amount). Freeze completely, about 4 hours. Refrigerate the remaining lemonade.
  • Combine the blueberry lemonade ice cubes and the cold lemonade in a blender and blend until smooth. Serve immediately.
