1 ½ (8 ounce) packages tri-color pasta
3 stalks celery
1 pound imitation crabmeat
1 cup frozen green peas
1 cup mayonnaise
1 ½ tablespoons white sugar
2 tablespoons white vinegar
3 tablespoons milk
1 teaspoon salt
¼ teaspoon ground black pepper

Steps:

  • Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; rinse under cold water until cool and drain.
  • While pasta is cooking, chop celery and crabmeat. Run hot water over peas to defrost.
  • In a large bowl, whisk together the mayonnaise, sugar, vinegar, milk, salt and pepper. Add the pasta, celery and crabmeat and stir until evenly coated. Adjust the salt, sugar or mayonnaise to suit your taste. Chill several hours before serving.

16 ounces penne pasta
1 cup creamy salad dressing, e.g. Miracle Whip ™
½ cup Dijon-style prepared mustard
1 ½ cups grated Parmesan cheese
1 tablespoon dried dill weed
1 red onion, julienned
1 yellow bell pepper, thinly sliced
1 orange bell pepper, julienned

Steps:

  • In a large pot of salted boiling water, cook pasta until al dente, rinse under cold water and drain.
  • In a large bowl, mix together the salad dressing, mustard, cheese and dill.
  • Add pasta, red onion and bell peppers. Toss well; season with salt and pepper. Chill before serving.

1 (16 ounce) bottle ranch dressing

Steps:

  • Cook and cool pasta. Mix sour cream, dressing and milk (let sit 2 hours).
  • Mix together onions, peppers, celery, crabmeat and pasta. Mix well with dressing. Chill at least 2 hours.

SHRIMP SCAMPI PASTA SALAD

This shrimp-and-veggie-packed pasta salad proves that scampi doesn't have to be warm: the garlic-wine sauce also works beautifully when its chilled. To speed up the cooking, we added the vegetables to the boiling pasta when it was just short of done. It's a trick you'll find yourself using over and over again.

Kosher salt and freshly ground black pepper
4 ears corn
1 pound penne pasta
8 ounces trimmed fresh green beans, cut into 1-inch pieces
1/3 cup extra-virgin olive oil, plus more for drizzling
6 cloves garlic, minced
1/4 to 1/2 teaspoon crushed red pepper flakes
1/2 cup dry white wine
1pound medium peeled and deveined shrimp, halved crosswise
1 cup fresh flat-leaf parsley, chopped
2 cups cherry tomatoes, halved
Juice and zest from 1 small lemon

Steps:

  • Bring a large pot of generously salted water to a boil. Shuck the corn and cut off the kernels (you should have about 2 cups).
  • Add the pasta to the boiling water and cook until al dente according to the package instructions. Add the green beans and corn kernels about 2 minutes before the pasta is done cooking. Reserve 1/4 cup of the pasta cooking water. Drain the penne, green beans and corn, toss with a drizzle of oil in a large serving bowl.
  • Heat the oil in a large saucepan over medium heat for 30 seconds. Add the garlic and red pepper, and cook, stirring, until fragrant, about 2 minutes. Pour in the wine and reduce until the alcohol smell is gone and the sauce is golden in color, 3 to 4 minutes. Adjust the heat to medium-low and stir in the shrimp, lemon zest and 1 teaspoon salt and cook, stirring occasionally, until the shrimp are pink and just cooked through, about 2 minutes.
  • Add the cooked pasta, green beans, corn, parsley, reserved pasta water, tomatoes, lemon juice, 2 teaspoons salt and 1/2 teaspoon pepper to the shrimp. Toss and taste, checking to make sure it is generously seasoned before chilling. Chill for at least 1 hour, up to 4 hours.

Last week a friend and I had a wonderful lunch in a small restaurant/Lounge called Hedi's Wine- Bistro in Salmon Arm B.C. We started off with baked Camanbert with a whole head of roasted garlic-wonderful. Then we had this entree it was so delicious that I asked the chef for the recipe and he obliged. The measurements are for fresh or defrosted sea food- You may be a bit generous with measurement of the seafood. If the seafood is a bit too saucy you may add a tsp of corn starch shortly before finishing the recipe. I am sure that you will enjoy it!

1 cup penne pasta
1/2 teaspoon salt
5 cups water
2 teaspoons extra virgin olive oil
1/3 cup medium sized prawns
1/3 cup small scallops or 1/3 cup large scallop, cut in half
1/3 cup crabmeat
1/2 cup butter
1 cup dry white wine
1/2 cup chicken stock
1/3 cup parmesan cheese (reserve 2 tbsp)
2 tablespoons fresh parsley, chopped

Steps:

  • Bring the oil & water to a boil, add the pasta and boil for apprs 15 minutes or until it is done to your liking.
  • Drain and set aside in a hot water bath (your pasta pot sitting in larger pot filled with hot water).
  • Meanwhile put frozen seafood in a strainer and hold it under running water.
  • In a medium sized pot melt the 1/2 cup butter.
  • add the seafood and let it simmer for apprx 15 minutes.
  • Add the wine, Chicken stock and Parmesan cheese.
  • Simmer until heated through (do not overcook the seafood).
  • Add cornstarch if necessary.
  • Place the hot Penne in a deep bowl add the seafood, garnish with parsley & 2 tbsp Parmesan cheese.
  • Serve.

4 cups uncooked small pasta shells
1 pound cooked small shrimp, peeled and deveined
1-1/2 cups frozen peas, thawed
1/2 cup thinly sliced green onions
1/4 cup minced fresh parsley
1/3 cup reduced-fat mayonnaise
1/3 cup reduced-fat plain yogurt
2 tablespoons lemon juice
1 tablespoon minced fresh dill
1/4 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Cook pasta according to package directions; drain and rinse in cold water. In a large bowl, combine the shrimp, peas, green onions and parsley. Stir in the pasta. , In a small bowl, combine the remaining ingredients. Pour over pasta mixture and toss to coat. Cover and refrigerate for at least 1 hour.

2 tablespoons olive oil
¼ cup chopped red onion
1 tablespoon chopped garlic
¼ cup white wine
2 (14.5 ounce) cans diced tomatoes
1 pound shrimp, peeled and deveined
1 cup grated Parmesan cheese

Steps:

  • Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
  • Heat the oil in a skillet over medium heat. Stir in onion and garlic, and cook until onion is tender. Mix in wine and tomatoes, and continue cooking 10 minutes, stirring occasionally.
