CREAMY GARLIC SEAFOOD PASTA



Creamy garlic seafood pasta image

This seafood pasta with creamy garlic sauce is the perfect dinner recipe, whether you need to get dinner on the table fast or impress guests.

2 tbsp olive oil
250 g (½lb) shrimp / prawns (peeled and deveined)
150 g (5oz) mussel meat ((approximately 500g with shells) )
150 g (5oz) calamari tubes / squid heads
2 tbsp butter
4 garlic cloves (crushed)
½ tsp chilli flakes
½ cup white wine
1-2 tsp lemon juice
1 cup cream
salt and pepper (to taste )
½ cup parsley (finely chopped)
500 g (1lb) pasta (cooked + 1 cup cooking water reserved)

Steps:

  • In a large pan, add a splash of oil and allow to heat up.
  • Season the seafood with salt and pepper then cook in batches until golden brown.
  • The shrimp/prawns should take no more than a minute per side (depending on size) and the calamari and mussels will take only a few minutes to cook. Take care not to overcook the seafood as they will go tough and rubbery. Rather undercook slightly as it will cook a little more while being tossed with the sauce and pasta.
  • Remove the seafood from the pan and set aside.
  • In the same pan, melt the butter and add the garlic and chilli flakes. Cook until fragrant then pour in the lemon juice and wine.
  • Bring to a simmer and allow to reduce by half.
  • Pour in the cream and allow to come to a simmer. Allow to cook for 5 minutes or until the sauce coats the back of a spoon.
  • Add the seafood (and any of its resting juices) and parsley and stir to combine.
  • Toss the sauce with cooked pasta and a splash of the pasta cooking water and toss to coat the pasta. Serve sprinkled with parsley.

Four-Cheese Truffled Macaroni and Cheese image

This is one of my favorite things to make once the weather gets a chill in the air. It's great for cheese-lovers (like myself) and works great as leftovers or at dinner parties! Truffle oil has by far been one of the best culinary purchases I have made. One little bottle has lasted me a year, and can be used with so many things, like this recipe. Top with a pinch of truffle salt!

1 (16 ounce) package cavatappi (corkscrew macaroni)
6 tablespoons butter
½ cup flour
5 ½ cups milk, divided
2 ½ cups shredded smoked Gouda cheese
2 cups shredded sharp Cheddar cheese
1 ½ cups shredded Swiss cheese
1 ½ cups grated Parmesan cheese, divided
½ cup dry bread crumbs
1 tablespoon truffle oil

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Butter a 9x13-inch baking dish.
  • Bring a large pot of lightly salted water to a boil. Cook cavatappi in boiling water, stirring occasionally, until cooked through but firm to the bite, about 8 minutes. Drain.
  • Melt butter in a large pot over medium-low heat. Whisk flour into butter until mixture has a thick, paste-like consistency, about 30 seconds. Slowly whisk 2 cups milk into butter-flour mixture until smooth. Stir in remaining milk, increase heat to medium high, and cook, whisking constantly, until mixture is thick and almost boiling, 5 to 10 minutes.
  • Stir Gouda cheese, Cheddar cheese, Swiss cheese, and 1 cup Parmesan cheese into milk mixture until cheese melts and cheese sauce is smooth. Fold cavatappi into cheese sauce; pour mixture into prepared baking dish.
  • Stir remaining Parmesan cheese and bread crumbs together in a small bowl. Sprinkle bread crumbs mixture over cavatappi mixture and drizzle truffle oil over the top.
  • Bake in the preheated oven until golden and bubbling, about 30 minutes. Cool for 10 minutes before serving.

1 lb penne pasta, cooked
2 tablespoons olive oil
1 cup minced shallot (about 10)
2 teaspoons chopped fresh garlic (about 4 cloves)
salt
fresh ground black pepper
2 cups chopped plum tomatoes (5 or 6 should do it)
1 lb fresh mussels, scrubbed and beards peeled
1 lb shrimp, deveined and peeled completely including tails
2 cups dry white wine
1 lb lump crabmeat
1/2 cup chopped green onion, dark green parts only
1/2 cup freshly grated parmesan cheese
1/4 cup fresh basil leaf, torn into large pieces
truffle oil, as needed

Steps:

  • Note: have pasta ready before you start this dish; don't worry if it cools off, as it will be warmed up again in the skillet.
  • In a large skillet over medium heat, heat oil; add shallots and garlic, season with salt and pepper, and saute for about one minute.
  • Add tomatoes and cook for another minute.
  • Add mussels and shrimp, season again with salt and pepper, and cook for just two minutes.
  • Add wine, bring to a simmer, and cover.
  • Cook until mussel shells all open, about 4 minutes or so.
  • Add crabmeat and onions; season again with salt and pepper; cook for just one minute.
  • Add pasta and toss; cook until pasta is heated through, only about one minute.
  • Remove from heat; add cheese and basil and lightly toss, then place mixture in a large serving bowl.
  • Garnish with a drizzle of truffle oil and serve.
