This refreshing salad is always well received, especially in summer. My mother said the recipe just "evolved", because she kept adding ingredients until it tasted right. It really does have great flavor!

Number Of Ingredients 12

3 cups uncooked elbow macaroni (about 10 ounces)
6 ounces peeled and deveined cooked shrimp, rinsed and drained
1 can (6 ounces) crabmeat, drained and flaked
2 cups sliced celery
1/2 small onion, finely chopped
3 to 4 hard-boiled large eggs, coarsely chopped
1 cup mayonnaise
3 tablespoons sweet pickle relish or finely chopped sweet pickles
1 tablespoon prepared mustard
1 tablespoon vinegar
1 teaspoon paprika
Salt and pepper to taste

Steps:

  • Cook macaroni in boiling salted water until tender; drain and cool. In a large bowl, combine macaroni, shrimp, crabmeat, celery, onion and eggs; set aside. In a small bowl, mix the mayonnaise, pickle relish, mustard, vinegar and paprika. Add to macaroni mixture; toss lightly. Season with salt and pepper. Cover and chill.

2 cups dry macaroni, cooked (I use the small seashells, but elbow macaroni can also be used)
3 cups cooked baby shrimp (, the wee ones; substitute crab if you wish)
1/2 cup chopped bermuda onion
1 cup chopped celery
1 cup chopped green pepper
4 radishes, unpeeled and thinly sliced (optional)
1 cup mayonnaise
1 tablespoon lemon juice
1 1/2 teaspoons horseradish
1 dash cayenne pepper
1 dash salt
1 dash black pepper

Steps:

  • Mix cooked macaroni, shrimp, onion, celery, green pepper, and radishes together in a salad bowl.
  • In a small bowl, combine mayonnaise with the horseradish and lemon juice, then add spices to taste.
  • Fold into salad and chill well before serving.

A cool seafood salad for those hot summer days. It's a real treat for potlucks. Use your favorite pasta. Chopped celery or Vidalia onion may be added if desired.

1 (16 ounce) package spaghetti, broken into 2-inch pieces
4 hard-cooked eggs, chopped
1 carrot, grated
½ cup frozen petite peas, thawed
1 cup frozen fully cooked salad shrimp, thawed
½ cup crab meat, cooked
16 ounces mayonnaise
¼ cup milk
1 teaspoon lemon juice
1 teaspoon sugar
salt to taste
black pepper to taste
paprika to taste

Steps:

  • Bring a large pot of lightly salted water to boil. Add pasta, and cook until al dente, about 8 to 10 minutes. Drain, and add pasta to a large bowl. Stir in eggs, carrots, peas, shrimp, and crab meat. Cover, and refrigerate.
  • To make dressing, stir together mayonnaise, milk, lemon juice, and sugar. Season to taste with salt, pepper, and paprika.
  • Mix dressing into chilled pasta, stirring until well combined. If the salad seems dry, stir in more mayonnaise and a splash more milk or water. Cover, and chill before serving.
