Quick and Easy Crab Melts image

Crab Melts are a fast, easy and delicious way to enjoy fresh or canned crab meat, perfect as a meal in themselves or sliced as finger food at parties.

½ cup white crab meat
1 tsp Dijon mustard
2 tablespoons finely chopped red pepper
1 tablespoon finely chopped celery
2 tablespoons crème fraîche or sour cream (low fat is fine)
salt and pepper to taste
4 slices of Monterey Jack cheese or Swiss cheese (or use Pepper Jack if you like a bit of spice)
a four or five inch slice of baguette or 2 or 3 pieces of sliced bread

Steps:

  • Put the French bread or ciabatta bread halves in the oven on a baking sheet at about 350°F (175°C) or under the broiler or grill for five minutes or until they are beginning to take on a bit of colour.
  • Meanwhile, mix the crab meat with the mustard, red pepper, and celery.
  • Add crème fraîche or sour cream as well as salt and pepper to taste. Mix together gently.
  • Divide the crab mixture between the pieces of bread and top with the cheese slices.
  • Return the crab and cheese topped bread to the oven for five to ten minutes, or place under the broiler or grill, until the cheese is bubbling and brown.
  • The cheese gets very hot, so allow these to cool a bit before serving one half of the panini or ciabatta to each person, or cutting into small pieces to serve as hors d'oeuvres.

¼ cup chicken broth
1 tablespoon Dijon mustard
¼ cup heavy cream
2 tablespoons butter
1 (6 ounce) can crab
1 (6 ounce) can salad shrimp
¼ cup heavy cream
1 teaspoon Dijon mustard
1 cup shredded Cheddar cheese
1 dash nutmeg
Salt and pepper to taste
4 eggs, beaten
¼ cup heavy cream
Salt and pepper to taste

Steps:

  • Prepare the filling by stirring Dijon mustard into chicken broth in a saucepan until dissolved. Bring to a simmer over medium-high heat, then add 1/4 cup cream and 2 tablespoons butter. Reduce heat to medium, and simmer until reduced by half, then stir in crab and shrimp; keep warm over low heat.
  • Prepare the sauce by warming 1/4 cup cream, and 1 teaspoon mustard over medium heat. Once hot, whisk in the shredded cheese, then season to taste with nutmeg, salt, and pepper. Keep warm over low heat.
  • Whisk eggs, 1/4 cup cream, salt, and pepper together until smooth. Heat an 8-inch non-stick skillet over medium heat, and lightly oil with cooking spray. Pour 1/4 cup of the egg mixture into hot pan, and swirl to make a thin, even layer of egg. Cook until firmed, then flip and cook for a few seconds more to firm the other side.
  • To prepare omelets, spoon some of the seafood filling into the lower half of each omelet. Roll up into a cylinder. Serve 2 per person bathed with Cheddar sauce.

1 (6 ounce) can crabmeat, drained (or 7-3/4 can salmon or 6-1/2 oz. solid light tuna)
1/3 cup mayonnaise
1/4 cup red peppers or 1/4 cup green pepper, chopped
1/3 cup celery, chopped
2 hard-boiled eggs, chopped
1 teaspoon onion flakes
1 tablespoon lemon juice
1 dash cayenne pepper
1 1/4 cups grated colby cheese or 1 1/4 cups grated mozzarella cheese
1 (8 ounce) can Pillsbury Refrigerated Crescent Dinner Rolls

Steps:

  • Heat oven to 375°F.
  • Combine ingredients reserving 1/4 cup of cheese.
  • Separate crescent dough into 4 rectangles;press perforations together to seal.
  • Divide mixture evenly into centre of 4 rectangles.
  • Roll up and press to seal.
  • Place seam side down on a greased cookie sheet.
  • Sprinkle tops of rolls with remaining cheese.
  • Bake for 15-18 minutes, or until golden.

2 tablespoons chili sauce
1 cup grated monterey jack cheese

Steps:

  • Preheat broiler.
  • In a bowl, combine the shrimp, mayonnaise, chili sauce, and cheese.
  • Place muffins on a baking sheet, cut side down; broil 4 inches from the heat for 1 minute.
  • Turn and spread each with shrimp mixture.

4 English muffins, split and toasted
3 tablespoons butter, melted
1 can (6 ounces) lump crabmeat, drained
1 can (6 ounces) small shrimp, rinsed and drained
1 cup shredded cheddar cheese, divided
1/2 cup chopped celery
1/2 cup chopped ripe olives
1 tablespoon minced fresh parsley
1/4 cup mayonnaise
1 teaspoon lemon juice
1/2 teaspoon Dijon mustard
1/2 teaspoon Worcestershire sauce

Steps:

  • Brush English muffins with butter; set aside. In a bowl, combine the crab, shrimp, 3/4 cup cheese, celery, olives and parsley. Combine the mayonnaise, lemon juice, mustard and Worcestershire sauce; pour over seafood mixture and toss to coat. , Place a rounded 1/4 cupful of the mixture on each muffin half; sprinkle with remaining cheese. Place on a baking sheet. Broil 4-6 in. from the heat for 3-4 minutes or until heated through and cheese is melted. Serve immediately.
