1 pound frozen crabmeat, thawed, or 2-1/2 cups canned lump crabmeat, drained
1 pound cooked shrimp, peeled, deveined and cut into 1/2-inch pieces
2 celery ribs, chopped
1 medium onion, finely chopped
1/2 cup finely chopped green pepper
1 can (4 ounces) mushroom stems and pieces, drained
1 jar (2 ounces) diced pimientos, drained
1 cup mayonnaise
1 cup 2% milk
1/2 teaspoon pepper
Dash Worcestershire sauce
1/4 cup dry bread crumbs

Steps:

  • Cook rice according to package directions. Meanwhile, preheat oven to 375°., In a large bowl, combine the crab, shrimp, celery, onion, green pepper, mushrooms and pimientos. In a small bowl, whisk mayonnaise, milk, pepper and Worcestershire sauce; stir into seafood mixture. Stir in rice., Transfer to a greased 13x9-in. baking dish. Sprinkle with the dry bread crumbs. Bake, uncovered, until bubbly, 40-50 minutes.

6 tablespoons sherry or apple juice
3/4 teaspoon salt
1/4 teaspoon cayenne pepper
1 pound cooked medium shrimp, peeled and deveined
1 can (6 ounces) crab
1 can (14 ounces) water-packed artichoke hearts, drained, rinsed, chopped and patted dry
1 can (8 ounces) sliced water chestnuts, drained
1/2 cup sliced almonds
1/4 cup grated Parmesan cheese

Steps:

  • Preheat oven to 350°. In a Dutch oven, saute scallops, onion and celery in butter until scallops are firm and opaque. Stir in flour until blended. Add cream. Bring to a boil; cook and stir 2 minutes or until thickened. Reduce heat; add cheddar cheese, sherry, salt and cayenne, stirring until cheese is melted. 1 lb sourdough bread, 1 medium load, roughly torn
8 tablespoons unsalted butter, 1 stick, melted, divided
1 cup shredded cheddar cheese
3 teaspoons kosher salt, divided, plus more to taste
4 cups dry white wine, plus 1 tablespoon, divided
1 lb shrimp, 16/20 count, peeled and deveined
1 lb large scallops
1 lb jumbo lump crabmeat
2 cups half & half
3 tablespoons all-purpose flour
1 teaspoon worcestershire sauce
1 teaspoon paprika
1 tablespoon lemon juice
2 tablespoons ketchup
28 oz artichoke heart, 2 cans, drained and chopped
fresh chive, chopped, for garnish
lemon wedge, for serving

Steps:

  • Preheat the oven to 350˚F (180˚C).
  • Spread the bread in a single layer on a rimmed baking sheet and bake for 10 minutes, until lightly toasted. Let cool to room temperature. Leave the oven on.
  • Add the toasted bread to a food processor and pulse until finely ground. You should have about 4 cups (460 G) of bread crumbs.
  • In a large bowl, combine the bread crumbs, 4 tablespoons of melted butter, the cheddar cheese, and 1 teaspoon of salt and toss to combine. Set aside.
  • In a medium pot, combine 4 cups (960 ml) of white wine and a generous pinch of salt and bring to a boil over medium-high heat. Add the shrimp and cook until bright pink, about 1 minute. Use a spider or slotted spoon to transfer the shrimp to a colander to drain.
  • Return the wine to a boil. Add the scallops and cook until just opaque, about 2 minutes. Transfer the scallops to a colander to drain.
  • Chop the shrimp and scallops into bite-size pieces. Transfer to large bowl, along with the crab and 1 teaspoon of salt. Toss to combine.
  • In a liquid measuring cup or medium bowl, whisk together the half-and-half, 3 tablespoons of melted butter, the flour, Worcestershire sauce, paprika, lemon juice, ketchup, remaining tablespoon of white wine, and remaining teaspoon of salt.
  • Brush the remaining tablespoon of melted butter in a 9 x 13-inch (22 x 33 cm) baking dish.
  • Scatter the artichokes in an even layer over the bottom of the baking dish. Scoop the seafood mixture over the artichokes. Pour the sauce over the seafood. Top with the bread crumb mixture.
  • Bake the casserole for 20-25 minutes, or until bubbling and golden brown.
  • Top with chives and serve with lemon wedges.

This is a recipe I found in one of the grocery store recipes booklets. It is very rich tasting and the sherry just gives it a great accent. Since I don't have easy access to fresh seafood, I used the canned crab and it was fine. Although I haven't tried it, I would feel comfortable using scallops or any shellfish to make this dish.

1 1/2 lbs medium raw shrimp, peeled, deveined and tails removed
1/2 lb fresh uncooked crabmeat or 2 (6 ounce) cans crabmeat, canned
1/4 cup dry sherry
3/4 cup uncooked long-grain white rice
1 1/2 cups water
8 tablespoons butter
1 shallot, minced
1 (8 ounce) package fresh mushrooms, sliced
1/2 cup flour
1/2 teaspoon seasoning salt
1/4 teaspoon pepper
1 pint half-and-half
1/2 cup milk
1/4 cup butter, melted
1 cup Italian style breadcrumbs

Steps:

  • In large bowl, combine shrimp, crabmeat and sherry. Mix gently to coat. Cover and refrigerate 1 hour to marinate.
  • Preheat oven to 350. Spray 13 x 9 glass baking dish with nonstick cooking spray. Cook rice in water as directed on package.
  • Meanwhile, melt 2 tbsp of the butter in large saucepan over medium heat. Add shallot and mushrooms; cook and stir 5 minutes or until tender.

  • Add seafood mixture and cooked rice to mushroom sauce; stir gently to mix. Pour into sprayed baking dish. In small bowl combine topping ingredients; mix well. Sprinkle over top of casserole.
  • Bake 30 to 35 minutes or until casserole is bubbly and crumb topping is golden brown. Let stand 5 minutes before serving.

This is a seafood casserole recipe that we often make at Christmas or New Year's. We live in on the east coast of Canada so we have good access to seafood. You can change the quantities or types of seafood used. I usually don't use the crab meat, but increase the amount of lobster and shrimp I use. You can use haddock or salmon in it also. I usually use whatever I have on hand. The important thing is to use approximately the same volume of fish as stated in the recipe. I usually serve it over the flaky pastry shells, but you can also serve it in crepes or just by itself on the plate.

1 cup chopped celery
3/4 cup finely chopped onion
1/2 lb shrimp
1/2 lb scallops
1 1/2 cups cooked lobster meat

3 tablespoons butter

1 cup light cream
1 1/2 cups shredded cheddar cheese

Steps:

  • In a saucepan, bring the water to a boil, cook celery, and onions until tender (about 6 minutes).

  • In same saucepan and water, poach scallops over low heat until firm and opaque (aobut 3 minutes).
  • Add shrimp and cook about 4 minutes.
  • Drain seafood, reserving 3/4 cup of cooking liquid. This liquid amount is based on the original serving size. Increase liquid accordingly.
  • Place all seafood into large bowl.
  • In large saucepan, melt butter over medium heat.
  • Add flour and cook, stir for 2 minutes.
  • Gradually whisk in 3/4 cup of cooking liquid and cream, cook until thick. This liquid amount is based on the original serving size. Increase liquid accordingly.
  • Stir in cheese until melted.
  • Add seafood, season with salt and pepper.
  • Transfer into 3.5 L casserole dish.
  • Make topping by melting 2 tablespoons butter and stirring in the 1cup shredded cheddar cheese and 1/2 cups of bread crumbs. Keep in mind this topping is for original recipe.
  • Spread topping over casserole.
  • You can refrigerate the casserole at this point for up to 8 hours, or
  • Bake uncovered in 325oF oven 35-45 minutes or until bubbly around edges. Let stand 5 minutes.

1 1/2 cups dry white wine
1/4 cup chopped onion

2 ounces swiss cheese, shredded
1 tablespoon lemon juice

  • Add Swiss and stir until cheese melts.
  • Add lemon juice and lemon-pepper seasoning to reserved broth and stir into sauce gradually.
  • Add shrimp and mushrooms to pan.
  • Place mixture into a large buttered casserole dish.
  • Cover with foil or a lid and bake at 350°F for 40 minutes.
  • Mix breadcrumbs with melted butter, Parmesan and almonds.
  • Sprinkle mixture evenly over the casserole and bake 10 minutes more.
  • Allow to stand 10 minutes before serving.
  • Serve with steamed rice.

4 cups uncooked mafalda (mini-lasagna noodle) pasta (8 oz)
2 cups broccoli flowerets
1 jar (1 lb) Alfredo pasta sauce
1/2 cup milk
1/8 teaspoon pepper
1/2 lb cooked peeled deveined medium shrimp, thawed if frozen and tails peeled
1 container (8 oz) refrigerated pasteurized crabmeat, drained and cut up
1/4 cup chopped fresh parsley
1/4 cup shredded Parmesan cheese
1 tablespoon butter or margarine, melted
1/4 cup Progresso™ Italian style bread crumbs

Steps:

  • Heat oven to 350°F. Spray 11x7-inch (2-quart) glass baking dish with cooking spray. Cook pasta as directed on package, adding broccoli for the last 2 minutes of cooking. Drain pasta and broccoli.
  • In large bowl, mix Alfredo sauce, milk and pepper. Stir in shrimp, crabmeat, parsley and 2 tablespoons of the cheese. Add pasta and broccoli; toss gently to mix well. Spoon into baking dish. Cover baking dish with foil.
  • Bake 35 to 40 minutes or until hot in center.
  • Meanwhile, in small bowl, mix remaining 2 tablespoons cheese, the butter and bread crumbs. Sprinkle over casserole. Bake 10 to 15 minutes longer or until top is light golden brown.

We have lots of friends from up North who come down here to Florida each winter to be our of the snow and in the sun. They always love to be served fresh seafood, a green salad and pie made with just-ripened strawberries. So I always try to accommodate them...and they usually compliment the chef!

1/3 cup finely chopped onion
1/4 cup butter, cubed
1/4 cup all-purpose flour
1/2 teaspoon salt
1/2 teaspoon pepper
1 cup whole milk
1 cup half-and-half cream
2 cups cooked long grain rice
1 cup chopped cooked peeled shrimp
1 cup crabmeat, drained, flaked and cartilage removed
1 can (8 ounces) sliced water chestnuts, drained
2 tablespoons lemon juice
1 tablespoon chopped pimientos
1 tablespoon minced fresh parsley
1 cup shredded cheddar cheese, divided

Steps:

  • In a small saucepan, saute onion in butter. Stir in the flour, salt and pepper until blended. Gradually whisk in milk and cream. Bring to a boil. Cook and stir for 2 minutes or until thickened. Remove from the heat; stir in the rice, shrimp, crab, water chestnuts, lemon juice, pimientos, parsley and 1/2 cup cheese. , Transfer to a greased 2-1/2-qt. baking dish. Bake at 350° for 25-30 minutes or until heated through. Sprinkle with remaining cheese.

I love this easy casserole. I will be making this for our New Year's Eve dinner along with a nice steak. Prep time doesn't include time for cleaning your seafood.

1 lb scallops
1 lb medium shrimp
1 lb crabmeat
2 lbs boneless haddock
12 ounces shredded mozzarella cheese
2 1/2 cups Ritz cracker crumbs
1/2 cup butter (melted)
1 1/2 teaspoons Worcestershire sauce

Steps:

  • In a well-buttered 9x13-inch baking dish, layer seafood in the order listed; cover with cheese.
  • Mix together the Ritz cracker crumbs, butter and Worcestershire sauce; spread over the cheese, covering top.
  • Bake uncovered at 350°F for 45 minutes. Serve the casserole with a wedge of lemon.

I made this one up, but not saying I'm the first to do that. It's sort of 3 dishes in one. My friends say this is one my best creations. It has lots of butter in it, but I have tried to substitute and it doesn't taste as good.

2 1/2 lbs baking potatoes, course chopped
1/4 cup butter
1/2 large white onion, chopped
1 large red bell pepper, chopped
3 celery ribs, chopped
3 garlic cloves, minced
1/2 cup butter
2 teaspoons tarragon vinegar
1/2 lemon, juice of
1 lb shrimp, 60 80 count
3/4 lb crabmeat
12 ounces cream cheese, softened
1 tablespoon sour cream
2 slices bacon, fried and chopped
1/3 cup parmesan cheese, grated
10 ounces cheddar cheese, grated
4 green onion tops, chopped
1/2 teaspoon cayenne pepper
salt
pepper
cajun seasoning (I use Emeril's Essence home made with no salt)

Steps:

  • Cook bacon until crisp, chop and set aside.
  • Preheat oven to 375°F.
  • Cut Potatoes into bite size pieces or about .5 ounces each.
  • Place in a large casserole dish, season with salt, pepper and Cajun seasoning.
  • Pour ½ stick of melted butter over potatoes and mix to coat.
  • Bake for 50 minutes or until the potatoes are fork tender and beginning to brown.
  • When the potatoes are almost done, Use a large deep skillet and add 1 stick butter, the onions, bell pepper and celery.
  • Simmer for about 8 minutes until onions begin to clear.
  • Add the garlic, simmer 1 minute.
  • Add the lemon juice, tarragon vinegar and the shrimp.
  • Season with salt, pepper and Essence or cayenne.
  • Cook shrimp until just done, about three minutes.
  • Add the cream cheese and sour cream, when it has liquefied add the crab meat, and stir gently to mix well.
  • When the mixture is hot, pour it over the top of the potatoes in the casserole dish and smooth it out.
  • Sprinkle the top with the parmesan, the chopped bacon, and spread the cheddar cheese out evenly on top.
  • Bake until the cheese has melted and serve immediately garnished with chopped green onions and a few dashes of Essence.

1 1/2 lbs shrimp or 1 1/2 lbs white fish fillets
2 (10 1/2 fluid ounce) cans cream of shrimp soup
0.5 (10 1/2 fluid ounce) can white wine
hot sauce

Steps:

  • Crush crackers and mix with melted butter.
  • Cover the bottom of a 9x11" baking pan with 1/2 the mixture.
  • Place fish over crumbs.
  • Mix soup, wine and hot sauce and pour over fish.
  • Top with remaining cracker mix.

3/4 lb haddock
144 Ritz cracker crumbs (4 sleeves)
2 cups salted butter (4 sticks)
1 onion
5 pressed garlic cloves
6 tablespoons olive oil
1/2 lb shrimp
1/2 lb bay scallop
1 lb baby clams
1/2 lb imitation crabmeat
2 chopped lobster tails (optional)

Steps:

  • Drizzle olive oil diagonally across 8 1/2 x 11" pan.
  • Divide 1 butter stick into approximately 9 pads of butter and scatter over the bottom of the pan.
  • Divide haddock into 1" thick pieces and layer above pads of butter leaving minimal spacing in the pan.
  • Layer with Ritz Stuffing Mix* #1.
  • (Will be needing 2 mixes).
  • Stuffing Mix*:.
  • 2 sleeves Ritz Crackers (crumbs) set aside in a mixing bowl.
  • In a small pan, saute 2 Tablespoons Olive Oil, 1 stick of butter, 3 Tablespoons chopped onion and 2 pressed garlic cloves. When onions appear "clear", pour liquid mixture into mixing bowl containing cracker crumbs and mix well coating all crumbs.
  • In a family size skillet pan, saute 2 Tablespoons Olive Oil, 1 stick of butter, 3 Tablespoons chopped onion and 3 pressed garlic cloves along with 1/2 pound shrimp, 1/2 pound bay scallops, 1/2 pound cubed imitation crabmeat, 1 pound whole baby clams (and optional 2 chopped lobster tails), if you have any leftover haddock, cut into smaller pieces and add to skillet as well. Let simmer on medium low for about 15 minutes and layer seafood mixture next into the pan.
  • Add your second and final layer of Ritz Stuffing Mix*.
  • Cover with foil and bake at 350°F for 60 minutes.
  • Enjoy!
