CHERRY PANCAKES (GERMANY)
This recipe comes from the 1955 cookbook, Germany Cookery & is included here to plump up my Deutsch recipes cookbook for the Zaar World Tour 6.

Steps:
- Soak rolls in cold water, then squeeze them as dry as you can before breaking them up.
- Thoroughly mix rolls with flour, eggs, milk & the 2 teaspoons of sugar.
- Pit the cherries, then cut each in half & fold them into the batter.
- In a large skillet melt the butter over medium-high heat then drop spoonfuls of batter onto the butter, browning the pancakes for several minutes on first one side & then the other.
- Mix together the 2 tablespoons of sugar & the cinnamon, & serve the pancakes topped with a sprinkling of this cinnamon sugar.
GERMAN POTATO PANCAKES - KARTOFFELPUFFER
Posting for ZWT 6 for Germany. Recipe states: German potato pancakes are a real treat and something Germans miss when they move away. Eating freshly made potato pancakes with applesauce in the out-of-doors at a weekly market or carnival is a wonderful way to do indulge. Now, you can also make them at home with this simple recipe for potato pancakes.

- Peel and grate potatoes (or use frozen or refrigerated hashbrowns). Place the grated potatoes in a clean dishcloth or cheesecloth and squeeze the liquid out of them into a bowl. Let the liquid stand a few minutes, then drain the liquid, leaving potato starch at the bottom of the bowl. Add the potatoes.
- Grate the onion over the potatoes. Add dried onion flakes for part or all of the onion, if you like. Add salt, pepper, nutmeg and egg. Mix thoroughly.
- Heat oil in a frying pan. You can use a non-stick pan and just a few drops of oil, if you wish, but for best results use 1/8 to 1/4 inch of oil.
- Using about 1/2 cup, drop the potato mixture into hot oil and flatten with the back of a spoon. Fry 4-5 minutes on each side, or until golden brown. Drain on paper towels and serve hot with applesauce and maybe a sprinkle of cinnamon.
SCRAMBLED PANCAKES
My husband found this recipe after our daughter came home from a friend's house reporting she had "Scrambled Pancakes". They were a hit and we've enjoyed them ever since. I had some kids over this morning and was in a panic when I couldn't find the recipe on my cluttered desk. I searched Recipezaar to no avail. I finally went back to my desk and found it. I'm posting this so I never need to worry about losing it again. I love it because this recipe adds extra protein to what is usually a carbohydrate packed meal. I've even sneaked in a few extra eggs on occasion. This is so easy, even the kids can make it!

- Whisk together ingredients.
- Pour into pan.
- Cook on stove top on medium heat.
- Stir periodically.
- Cook until cooked through and/or lightly browned.
- Serve with favorite syrup or honey.
SCRAMBLED PANCAKES (GERMANY)

Steps:
- Cream the 1st 2 tablespoons of butter until frothy, then add, one after another, the sugar, egg yolks, salt, flour & milk.
- Beat egg whites until stiff, then carefull fold them into the batter.
- In a large skillet, melt the final tablespooon of butter, then pour the batter onto the butter, frying it, 3 to 4 minutes on each side until golden brown.
- With 2 forks, chop up the resulting pancake.
- Mix together the 1 tablespoon of sugar & 2 teaspoon cinnamon.
- Serve on a hot platter, sprinkled with the cinnamon sugar & garnished with pieces of apple, cherries or other fruits, dried or fresh.
