Time 25m

Yield 4

Number Of Ingredients 8

4 eggs
1 tablespoon milk
1/2 teaspoon salt
1/2 teaspoon pepper
4 slices sourdough bread (about 1/2 inch thick)
1 tablespoon butter
4 slices tomato
2 oz Havarti or dill Havarti cheese, cut into 4 slices

Steps:

  • In medium bowl, beat eggs, milk, salt and pepper thoroughly with fork or wire whisk until well mixed. Heat 10-inch nonstick skillet over medium heat. Pour egg mixture into skillet. As mixture begins to set at bottom and side, gently lift cooked portions with spatula so that thin, uncooked portion can flow to bottom. Avoid constant stirring. Cook 2 to 3 minutes or until eggs are thickened throughout but still moist.
  • To make sandwiches, divide eggs evenly between 2 bread slices. Layer each sandwich with 2 cheese slices, 2 tomato slices and top with remaining bread slices. Spread 3/4 teaspoon butter over each top slice of bread.
  • Wipe out skillet; heat over medium-high heat. Add sandwiches to skillet, buttered side down. Spread remaining butter over top slices of bread. Cook 4 to 5 minutes or until bottoms are golden brown. Turn; cook 4 to 5 minutes longer or until bottoms are golden brown and cheese is melted.
  • To serve, cut sandwiches in half; serve warm.

Time 20m

Yield 1

Number Of Ingredients 10

1 large egg
2 tablespoons milk
½ teaspoon salt
½ teaspoon onion powder
½ teaspoon garlic-pepper seasoning
⅓ cup Cheddar-Jack cheese
cooking spray
2 teaspoons butter, softened
2 slices bread
⅓ cup shredded mozzarella cheese, or more to taste

Steps:

  • Whisk egg, milk, salt, onion powder, and garlic-pepper seasoning together in a bowl until well combined and pale yellow in color. Dump in Cheddar-Jack cheese and stir until thick.
  • Spray a skillet with cooking spray and set over medium-low heat. Pour egg mixture into the skillet; cook and stir until eggs are set, about 5 minutes. Remove to a plate.
  • Lightly butter one side of each bread slice.
  • Spray the skillet again with cooking spray. Put one slice of bread, buttered-side down, in the pan. Top with 1/2 of the mozzarella cheese, the egg mixture, the remaining mozzarella, and the remaining bread, buttered-side up. Cook until bread is toasted and browned, 1 to 2 minutes. Flip and cook until the other side is browned and the cheese is melted, another 1 to 2 minutes.
  • Transfer to a plate and let cool for a minute before serving.
