This is a post in response to a request. I do remember my mom making these once though and think these would be a wonderful addition to a brunch or a Scottish-themed meal!(prep/cook time does not include time to hard-cook eggs)

Number Of Ingredients 9

6 hard-boiled eggs, well-chilled
1 lb sausage meat
2 tablespoons minced parsley
1/2 teaspoon ground sage
1/4 teaspoon pepper
1/4 cup flour
2 eggs, beaten
1/2-3/4 cup breadcrumbs
vegetable oil (for frying)

Steps:

  • Peel hard-cooked eggs.
  • Make sure the eggs are well-chilled so that the sausage meat will cling to them more easily.
  • Combine sausage, parsley, sage, and pepper in large bowl; mix well.
  • Press meat mixture evenly around eggs, keeping the oval shape.
  • Sprinkle eggs with flour, coating lightly all over.
  • Dip into beaten egg; then roll in bread crumbs to coat.
  • Pour oil into deep-fryer, or large heavy saucepan, to fill 1/2 full.
  • Heat to 350 on deep-fat frying thermometer.
  • Cook 1 egg at a time, for about 4-5 minutes until meat is well-browned.
  • Drain on paper towels; cool.
  • Refrigerate.
  • Slice to serve.

My friend from Scotland gave me this recipe, his favorite tailgate recipe. Now is the season for these. Good at potluck and picnics too.

Number Of Ingredients 7

12 medium hard boiled eggs
2 1/2 to 3 lb bulk breakfast sausage (i use jimmy dean's)
1/4 c flour
salt and pepper to taste
3 medium eggs, beaten
1 1/2 c bread crumbs, dry-plain or seasoned
vegetable oil for frying

Steps:

  • 1. Shell the eggs and dry with paper towels. Mix the flour, salt and pepper in a small bowl. Roll the eggs in flour mixture. With hands, mold 3 ounces of sausage around each egg, coating evenly. Dip each coated egg into the beaten egg, then roll in the bread crumbs. Deep fry the eggs in 350^ oil until golden, making certain that the sausage is completely cooked- about 3 minutes per egg. The eggs may be eaten warm, but are better cold.

6 eggs
2 c fresh bread crumbs
1 Tbsp butter
1/2 c grated cheddar cheese or cheese of your choice
1 c half and half
2 Tbsp chopped fresh chives
salt and pepper to taste

Steps:

  • 1. Butter a 2-qt. casserole dish. Place bread crumbs over the bottom of the dish.
  • 2. Place eggs in the dish, spacing them evenly. Salt and pepper to taste. DO NOT break the yolks. Sprinkle liberally with chives.
  • 3. Top with grated cheese; Pour half and half over all.
  • 4. You may also add other ingredients to your liking, but meats and vegetables should be pre-cooked.
  • 5. Bake in a preheated 400-degree oven for 20 minutes for firm eggs, 15 minutes for softer eggs. DO NOT open the oven door until the time has elapsed, or they won't souffle.
