Steps:
- Fry bacon until crisp.
- Remove from pan and fry ham in bacon drippings until cooked.
- Remove ham and add to bacon.
- Fry onions in drippings until translucent.
- Return meats to frying pan and mix with onion.
- Beat eggs; add milk and seasonings and pour over meat mixture.
- Stir and cook until eggs are done.
- Serve immediately on hot buttered toast.

- Fry bacon in a skillet until crisp; remove from skillet.
- Fry the ham over low heat in the drippings until soft, stirring occasionally.
- Remove ham and fry onions in drippings until soft and lightly browned.
- Add bacon and ham to skillet and mix with the onion.
- Beat the eggs and add milk, salt and pepper.
- Pour into skillet and cook over medium heat for about 3 minutes, stirring occasionally.
- Serve immediately on hot toast.

This is great cause if you have a hard time making the omelet work just right, it still tastes great all scrambled up.

- For each omelet whisk together 2 eggs and 1 T. water, then season.
- Over medium heat melt 1 tsp butter.
- Pour in beaten eggs.
- When cooking lift edges for uncooked egg to run underneath.
- When fairly set place ham & vegetable mixture over omelet and fold in half and let stand for 1 minute.

HAM AND SWISS OMELET

- In a small nonstick skillet, melt butter over medium-high heat. Whisk the eggs, water, salt and pepper. Add egg mixture to skillet (mixture should set immediately at edges)., As eggs set, push cooked edges toward the center, letting uncooked portion flow underneath. When the eggs are set, place ham on one side and sprinkle with cheese; fold other side over filling. Slide omelet onto a plate.

- Heat oven to 350°F. In 12-inch ovenproof skillet, heat oil over medium-high heat. Cook bell pepper and onion in oil 3 to 5 minutes, stirring frequently, until tender.
- In large bowl, beat eggs and milk with whisk; stir in salt, pepper and 1 cup of the cheese. Add bacon and ham to pepper and onion mixture in skillet, spreading evenly over bottom of skillet. Pour egg mixture into skillet; top with remaining 1/2 cup cheese.
- Bake 32 to 37 minutes or until just set and knife inserted near center comes out clean. Let stand 10 minutes before serving.

- Heat oil in a skillet over medium heat. Add ham and cook until browned and crispy, stirring frequently, about 7 minutes.
- Beat eggs with 1 teaspoon chives, salt, and pepper in a small bowl and add to skillet, tilting skillet to distribute egg evenly on bottom of skillet. Cook until omelette has set at the edges. Sprinkle Cheddar cheese on top and fold omelette in half. Flip and cook until egg is entirely set and cheese inside has melted, 30 seconds to 1 minute. Slide onto a plate and sprinkle with remaining 1 teaspoon chives.
