EASY VIDALIA ONION CASSEROLE
This is a delicious side dish to any meal, even people that do not like onions, like this recipe! also, this can be prepared a day ahead, and baked when ready.

Steps:
- Set oven to 350 degrees.
- Butter a 2-qt casserole dish.
- In a large saucepan, melt butter.
- Add onions to pan, over high heat, saute until soft, and just starting to brown, about 20-25 minutes
- Remove from heat.
- Place half of the onions in the baking dish; cover with half the crackers, and half of the Parmesan.
- Repeat to make another layer of onions, crackers and Parmesan Bake, uncovered, until cheese on top is lightly browned, about 25 mins Serve warm.
- Note: if made a day ahead, let cool, and keep refrigerated until time to reheat for serving.

SCALLOPED VADALIA ONIONS

Steps:
- 1. Sauteé onion slices in 4 tbsp. butter.
- 2. Melt 4 tbsp. butter in a separate pan; stir in flour & seasonings and cook for 1-2 minutes.
- 3. Slowly stir in milk and cheese, stirring constantly until cheese is melted and mixture thickens.
- 4. In a 1-quart baking dish, alternate layers of onions and sauce. Sprinkle top with crumbs and drizzle with 2 tablespoons melted butter.
- 5. Bake at 400° until browned - about 15-20 minutes.

- Place a large saute pan over medium heat, add 2 tablespoons extra-virgin olive oil. Add sliced Vidalia onions and saute 12 to 15 minutes until softened and lightly caramelized.
- While onions are cooking, peel and thinly slice the sweet potatoes.
- Begin layering one-third of the sweet potatoes in a buttered 12-cup baking dish. Sprinkle potatoes with salt, nutmeg, cinnamon, and freshly ground black pepper. Add half of the onion mixture, then half of the shredded English cheddar. Repeat process. Top with remaining potatoes in a spiral and then with remaining cheese.
- Mix 1 cup of heavy cream with 1 cup chicken stock in a large measuring cup and pour over potatoes. Cover with parchment and foil and put into oven for 30 minutes at 350 degrees Fahrenheit, then increase temperature to 425 degrees and cook 45 minutes more. Remove from oven and serve.

An easy and really tasty side dish for all onion lovers (like myself lol!) this recipe can easily be doubled to feed more people. I like to add in a couple tablespoons of mayonnaise for an even more creamier taste! This is SOOOOO good and can also be made with regular onions too!

- Set oven to 350 degrees.
- Butter a shallow baking dish large enough to hold the onions.
- In a medium frypan, saute the onions in butter and sugar over medium heat until soft, not browned; remove from heat, and stir in the sour cream, then season with salt and pepper to taste.
- Spoon half of the onion mixture into the prepared greased baking dish.
- Sprinkle with the Parmesan cheese.

CREAMED VIDALIA ONIONS
Steps:
- Preheat the oven to 350 degrees F. Melt 4 tablespoons butter in a stoveproof gratin dish over medium-high heat; add 4 pounds Vidalia onions (cut into wedges) and cook 5 minutes. Add a pinch each of nutmeg, cayenne, salt and black pepper, then add 3 tablespoons white wine and simmer 2 minutes. Whisk 1 1/4 cups half-and-half and 3 tablespoons flour; stir into the onions and bring to a boil. Mix 2 tablespoons melted butter, 1 cup panko (Japanese breadcrumbs), 2 tablespoons chopped chives, and salt and pepper. Sprinkle over the onion, cover with parchment paper and bake 30 minutes. Uncover and broil until golden, 5 more minutes.
CARAMELIZED VIDALIA ONION AND POTATO GRATIN WITH FRESH SAGE

- Preheat oven to 375 degrees F.
- Heat oil and butter in a large saute pan over medium-high heat. Add the onions, season with salt and pepper and cook until caramelized, about 15 to 20 minutes. Remove from the heat and stir in the sage. Let cool slightly.
- Make a layer of potato slices in a 10 by 10 by 2-inch casserole, season to taste with salt and pepper, spread 1/12 of the onion mixture over the potatoes and coat with 2 tablespoons of the cream. Repeat each step to yield 12 layers. Press down gently on the layers, place the dish on a sheet pan and bake, covered for 25 minutes. Remove cover and bake for another 20 to 25 minutes, or until the potatoes are tender and golden brown on top. Let rest 10 minutes before serving.
