Greek Style Potatoes is a simple recipe, and the closest I can get to the real thing. The best is that it can be adjusted to your taste as you bake it. I sometimes add a little more lemon. The potatoes are moist, and great with green beans and baked chicken with a little salsa and feta on top.

⅓ cup olive oil
1 ½ cups water
2 cloves garlic, finely chopped
¼ cup fresh lemon juice
1 teaspoon dried thyme
1 teaspoon dried rosemary
2 cubes chicken bouillon
ground black pepper to taste
6 potatoes, peeled and quartered

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a small bowl, mix olive oil, water, garlic, lemon juice, thyme, rosemary, bouillon cubes and pepper.
  • Arrange potatoes evenly in the bottom of a medium baking dish. Pour the olive oil mixture over the potatoes. Cover, and bake 1 1/2 to 2 hours in the preheated oven, turning occasionally, until tender but firm.

Yiayias Greek Scalloped Potatoes with Feta Cheese image

Number Of Ingredients 8

2 pounds about 1 kg potatoes peeled and cut in ¼ inch rounds (soak them in water for a few hours before)
½ cup olive oil
2 teaspoons dry oregano
8-10 ounces feta (crumbled finely)
Fresh ground pepper
Kosher salt
Juice from half of lemon
Chopped parsley

Steps:

  • Preheat oven at 400 degrees Fahrenheit (200 degrees Celsius).
  • Brush some olive oil in a casserole dish or other dish about 8 x 10 inches.
  • In a large bowl mix the potatoes with the olive oil and oregano.
  • Place one layer of potatoes, sprinkle with a bit of salt and pepper and half of the feta.
  • Place a second layer of potatoes repeating the sprinkling with feta, salt and pepper.
  • Finish with a final layer of potatoes.
  • Take about ½ cup of hot water and mix it with the lemon juice and pour it in the corner of the dish. Tilt so the water spreads in the whole bottom of the pan (the water should be enough to cover the bottom potato layer).
  • Cover pan with aluminum foil with a few slits, and bake for about 10 minutes (with the fan).
  • After 10 minutes have passed, lower the heat to 320 degrees Fahrenheit (160 Celsius) and bake for about 1 hour, checking to make sure that the potatoes are cooked all the way through (check with a fork-it should easily pierce the potatoes).
  • Remove foil and bake uncovered for about 10-15 minutes to brown. Do not over-bake there should be a bit of water left on the bottom.
  • Sprinkle with parsley and serve.

3 tablespoons all-purpose flour
1 teaspoon salt
1/4 teaspoon pepper
1-1/2 cups fat-free milk
1/2 cup shredded reduced-fat cheddar cheese
2 pounds red potatoes, peeled and thinly sliced (about 4 cups)
1 cup thinly sliced onions, divided

Steps:

  • Preheat oven to 350°. In a small saucepan, melt butter; stir in flour, salt and pepper until smooth. Gradually whisk in milk. Bring to a boil, stirring constantly; cook and stir until thickened, about 2 minutes. Remove from heat; stir in cheese until melted., Coat an 8-in. square baking dish with cooking spray. Place half of the potatoes in dish; layer with 1/2 cup onion and half of the cheese sauce. Repeat layers. , Bake, covered, 50 minutes. Uncover; bake until bubbly and potatoes are tender, 10-15 minutes longer.

3 tablespoons olive oil
3 tablespoons flour
1 1/2 cups milk
3/4-1 cup parmesan cheese
4 -5 cups red potatoes, thinly sliced
1 small onion, thinly sliced
4 -5 garlic cloves, chopped
1 1/2 ounces sun-dried tomatoes, soaked and chopped
1/4 cup artichoke heart, chopped
1 tablespoon fresh oregano, minced
1 teaspoon lemon pepper
salt

Steps:

  • Preheat oven to 350 Degrees.
  • Put Oil and Flour in a small saucepan. Heat through. Add Milk.
  • Turn heat up to med-high and bring to boil, stirring constantly.
  • Take off heat when at desired consistency. Add Parmesan. Stir.
  • In a large bowl, add Potatoes, Onion, Garlic, Tomatoes, Artichokes, Oregano, Lemon Pepper, Salt and Sauce. Stir thoroughly.
  • In a lightly oiled, shallow baking dish, add Potato mixture. Smooth evenly in dish.
  • Bake 60-75 minutes.
