- In a large Dutch oven, combine potatoes, carrots, onions, water and salt. Bring to a boil. Reduce heat; cover and cook for 10 minutes., Meanwhile, in a saucepan, melt butter. Remove from the heat; stir in flour, salt and pepper until smooth. Gradually stir in milk. Bring to a boil over medium heat, stirring constantly. Cook and stir for 2 minutes. Stir in 1 cup cheese. Reduce heat; stir until cheese is melted. Drain the vegetables; layer half in a greased 13-in. x 9-in. baking dish. Top with half of the cheese sauce. Repeat layers. Sprinkle with remaining cheese. Cover and bake at 375° for 20 minutes. Uncover and bake 10 minutes longer or until potatoes are tender.

A cookbook my husband gave me as a wedding gift included this recipe-he remembers having the dish as a child at church dinners. Now I make it whenever I need a special vegetable side. It's rich and cheesy even after reheating.

- Preheat oven to 350°. Place 1 in. of water in a large saucepan; add carrots. Bring to a boil. Reduce heat; cover and simmer 7-9 minutes or until crisp-tender. Drain., In another saucepan, saute onion in 1/4 cup butter. Stir in flour, salt, mustard, celery salt and pepper until blended. Gradually add milk. Bring to a boil; cook and stir 2 minutes or until thickened., In a greased 11x7-in. baking dish, layer half of the carrots, cheese and white sauce. Repeat layers. Melt remaining butter; toss with bread cubes. Sprinkle over top. Bake, uncovered, 35-40 minutes or until hot and bubbly.

Steps:
- Boil carrots til just tender, drain, add corn, set aside.
- In large bowl combine well the rest of ingredients except the crackers, butter and parsley.
- Add carrots and corn to cream mixture. *Folding in gently so as not to turn the carrots into mush!
- Pour into ungreased or greased, either way, glass 13x9 baking dish.
- Smooth top flat and even.
- In small microwave-safe bowl, melt butter.
- Stir in cracker crumbs and parsley.
- Sprinkle over casserole evenly.
- Bake in 350º oven for about 40-45 minutes or til bubbly!
- ENJOY!

CHEESE SCALLOPED POTATOES AND CARROTS
Steps:
- 1. In large saucepan, bring water and salt to a boil.
- 2. Add potatoes, onion and carrots; cook, covered, for about 5 minutes or until partially tender. Drain.
- 3. Make cheese sauce by melting butter in small saucepan.
- 4. Stir in flour, salt, pepper and cayenne, stirring constantly, about 1 minute.
- 5. Remove from heat; stir in milk and blend well.
- 6. Bring mixture to boil over medium heat, stirring until thick and smooth.
- 7. Add 1 cup cheese; stir until melted.
- 8. Layer half of vegetables in greased 2 1/2 quart casserole; top with half of cheese sauce.
- 9. Top with another layer of vegetables then the remaining cheese.
- 10. Bake, covered with foil, at 375 for 30 minutes.
- 11. Foil may be removed for last 10 minutes to brown top.

- In an 8-cup casserole dish place the butter and onion.
- Microwave on High for 2-3 minutes, stirring once.
- Add potato and carrot slices and stir to mix.
- Sprinkle over the flour.
- Microwave on high for 4 minutes, stirring once.
- Add milk and continue to cook on Medium/High for 6-8 minutes, or until the vegetables are tender.
- Sprinkle with cheese and cook for 2-4 mins, or until cheese melts.
- Place under a hot grill (broil) until top is brown and bubbly. (I sometimes don't do this).
- Note: You can stir in some chopped parsley if you like when you add the milk.

Thanksgiving is coming so I wanted the recipe posted because this is when my Mom made this side dish for our Thanksgiving Dinner. It was a nice complement to the dinner.

- To make cheese sauce - In small saucepan melt butter then remove from heat and stir in flour, salt, pepper, then stir in milk and blend well.
- Over medium heat, bring to just under a boil and then add the cheese and stir until thickened and smooth.
- In a greased shallow baking dish (about a 2 1/2 quart) layer half of the potatoes, onion and carrots.
- Top with half of the cheese sauce
- Add the rest of the potatoes, onion and carrots.
- Cover with the remaining cheese sauce.
- Sprinkle a little more cheddar cheese on top.
- Bake covered, at 375 degrees, with foil, for about 30 minutes or until the vegetables are fork tender.
- Take cover off and brown the top.
CHEESY SCALLOPED CARROTS
This is one of my favorite ways to prepare carrots. I love the creaminess the cheese makes with the butter and milk and the crunchy crumbs on the top.My mom would make these as a side dish with her fried chicken and country mashed potatoes. Now I make them for my family.

- 1. Preheat oven to 350^. In a saucepan, bring 2 quarts of water to a rapid boil. Add the carrots and cook until barely tender,12 minutes; drain. In a saucepan, melt butter and sauté onions over medium-high heat for 3 minutes. Whisk in flour, salt, ginger and pepper; stir while cooking for 1 minute. - Bring water to a boil in a large frying pan, add potatoes, onions,& carrots.
- Cover and cook 10 minutes.

Easy, tasty, customizable, you can do ahead of time...I could go on... If you want to mix it up, substitute a little sweet potato for some of the carrots. It is very tasty! - Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 2-quart casserole.
