- Preheat the oven to 350ºF. Spray a 2 quart baking dish with nonstick cooking spray.
- In a bowl, combine the corn, eggs, sugar, flour and salt. Stir in the cheese and the broccoli and pour into the baking dish.

A simple and fast method to make a delicious main-dish casserole or loaded cheesy scalloped potatoes side dish. No need to peel, slice, and layer potatoes when you use frozen shredded hash browns. Includes modifications to make gluten free, dairy free, or even more veggie loaded, if desired.

- Preheat the oven to 400 degrees. Mist a 9×13-inch (or other 3-quart) baking dish with nonstick cooking spray.
- In a Dutch oven, large pot, or extra-large skillet over medium-high heat, heat the coconut oil or butter until melted.
- Add the onion and frozen broccoli florets and cook until the vegetables are softened and tender, 4-5 minutes.
- Add the flour, tossing to coat the ingredients, and cook 1 minute more.
- Reduce the heat to low and add the milk, ½ to 1 cup at a time, whisking after each addition. Be patient and whisk slowly as you continue adding the milk until all is added. Stir in the salt, thyme, garlic powder, and pepper. Increase the heat to medium-high and allow the mixture to come to a boil for 1 minute. Remove from the heat.
- Add the frozen shredded potatoes, diced ham, and 1 cup of the cheese into the mixture, stirring until well incorporated.
- Transfer the mixture to the prepared baking dish and spread into an even layer. Top with the remaining ½ cup cheese.
- Bake for 30 minutes.
- After 30 minutes, turn the oven broiler to High and broil the casserole for 3-5 minutes, until the topping is browned, watching carefully so it doesn't burn.
- Garnish with sliced green onions, chives, or parsley.

My mom used to make this easy recipe every Thanksgiving when I was little. We kids could never get enough! It was our very favorite Thanksgiving vegetable. If you have children, or have some coming to visit you as guests this Thanksgiving, I guarantee that they will eat (and enjoy) this veggie dish! Even though I rarely cook with canned condensed soups, I still make this yummy broccoli casserole during the holiday season. It's fabulous with a Christmas ham and potatoes au gratin too. Mmmmmmm!

- Preheat oven to 350 degrees F (175 degrees C). Butter a 9x13 inch baking dish.
- In a medium mixing bowl, whisk together condensed soup, mayonnaise, egg and onions.
- Place frozen broccoli into a very large mixing bowl. (I like to use my large stainless steel bowl to mix this recipe thoroughly.) Break up the frozen broccoli. Using a rubber spatula, scrape soup-mayonnaise mixture on top of broccoli, and mix well. Sprinkle on cheese, and mix well. Spread mixture into prepared baking dish, and smooth top of casserole. Season with salt, pepper and paprika.
- Bake for 45 minutes to 1 hour.

- Preheat oven to 350°. In a Dutch oven, heat butter over medium-high heat. Add onion and garlic; cook and stir until tender, 2-3 minutes. Stir in flour, white pepper and salt until blended; gradually whisk in milk. Bring to a boil, stirring constantly; cook and stir until thickened, 2 minutes., Stir in 1 cup cheese. I've searched through the recipe collection and did not find anything matching this recipe. It is my daughter's favorite veggie casserole dish and is always requested for her birthday dinner and any other time she plans on coming over for dinner.

- Preheat oven to 350 degrees.
- Parboil the broccoli florets until still crisp-tender and then drain well.
- Place the prepared broccoli in a 9x13 inch baking dish (or at least a 3 quart casserole dish).
- In a small bowl or 2 cup measure, mix together the soup, milk and 1/2 cup shredded cheese.
- Pour soup mixture over the broccoli and spread evenly.
- *Optional* Sprinkle more shredded cheese over the top of the soup mixture.
- Melt butter in a small saucepan then add breadcrumbs and mix together. The breadcrumbs should be lightly coated - use an amount that fits your needs.
- Spread breadcrumb mixture over the top of the casserole to cover.
- Bake for 30 minutes in the 350 degree oven (uncovered).
- I have prepared this dish the day before and covered it well and then actually baked it the next day and it does fine.
- You can also add cubed cooked chicken to this recipe (about 2 cups). Place the chicken over the broccoli layer and then pour the soup mixture over that. I usually make a bit more soup mixture when adding the chicken. Makes a great one dish meal using leftover ingredients.

- In a saucepan bring water to a boil. Add rice, reduce heat, cover and simmer for 20 minutes.
- Preheat oven to 400 degrees F (200 degrees C).
- While the rice is cooking, place frozen broccoli in large skillet.
