1/3 cup sugar
2 tablespoons cornstarch
1/2 to 1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
2 tablespoons butter, cubed

Steps:

  • Place apples in a 2-1/2-qt. microwave-safe bowl. Combine the sugar, cornstarch, cinnamon and nutmeg; sprinkle over apples and toss to coat. Dot with butter. Cover and microwave on high for 11-12 minutes or until apples are tender, stirring every 5 minutes.

10 cups thinly sliced peeled Golden Delicious apples (about 8)
1 cup sugar
1/2 teaspoon ground cinnamon
1/2 teaspoon ground cloves
6 tablespoons butter, divided
2 cups soft bread crumbs (about 4 slices)

Steps:

  • In a large bowl, combine the apples, sugar, cinnamon and cloves. Transfer to a greased 13x9-in. baking dish. Dot with 2 tablespoons butter. Bake, uncovered, at 325° for 25 minutes or until apples are crisp-tender. , Meanwhile, in a small skillet, melt remaining butter. Add bread crumbs; cook and stir for 3-5 minutes or until crispy and golden brown. Sprinkle over apple mixture. , Bake 10-15 minutes longer or until apples are tender. Serve warm.

I used to waitress at a Stouffer's in Columbus, Ohio where they served this. It was so good, I decided to create my own version and it's been a part of our Thanksgiving and Christmas meals for over 25 years now!

1 (30 ounce) can sweet potatoes, drained, save liquid, and cut into bite sized chunks
2 medium tart apples, peeled, cored and cut into thick slices (I usually use Granny Smith)
1/2 cup packed brown sugar
1/4 cup butter
1/4 teaspoon nutmeg
1/4 teaspoon cinnamon
1 tablespoon cornstarch

Steps:

  • In a 1 quart buttered (or use Pam) casserole, alternate layers of potatoes and apples.
  • In a medium saucepan, melt butter, stir in brown sugar and spices.
  • Add half of reserved sweet potato liquid and bring to a boil.
  • Dissolve cornstarch in remaining potato liquid and add to pan.
  • Lower heat and simmer while stirring until thickened.
  • Pour over layered potatoes and apples until top layer is almost covered.
  • Bake, covered, at 350°F for 1 hour.
  • You may uncover during the last 15-20 minutes of baking time if the sauce needs thickening.
  • This freezes well.

4 small sweet potatoes, peeled and cooked
1/3 cup seedless raisin
1/2 cup light brown sugar, firmly packed
1 dash ground nutmeg
3 tablespoons currant jelly

  • Divide apple slices into two equal batches.

6 sweet potatoes
1 ½ cups peeled, cored and sliced apples
½ cup brown sugar
½ teaspoon salt
1 teaspoon ground mace
¼ cup butter

Steps:

  • Place sweet potatoes in a large pot with enough water to cover, and bring to a boil. Boil until tender, then cool, peel, and cut into 1/4 inch slices.
  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking dish.
  • Arrange half the sweet potatoes in the bottom of the prepared baking dish. Layer half of the apples over the sweet potatoes. In a small bowl, mix together brown sugar, salt, and mace, then sprinkle half of the mixture over the apple layer. Dot with half the butter. Repeat layers of sweet potato and apple, and top with remaining brown sugar mixture and butter.
  • Bake in the preheated oven for 50 minutes, until apples are tender and top is golden brown.

4 -6 large apples (Golden Delicious prefered)
1/2 cup water
1 teaspoon cinnamon
1/4 teaspoon allspice
2 tablespoons Splenda sugar substitute
1 tablespoon Splenda brown sugar blend
1 1/2 teaspoons lemon juice
1 tablespoon fine breadcrumbs
1 tablespoon margarine
1 dash nutmeg

Steps:

  • Preheat oven to 400 degrees Fahrenheit.
  • Peel, core and slice apples, put apples in a buttered shallow baking dish.
  • Add water.
  • Mix sugars, cinnamon and allspice.
  • Sprinkle over apples along with lemon juice, bread crumbs and nutmeg.
  • Dot with margarine.

The restaurant 'Mad Apples' is sadly no longer in business and if the rest of their food was as good as this simple dish it is a great loss. Please note: This is NOT diet fare :) Oh, and the recipe is posted exactly as written in the magazine. I like to add very thinly sliced onion to the mix.

1 1/2-2 cups heavy cream
1/2 cup freshly grated parmesan cheese
