1 tablespoon olive oil
1 cup finely chopped onion
2 pounds sea scallops
1/2 cup chopped fresh chives
2 tablespoons chopped fresh parsley
2 tablespoons all purpose flour
1 tablespoon minced peeled fresh ginger
1 tablespoon fresh lime juice
1 large egg, beaten to blend
2 teaspoons salt
1 teaspoon grated lime peel
3/4 teaspoon ground black pepper
2 tablespoons peanut oil
Cilantro-Lime Mayonnaise
Buttered New Potatoes with Chives
Whole fresh chives
Fresh cilantro sprigs

Steps:

  • Heat olive oil in medium nonstick skillet over medium heat. Add onion and sauté until tender, about 8 minutes. Cool. Place scallops in processor. Using on/off turns, coarsely chop scallops. Transfer scallops to large bowl. Stir in onion, chopped chives, parsley, flour, ginger, lime juice, egg, salt, lime peel, and pepper. Form scallop mixture into eight 1/2-inch-thick patties, each about 3 to 3 1/2 inches in diameter. Place scallop cakes on baking sheet. Cover and chill 1 hour. (Can be prepared 6 hours ahead. Keep chilled.)
  • Preheat oven to 450°F. Heat peanut oil in large nonstick skillet over medium-high heat. Working in batches, add scallop cakes to skillet and cook until browned, about 2 minutes per side. Transfer cakes to baking sheet. Place in oven and bake until cooked through, about 7 minutes.
  • Place 2 scallop cakes on each of 4 plates. Top with Cilantro-Lime Mayonnaise. Place Buttered New Potatoes with Chives alongside. Garnish scallop cakes with whole chives and cilantro sprigs.

This scrumptious appetizer can be prepared ahead of time. The cakes and aioli sauce can both be made the day before, and you can cook the cakes just before serving. Not only does this simplify last-minute prep, it allows the flavors to blend, making the dish even more yummy. 1 large egg, beaten
1/2 cup seasoned bread crumbs
2 tablespoons finely chopped sweet red pepper
2 tablespoons finely chopped leek (white portion only)
4 garlic cloves, minced
2 tablespoons honey mustard
1 tablespoon minced fresh thyme
1 tablespoon chopped fennel fronds
2 teaspoons salt-free lemon-pepper seasoning
1-1/2 teaspoons Creole seasoning
1 pound sea scallops
COATING:
1 cup panko bread crumbs
4 teaspoons dried parsley flakes
2 teaspoons coarsely ground pepper
SPICY HONEY AIOLI:
1 cup mayonnaise
1/3 cup honey mustard
1 tablespoon lemon juice
1 tablespoon unsweetened apple juice
1 teaspoon paprika
1 teaspoon Creole seasoning
1/2 teaspoon Cajun seasoning
1/3 cup canola oil

Steps:

  • In a large bowl, combine the first 10 ingredients. Place scallops in a food processor; cover and pulse until just pureed. Fold into egg mixture., In a shallow bowl, combine the bread crumbs, parsley and pepper. Drop 2 tablespoons scallop mixture into crumb mixture. Gently coat and shape into a 1/2-in.-thick patty. Repeat with remaining mixture. Cover and refrigerate for at least 30 minutes. , Meanwhile, in a small bowl, whisk the mayonnaise, mustard, lemon juice, apple juice and seasonings. Cover and refrigerate until serving., Heat a large cast-iron or other heavy skillet over medium heat. Cook patties in oil in batches until golden brown, 2-3 minutes on each side. Drain on paper towels. Serve with aioli. If desired, top with additional fennel fronds.

1 tablespoon olive oil
1 cup onion, finely chopped
2 lbs sea scallops
1/2 cup chives, chopped
2 tablespoons parsley, chopped
2 tablespoons all-purpose flour

Steps:

  • Heat olive oil in a non stick skillet on medium heat.
  • Add the onion and cook until tender, but not brown. Let cool.
  • In a food processor, coarsely chop scallops -- do not over process.
  • Place chopped scallops in a large bowl and add onion, chives, parsley, flour, ginger, lime juice, egg, salt, lime peel and pepper.
  • Form into 8 1/2 inch thick patties, about 3 inches in diameter.
  • Place patties on plate or baking sheet and chill for 1-6 hours.

1 1/2 pounds fresh sea scallops, cut into 1/4-inch pieces
3/4 cup mayonnaise
3 large egg yolks
3 green onions, chopped
1/3 cup chopped fresh cilantro
1 1/2 tablespoons dry mustard
1 1/2 tablespoons curry powder
3/4 teaspoon salt
1/2 teaspoon ground black pepper
3 1/2 cups panko (Japanese breadcrumbs)*
Vegetable oil

Steps:

  • Mix first 9 ingredients and 1 1/2 cups panko in large bowl to blend. Cover mixture and refrigerate 1 hour.
  • Place remaining 2 cups panko on large plate. Form scallop mixture into balls, using 1 heaping tablespoon for each. Coat in panko, flattening slightly.
  • Heat enough vegetable oil in heavy large skillet over medium-high heat to come 1/4 inch up sides of pan. Working in batches, sauté scallop cakes until golden and cooked through, about 1 1/2 minutes per side. Transfer scallop cakes to paper towels to drain. (Can be made 4 hours ahead. Cool, then cover and refrigerate. Reheat on baking sheet in 350°F oven 8 minutes.) Transfer scallop cakes to platter.
  • *Panko (Japanese breadcrumbs) can be found at Asian markets and in the Asian foods section of some supermarkets.

THAI-STYLE SEA SCALLOP CAKES

This version of the Thai appetizer tod mun is not completely authentic, but it is pretty faithful to the flavors of the original. Makrut lime leaf provides the unique floral, citrusy flavor. The lime leaf is not absolutely necessary in this recipe, but it's a bit of a pity to leave it out. The leaves are available, if not from your local Asian grocery, then online. Most tod mun recipes call for any white-fleshed fish, but this recipe calls for sea scallops, which give the cakes a wonderful texture.

1/4 cup brown sugar
2 or 3 tiny Thai chiles, red or green, thinly sliced

2 teaspoons fish sauce
1 teaspoon grated ginger
1 pound sea scallops, or 1/2 pound sea scallops plus 1/2 pound halibut, cod or other firm white-fleshed fish
1/2 teaspoon salt
1/2 teaspoon black or white pepper
2 teaspoons fish sauce
2 small garlic cloves, smashed to a paste with a little salt
1 (2-inch) piece ginger, peeled and grated
6 scallions, thinly sliced
2 teaspoons finely chopped serrano or jalapeño chile, or to taste
1/2 cup cilantro leaves and tender stems, roughly chopped
4 makrut lime leaves, slivered thinly
1 small egg, lightly beaten
Peanut or coconut oil for frying

Steps:

  • Make the dipping sauce: Combine all ingredients in a small bowl.
  • Make the sea scallop cakes: Put the sea scallops in the bowl of a food processor. Add the salt, pepper, fish sauce, garlic and ginger. Process to a fine-ground paste, about 1 minute.
  • Add the scallions, chile, cilantro, makrut lime leaves and egg. Pulse a few times to combine well. The paste can be transferred to another container and refrigerated until ready to cook, up to a day ahead.
  • Pour peanut or coconut oil to a depth of 1/4 inch into a wide skillet and turn the heat to medium high. When the oil is hot, carefully add the fish cake mixture in large spoonfuls. Fry in batches if necessary to avoid crowding. Adjust the heat to allow the cakes to brown gently for about 3 minutes, then flip them. Flatten them gently with a spatula and cook for 2 to 3 more minutes. Drain on absorbent paper, then serve hot, with the dipping sauce.

1/4 cup fresh lemon juice

36 asparagus spears, trimmed to 6 in lengths
4 tablespoons unsalted butter
2/3 cup shallot, plus
3 tablespoons shallots, chopped
1 1/2 lbs uncooked medium shrimp, peeled, deveined, chopped
1/2 lb sea scallops, chopped
1 1/2 cups fresh white breadcrumbs
1 cup red bell pepper, diced
2 eggs, beaten to blend
1/4 cup chopped fresh chives or 1/4 cup green onion

Steps:

  • Whisk olive oil, chives, lemon juice and shallots in bowl to blend (can be prepared 4 hours ahead. let stand at room temperature).
  • Shrimp cakes: Cook asparagus in large pot of boiling salted water until crisp tender, about 3 minutes. Drain. Refresh under cold water and drain well.
  • Finely dice 4 asparagus spears. Transfer to large bowl. Reserve remaining asparagus for garnish.
  • Melt 2 tablespoons butter in heavy small skillet over medium heat. Add 2/3 cup shallots and saute 2 minutes. Add shallots to chopped asparagus. Mix in shrimp, scallops, breakcrumbs, bell pepers, eggs and chives. Season generously with salt and pepper. Form shrimp mixture into 8 rounds 3 1/2 to 4 inches. Place on baking sheet (can be prepared 2 hours ahead. cover and refrigerate).
  • Melt 2 tablespoons butter in heavy large nonstick skillet over medium heat. Add shrimp cakes and cook in batches until golden brown and cooked through, about 5 minutes per side. Place 1 shrimp cake in center of each plate. Arrange 4 asparagus spears around each shrimp cake, overlapping at corners to form box. Spoon some vinaigrette over. Serve, passing remaining vinaigrette.
  • Note: I add a little lime juice, garlic and ginger and don't use salt.

1 lb. shrimp, peeled
1 lb. scallops
2 cloves garlic, peeled
3 scallions, tops removed
1/4 lb. green beans, ends removed
1 jalapeno pepper, seeded
2 eggs
1 t. ground cumin
1/2 t. good curry powder
1/2 t. Thai chli sauce (or more if you like it spicier)
1/4 c. Thai fish sauce
4 T. cornstrach
3/4 t. sugar
Good grind black pepper
3 T. fresh coriander leaf or basil leaf
3 c. peanut oil for frying
Cucumber relish:
1 cucumber, cut in half lengthwise and seeded
1 t. salt
2 T. white vinegar
2 T. sugar
3 T. chopped onion or scallion
1 jalapeno pepper, seeded and thinly sliced

Steps:

  • Preparation of the cakes: Place the srimp, scallops, garlic, scallions, and green beans in the bowl of a food processor. Pulse to grind into a coarse paste. Add the jalapeno, eggs, cumin, curry, chili sauce, fish sauce, cornstrach, sugar, pepper and coriander leaf. Process utnil the ingredients are blended. Form the mixture into 3 inch patties and place on a platter covered with waxed or parchment paper. Cover and refrigerate for 30 minutes. The patties can be form up to a day before frying. Pour one inch of oil into a heavy skillet. Heat to 365 degrees. Place no more than 5 paties in the pan (do not let touch or overcrowd). Cook the patties utnil they are golden brown, about 3 minutes per side. Remove to a paper towel lined platter. Serve hot with the cucumber relish and garnish with coriander leaves. Cucumber Relish Cut the cucumber into small pieces and place in a bowl. Sprinkle with the salt and let sit at room temperature for 10 minutes. Drain off the liquid. Add the remaining ingredients and toss. Add salt as needed. The relish can be made up to 2 days before serving.

Number Of Ingredients 15

1/2 cup thinly sliced white onion
1 cup fresh orange juice
1 cup fresh lime juice
1 fresh jalapeño chile, sliced, including seeds
2 tablespoons kosher salt
24 medium sea scallops (1 1/4 pound), tough muscles removed from sides if necessary and scallops halved horizontally
6 ounce black (squid ink) angel's hair pasta
1 teaspoon extra-virgin olive oil
About 1 cup olive or vegetable oil
1/2 cup minced white onion
1/2 cup chopped fresh cilantro
1/2 cup finely chopped fresh tomatillos
1/2 cup finely chopped tomato
1 tablespoon minced fresh jalapeño chile, including seeds
1 teaspoon kosher salt

Steps:

  • Combine onion, juices, jalapeño, and salt in a bowl.
  • Poach scallops in 4 quarts of simmering salted water, stirring occasionally, until just cooked through (scallops should be opaque with centers slightly pink), about 1 minute. Drain scallops and gently toss with marinade. Marinate scallops, covered and chilled, 3 hours.
  • Boil pasta in a large pot of boiling salted water until just cooked through, 1 to 2 minutes. Reserve 1 cup cooking water, then drain pasta in a colander. Rinse briefly under cold running water to stop cooking (don't cool pasta completely) and drain well. Toss pasta with extra-virgin olive oil.
  • Heat 1/4 inch olive or vegetable oil in a 10-inch nonstick skillet over moderate heat until hot but not smoking. Form cakes by dropping a few strands of loosely squiggled pasta into a 1-tablespoon measure to fill it and inverting tablespoon into oil, flattening cake slightly if necessary. (If strands in bowl become too sticky to handle, stir in a little reserved pasta water, 1 teaspoon at a time. You need some starch from pasta to hold cake together, but you don't want strands to become wet.) Cook cakes, 4 at a time, until crisp, 45 seconds to 1 minute per side, and drain on paper towels. Season cakes with salt.
  • Soak onion in cold water to cover 20 minutes, then drain and rinse well. Stir together onion, cilantro, tomatillos, tomato, jalapeño, and salt and chill, covered, until ready to use.
  • Lift scallops out of marinade and put 1 on top of each pasta cake. Top with salsa and serve immediately.

Steps:

  • Combine all ingredients in a medium bowl. With slightly moistened hands, form the mixture into 8 cakes, each about 1/2 inch thick.
  • Coat a large nonstick skillet lightly with oil. Heat over medium-low heat until hot. Add as many fish cakes as will comfortably fit in pan. Cook until nicely browned on both sides and scallops are cooked through, about 4 minutes per side.

This recipe actually started out as a homemade ravioli filling. I had a bunch left over after I made the ravioli, so I added a few things and came up with this. This is just a product of my imagination, so I'm interested to find out what you think. My BF devoured them the first time I made them, and when I served them at a small dinner party, they seemed to go over very well.

1/2 lb sea scallops
2 shallots, minced
1/2 cup fresh parsley, chopped
1/2 lb fresh mozzarella cheese
1 teaspoon Old Bay Seasoning
1 teaspoon oregano
1 teaspoon thyme
salt
black pepper
2 tablespoons butter
1/2 pint grape tomatoes
2 tablespoons balsamic vinegar
2 tablespoons extra virgin olive oil

Steps:

  • Rinse the scallops in fresh water and dry, then chop the scallops.
  • The pieces should be about the size of a kernel of corn.
  • Chop the mozzarella into the same sized pieces as the scallops.
  • Combine scallops, mozzarella, shallots, parsley, Old Bay, oregano, thyme and salt and pepper in a bowl.
  • Cover and chill for at least an hour.
  • Shortly before cooking, rinse the tomatoes and half length-wise.
  • Toss with vinegar and olive oil.
  • Set aside.
  • Once chilled, you will need to work quickly.
  • Form mixture into two inch balls.
  • Heat a non-stick pan over med-high heat.
  • Add butter.
  • As soon as the butter has melted and started to bubble, add the scallop balls to the pan.
  • Press down on each ball to form the patty shape.
  • The only thing holding the patties together is the melted cheese, so you will not be able to turn the patty until the cheese has melted and formed a crispy crust on the bottom.
  • So, cook until the patty is dark brown and you can turn it easily.
  • If the butter starts to burn, turn the heat down just a little bit and add a little canola oil (which has a higher burn point).
  • Once the patties are brown on both sides, remove from pan and drain on a paper towel.
  • The cheese should be crispy on both sides and should not stick.
  • Serve topped with the tomato mixture.
  • I like to serve them as a first course: two patties with a few tomato halves on top of each one.

2 TSP Fish Sauce
1 TSP grated ginger
Fish Cakes
1 pound Scallops or 1/2 pound scallops and 1/2 pound firm white fish
1/2 TSP sea salt
1/2 TSP white pepper
2 TSP fish sauce
2 cloves garlic mashed
2 inch piece of ginger grated
6 scallions chopped
Bird Chiles to taste chopped finely
1/2 cup chopped Cilantro
4 Kaffir leaves chopped
1 small egg

  • To make dipping sauce, combine all ingredients in a small bowl Put fish and or Scallops in food processor with salt, pepper,fish sauce,and ginger. Process to a fin-ground paste. Add scallions, chiles, cilantro, kaffir lime leaves and egg. pulse a few times to mix well. Heat pan with a 1/4 inch of peanut oil and drop spoonfuls of fish batter into oil and cook until browned on each side about 3 minutes on first side then flip for 2 minutes more. Drain on paper towles and serve warm with dipping sauce

1/2 pound uncooked sea scallops, finely chopped
1 1/2 cup bread crumbs
2 eggs, lightly beaten
1/2 cup minced red pepper
2 scallions, finely chopped
salt and pepper to taste
2 tablespoons chopped fresh tarragon or 1 teaspoon dried

Steps:

  • Melt 1/4 cup butter, add shallots, and saute for 2 minutes. Mix in shrimp, scallops, bread crumbs, eggs, red pepper, scallions, salt, pepper, and tarragon. Form into eight 4-inch rounds. In a nonstick skillet, melt 2 tablespoons butter over medium heat. Add cakes in batches and cook on both sides until golden, about 5 minutes per side. Add butter to pan as needed for cooking. Serve immediately.

4 Tbs. peanut or canola oil; more as needed for frying
2 cups stemmed and sliced (1/4-inch-thick) shiitake mushrooms (from about two 3-1/2-oz. packages)
1/2 lb. shrimp, any size, peeled and deveined
3/4 lb. fresh dry-packed sea scallops
2 Tbs. mirin (sweetened rice wine)
2 Tbs. roughly chopped fresh cilantro, plus 8 cilantro leaves
2 Tbs. thinly sliced scallions (both white and green parts; about 2 scallions)
Gingered Soy Sauce

Steps:

  • Grind the star anise in a clean electric coffee grinder.
  • Heat 2 Tbs. of the oil in a large nonstick skillet over medium-high heat. Add the shiitakes and sauté, stirring as needed, until cooked through, golden, and slightly crisp around the edges, 5 to 7 min. Transfer to a cutting board, let cool, and then coarsely chop.
  • Coarsely chop the shrimp and transfer to a large bowl. Put the scallops in a food processor and purée until smooth. Add the scallops to the bowl of shrimp. Add 1 tsp. of the star anise, along with the shiitakes, mirin, cilantro, scallions, sesame oil, and 1/2 tsp. kosher salt. Combine well using a rubber spatula-don't worry about overmixing. Cover the bowl and chill for 30 min. or more. Discard any remaining ground star anise or save for another use.
  • Turn the mixture out onto a baking sheet and portion it into eight equal mounds. With wet hands, shape each mound into a flattened cake about 2-1/2 inches wide and 1/2 inch thick. Press a cilantro leaf, nice side up, onto the top of each cake.
  • Heat the oven to 200°F. Heat 1 Tbs. of the oil in a large nonstick skillet over medium heat. Using a rubber spatula, transfer four of the cakes to the pan with the cilantro-leaf side down. Cook until lightly browned on both sides and cooked through, turning once or twice with a spatula, 5 to 6 min. total cooking time. Transfer to a plate, cover, and keep warm in the oven. Wipe the skillet clean and then cook the remaining cakes as above, using the remaining 1 Tbs. oil.
  • Serve hot, with ramekins of the Gingered Soy Sauce for dipping.

8 oz (250 g) fresh scallops drained and chopped
2 green onions finely chopped
1/2 cup (125 mL) Mild Canadian Cheddar or Medium Canadian Cheddar shredded
1/4 cup (60 mL) all-purpose flour
2 eggs beaten separately
3/4 cup (180 mL) all-purpose flour
1/2 cup (125 mL) dry bread crumbs
2 tbsp (30 mL) olive oil
2 tbsp (30 mL) butter
Fresh herb salad
1 1/2 cups (375 mL) fresh flat-leaf parsley trimmed
1 cup (250 mL) arugula
3/4 cup (180 mL) celery leaves
1/4 cup (60 mL) fresh chives
3 tbsp (45 mL) olive oil
1 1/2 tbsp (22 mL) lemon juice
Salt and freshly ground pepper to taste

Steps:

  • In a bowl
  • combine scallops
  • green onions and cheese. Sprinkle with flour and add 1 beaten egg. Salt and pepper to taste and refrigerate for several minutes.
  • Fresh Herb Salad:
  • Finely chop parsley
  • arugula
  • celery leaves and chives; place in a bowl.
  • Shape scallop mixture into 8 cakes. Coat each cake with flour
  • dip quickly into second beaten egg and then in breadcrumbs. In a large skillet
  • heat oil and melt butter over medium heat. Cook cakes for about 2
  • 3 minutes per side until golden.
  • Sprinkle Fresh Herb Salad with oil and lemon juice
  • salt and pepper to taste
  • toss and serve immediately.
