This is a copycat version of sazon, which I always use in Puerto Rican dishes. Other versions of this recipe call for only paprika or turmeric. I find adding both achieves the reddish-orange color without affecting flavor. The salt in this recipe can be reduced or omitted as many dishes call for additional salt. I prefer to omit and just add salt as needed to dishes while I'm cooking. I hope you will enjoy it!

Cumin-heavy sazón is among the most commonly used spice blends in Puerto Rican cooking, and is also popular throughout Latin America. This seasoning is an incredible cheat, and is typically found in the international section of most supermarkets. Commercial brands are flavor bombs pumped with monosodium glutamate - MSG - that can make almost anything taste better. While I'm not MSG-phobic, I do prefer making my own blends to control both the flavor and the salt content. This is my take on sazón, minus the MSG, and with turmeric added along with the standard annatto to imbue dishes with a golden hue. Adaptation is encouraged based on preference, and if you can't find ground annatto then sweet paprika is a perfect substitute. It will keep in an air-tight container for years.

1 green pepper, diced

2 minced garlic cloves
1 vegetable bouillon cubes (optional) or 1 chicken bouillon (optional)

1/3 bunch chopped cilantro
1 tablespoon olive oil

  • Start the rice cooking if you want to serve it over rice.

4 tablespoons grapeseed or other neutral oil
1 pound okra, stem ends trimmed, halved lengthwise
Kosher salt
1/2 small yellow onion, finely chopped (1/3 cup)
2 garlic cloves, sliced
1 jalapeño, thinly sliced
1 pound large shrimp, shelled and deveined
2 teaspoons sazón, homemade or store-bought
1/4 cup chopped fresh cilantro
1 lime, halved

Steps:

  • Heat 1 tablespoon oil in a large skillet over medium-high. Add half of the okra, cut sides down, and cook without stirring until golden brown, about 3 minutes. Sprinkle with 1/2 teaspoon salt, toss and cook until tender, about 1 minute more. Transfer to a plate. Heat 1 tablespoon oil in the skillet and repeat the cooking process with remaining okra and an additional 1/2 teaspoon salt.
  • Lower the heat to medium and heat the remaining 2 tablespoons oil in the skillet (no need to wash). Add the onion and cook, stirring, until softened, about 1 minute. Add the garlic and jalapeño and cook until fragrant, about 1 minute. Add the shrimp and sprinkle with the sazón. Cook, stirring occasionally, until the shrimp are just cooked through and the sazón toasts and becomes fragrant, about 3 minutes.
  • Return the okra to the pan of shrimp and stir just to combine. Remove from the heat, add the cilantro and finish with several squeezes of lime.

SAZON RICE

Goes great with Mexican food. I can't remember where I picked this recipe up, but originally I found it on the internet. Unfortunately, I didn't have the url on the printout I had laying around. Originally it called for 1 packet of Sazon seasoning, but I used dry Sazon instead. If you don't have that, you might try using some Mexican seasoning blend with perhaps a little bit of annato.

12 ounces water or 12 ounces broth
1/4 cup stuffed green olive, sliced if desired
1 -2 tablespoon olive brine, to taste
1/3 cup cooked garbanzo beans

1/2 teaspoon salt
1/4 teaspoon pepper

1/4 cup chopped onion
3 tablespoons chopped green peppers
3 tablespoons chopped sweet red peppers
3 tablespoons chopped green onions
3 tablespoons tomato paste
4 teaspoons chopped fresh parsley
4 teaspoons chopped fresh coriander
4 teaspoons olive oil or 4 teaspoons vegetable oil
4 teaspoons white vinegar
1/2 teaspoon dried oregano
1/2 teaspoon sweet paprika
1/4 teaspoon salt
1/8 teaspoon hot sauce
1 (2 ounce) jar diced pimentos, drained
1 garlic clove, minced

Steps:

  • Combine all ingredients in a blender; process until smooth.
  • Pour into a saucepan; bring to a boil.
  • Reduce heat, and simmer, stirring constantly, 5 minutes or until thoroughly heated.
  • Remove from heat; cool.
  • Cover and chill.
  • Yield: about 1 cup.

SHRIMP SAZON

2 pounds shrimp cleaned
1 tsp garlic powder
2 tsp paprika
freshly ground black pepper to taste
1/2 cup olive oil
1 packet sazon
8 cloves garlic roughly chopped
1/4 cup parsley chopped
squeeze of 1/2 lemon

Steps:

  • 1. Combine the shrimp, garlic powder, paprika, and black pepper. Place in frig to marinade for at least an hour. 2. In a large skillet, heat the olive oil over medium high heat. Add the sazon and stir it quickly into the oil. Then immediately add the marinaded shrimp. Sprinkle the chopped garlic over the shrimp. 3. Cook the shrimp on one side for about 4-5 minutes, allowing the garlic to get into the spaces in between. 4. Turn the shrimp and allow to cook for 4-5 min on the other side or until done. 5. Sprinkle on the chopped parsley and lemon juice. Stir the shrimp gently and allow to cook for one minute more. Then serve.

SAZON DRY SPICE MIX

Sazone without MSG. Toasting the peppercorns and cumin enhances and intensifies the flavors. Adjust amounts to taste. It's a good alternative to seasoning salt and can be used as a rub. If using in rice dishes, frajitas, burritos, vegetables, enchiladas, beans, etc., add the sazon a pinch at a time to make sure the food doesn't become too salty. The optionals are not usual to sazon, but for me--the unknowing, it ups the anty.

1 1/2 Tbsp mexican oregano flakes

1 1/4 Tbsp cumin seeds, toasted
1 Tbsp granulated garlic or garlic powder (not garlic salt)
