This was made by Naomi Crisante on James Reeson's Alive and Cooking. I did a savoury version using a herb and garlic cream cheese. It was also suggested you could do a sweet version using fruit filled cheeses. These creams cheeses come in 200 gram round packs in Australia and for this recipe a South Cape brand of Savoury Cream Cheese was used. Suggested you serve with a tomato salsa.

200 g cream cheese (savoury or sweet)
80 g butter (melted)
6 sheets phyllo pastry (cut in half lengthways)
2 teaspoons poppy seeds (or sesame seeds)

Steps:

  • Preheat oven to 220°C.
  • Cut savoury cream cheese into 12 wedges and then roll each into a log shape.
  • Working with one piece of filo at a time (keep rest covered to prevent drying out) brush with butter and then place a cheese log on the short side and foll up into a cigar shape, folding in the edges to enclose the cheese.
  • Brush with butter and place on a baking tray, proceed and make the other 11.
  • Sprinkle with seeds of choice and bake at 220C to 8 to 10 minutes or until golden.
  • Serve with a tomato salsa.

6 sheets fresh phyllo pastry or frozen, thawed
4 tablespoons unsalted butter, melted, slightly cooled
1 large egg white, room temperature, lightly beaten
1/3 cup mixed black and white sesame seeds, divided
1/2 teaspoon smoked paprika, divided
Kosher salt, freshly ground pepper
4 ounces Gruyère, finely grated (about 2 cups), divided

Steps:

  • Preheat oven to 375°F. Place a sheet of phyllo on a parchment-lined baking sheet. Brush lightly with butter and top with a second sheet of phyllo, pressing gently to adhere. Brush with butter and top with another sheet, pressing gently again; brush with egg white. Sprinkle half of sesame seeds and half of paprika over phyllo; season with salt and pepper. Scatter half of Gruyère over top. Using a pizza cutter or sharp knife, cut phyllo into 2" squares. Bake crackers until golden brown, 8-10 minutes. Let cool on baking sheet 3 minutes before serving. Repeat with remaining phyllo, butter, egg white, sesame seeds, paprika, Gruyère, and more salt and pepper, building on another parchment-lined baking sheet.

  • Crackers can be made 8 hours ahead. Store airtight at room temperature.
