SHIRLEY'S VEGETABLE MEDLEY JELLO SALAD
We always used to have this at the holidays at our house when I was growing up...I really enjoy it alot, and so does my family...Try it, it's a great addition to any meal, especially Thanksgiving and Christmas...Enjoy!

Steps:
- Cut veggies and nuts and shred, slice and chop as directed. Set aside.
- Make jello according to pkg. directions, and put in a jello mold or a glass dish, and put into refrigerator. Watch jello carefully.
- When jello starts to gel, add the veggies and walnuts, mixing carefully to distribute throughout jello.
- Let jello finish setting.
- Cut into slices or squares.
- Serve atop a lettuce leaf, or by itself with your favorite meal.

MOLDED JELL-O SALAD

- In a bowl, combine the dissolved Jell-O, cold water, mayonnaise, and vinegar and mix thoroughly. Transfer to the freezer or refrigerator and allow it to chill well. When it begins to get firm, remove it from the freezer or refrigerator and beat with an electric beater until fluffy. Add cottage cheese and chopped vegetables. Before you put the mixture into a mold, decorate the bottom of the mold with olives or parsley so that when you unmold it there will be a pretty design on top.
- Another variation is to forego the vinegar and add fruit with the cottage cheese. Just be sure that the salad is firm (overnight in the refrigerator or a few hours in the freezer), otherwise it will be messy when you unmold it.
MOLDED VEGETABLE SALAD
I FOUND this recipe years ago in an old cookbook. By using different colored gelatins, it blends in well with special holiday dinners. Of course, I use lime for our St. Patrick's Day celebration. - In a bowl, dissolve gelatin and salt if desired in boiling water. Add the cold water and vinegar. Chill until partially set. Fold in remaining ingredients. Pour into a 4-cup mold that has been lightly coated with cooking spray. Chill until firm. Unmold onto a serving platter.

- In a large bowl, stir together the lemon gelatin mix, lime gelatin mix, and boiling water until gelatin has dissolved. Stir in the apple cider vinegar, cover, and refrigerate for about 1 hour to thicken.
- When the gelatin is thick but not set, stir in the celery, olives, and carrot so they are evenly dispersed throughout. Pour into a 1 quart mold and refrigerate until firm, at least 3 hours. To serve, unmold onto a plate.

KELLY'S HAM JELL-O® SALAD
This different Jell-O® salad, made with cabbage, chopped ham, mayonnaise, and spicy brown mustard, has a taste that's more savory than sweet.

- Dissolve lemon gelatin in boiling water in a large bowl. Pour reserved pineapple juice and white wine vinegar into a measuring cup; add enough cold water to equal 1 cup. Stir water-juice mixture into gelatin mixture; refrigerate until cold and beginning to set, about 30 minutes.
- Stir mayonnaise and spicy brown mustard together in a bowl; whisk mayonnaise mixture into cooled lemon gelatin mixture until smooth. Gently fold cabbage, celery, ham, and reserved pineapple into gelatin. Transfer mixture into a ring-shaped gelatin mold.
- Chill in refrigerator until firmly set, about 4 hours. To serve, dip gelatin mold into hot water to loosen the sides; place a plate on top of the mold, invert, and gently lift the mold from the salad.
