VEGETARIAN EGGPLANT ROLLS WITH SAVORY TOMATO SAUCE AND FRESH RICOTTA CHEESE

- Preheat oven to 375 degrees. Preheat a grill pan over medium-high heat.
- Stir olive oil and vinegar together in a small bowl and brush onto both sides of the eggplant slices; season both sides with salt and pepper. Grill eggplant slices, turning once, until tender and golden brown, 3 to 4 minutes per side. Transfer eggplant slices to a rimmed baking sheet with the short ends facing you.
- In a medium bowl, stir together ricotta, Parmesan, and half of the basil; season with salt and pepper. Spoon about 3 tablespoons of the cheese mixture onto each slice of eggplant and 1 inch from the bottom edge, leaving a 1/4-inch border on each side. Roll each slice away from you and arrange rolls, seam side down, on the baking sheet. Spoon tomato sauce over rolls and place them in the oven until warmed through, about 15 minutes. Sprinkle with Parmesan and remaining basil; serve immediately.

- Heat olive oil in a large skillet over medium heat. Add shallots and cook until softened, about 2 minutes. Add garlic and red pepper flakes and cook, stirring constantly, about 1 minute. Add wine, tomatoes and their juices, and marjoram or oregano; season with salt and pepper. Cook until thickened, about 15 minutes.

- In a medium saucepan place the olive oil and heat it on medium high until it is hot. Add the onions, garlic, and shallots. Saute the ingredients for 3 to 4 minutes, or until the onions are translucent.
- Add the basil and rosemary, and sauté them for 1 minute. Add the remainder of the ingredients. Cook the sauce slowly on medium low heat for 15 minutes.

- Heat dressing in large skillet on medium-high heat. Add meat and garlic; cook 10 min. or until meat is done, stirring frequently. Remove meat mixture from skillet; cover to keep warm.

- Preheat the oven to 400°F.
- Heat the olive oil in a small, ovenproof skillet over medium heat. Cook the onion and pepper for a few minutes, add the garlic and the spices, and cook until everything is softened.
- Add the tomatoes, salt and pepper and simmer for 10 minutes until the sauce is slightly reduced.
- Make two small wells in the cooked tomato and pepper sauce and crack one egg inside each one. Place the skillet in the oven and cook until the eggs whites are just set and yolk is still runny, about 10 to 12 minutes.
- To serve, sprinkle some Feta cheese and some minced cilantro over each skillet and serve.
