SEAFOOD CHOWDER

Number Of Ingredients 26

1 pound large shrimp (32 to 36 per pound), peeled and deveined (save shells for stock)
1/2 pound scallops
1/2 pound monkfish
1/2 pound fresh lump crabmeat, picked over to remove shells
1/4 pound unsalted butter
1 cup peeled and medium-diced carrots (4 carrots)
1/2 cup medium-diced yellow onion (1 onion)
1 cup medium-diced celery (3 stalks)
1 cup medium-diced small white or red potatoes
1/2 cup corn kernels, fresh or frozen
1/4 cup all-purpose flour
1 recipe Seafood Stock, recipe follows
1 1/2 tablespoons heavy cream (optional)
2 tablespoons minced parsley
Salt and freshly ground black pepper to taste
2 tablespoons good olive oil
Shells from 1 pound large shrimp
2 cups chopped yellow onions (2 onions)
2 carrots, unpeeled and chopped
3 stalks celery, chopped
2 garlic cloves, minced
1/2 cup good white wine
1/3 cup tomato paste
1 tablespoon kosher salt
1 1/2 teaspoons freshly ground black pepper
10 sprigs fresh thyme, including stems

Steps:

  • Cut the shrimp, scallops, and monkfish into bite-sized pieces and place them in a bowl with the crabmeat.
  • In a heavy-bottomed pot, melt the butter; add the carrots, onions, celery, potatoes, and corn and saute over medium-low heat for 15 minutes, or until the potatoes are barely cooked, stirring occasionally. Add the flour; reduce the heat to low and cook, stirring often, for 3 minutes. Add the Seafood Stock and bring to a boil. Add the seafood; reduce the heat and simmer, uncovered, for 7 to 10 minutes, until the fish is just cooked. Add the heavy cream, if desired, and the parsley. Add salt and pepper to taste, and serve.
  • Warm the oil in a stockpot over medium heat. Add the shrimp shells, onions, carrots, and celery and saute for 15 minutes, or until lightly browned. Add the garlic and cook 2 more minutes. Add 1 1/2 quarts of water, the white wine, tomato paste, salt, pepper, and thyme. Bring to a boil, then reduce the heat and simmer for 1 hour. Strain through a sieve, pressing the solids. You should have approximately 1 quart of stock. You can make up the difference with water or wine if you need to.

1/2 pound sliced bacon, diced
2 medium onions, chopped
6 cups cubed peeled potatoes
4 cups water
1 pound bay or sea scallops, quartered
1 pound lobster meat, cut into 1-inch pieces
1 pound uncooked medium shrimp, peeled and deveined
1 pound cod, cut into 1-inch pieces
1 pound haddock, cut into 1-inch pieces
1/2 cup butter, melted
4 teaspoons salt
4 teaspoons minced fresh parsley
1/2 teaspoon curry powder
2 quarts whole milk
1 can (12 ounces) evaporated milk
Oyster crackers, optional

Steps:

  • In a large soup kettle or Dutch oven, cook bacon over medium heat until crisp. Remove with a slotted spoon to paper towels; reserve drippings. Saute onions in drippings until tender. Add potatoes and water; bring to a boil. Cook for 10 minutes., Add the scallops, lobster, shrimp, cod and haddock. Cook for 10 minutes or until scallops are opaque, shrimp turn pink and fish flakes easily with a fork. Add the butter, salt, parsley and curry powder. Stir in milk and evaporated milk; heat through. Garnish with bacon, additional parsley, and oyster crackers, if desired.

Savory Seafood & Corn Chowder is creamy and loaded with flavorful meats. It is a sensational comfort food that will warm your heart and fill your belly!

½ lb bacon, fried and chopped
16 oz shrimp, medium with no tail
16 oz imitation crab, chopped
2 ½ cups corn, frozen kernels
1 tbsp garlic, minced
2 cups onion, chopped
3 cups chicken stock
1 tsp paprika
1 tsp salt
½ tsp pepper
1 cup milk

Steps:

  • After frying the chopped bacon in a large skillet, add shrimp and crab over medium heat. Fry until lightly browned. Combine meat with the remaining ingredients in a medium pot and bring to a boil. Reduce heat and simmer on low for 15 minutes. Serve and enjoy!

1 cup finely chopped onion
4 teaspoons olive oil
1 ½ cups sherry
1 cup minced carrot
1 cup minced celery
2 cups unpeeled, minced red potatoes
4 tablespoons tomato paste
1 pinch ground cayenne pepper
3 cups 1% milk
2 cups half-and-half
1 pound cooked shrimp
½ pound scallops
2 cups clam juice

Steps:

  • In a large stockpot over medium heat, saute onion in oil and sherry, until soft. Add carrots, celery, and potato and saute 2 minutes. Add clam juice and cover. Simmer until potatoes are soft (about 15 minutes).
  • Puree half of the mixture in a blender until smooth, then return to stock pot.
  • Add tomato paste, cayenne, milk, half and half, shrimp, and scallops. Bring to boil, lower heat to simmer, and cook for 5 minutes. Taste for seasoning and add salt and pepper, if desired.

1 (8 ounce) container fat free cream cheese
2 cloves garlic, minced
1 (26 ounce) can fat free condensed cream of mushroom soup
1 cup chopped green onions
1 cup sliced carrots
1 (15.25 ounce) can whole kernel corn, undrained
1 ½ cups chopped potatoes
1 teaspoon dried parsley
½ teaspoon ground black pepper

Steps:

1 small onion, chopped
1 celery rib, chopped
1 medium carrot, shredded

Ready, Set, Cook! Special Edition Contest Entry: This is a smoky creamy seafood chowder I started making a few years ago in my restaurant, the bacon and spinach add a rockefellar twist to it. It quickly became a favorite with the locals. It also works well with oysters.

2 tablespoons olive oil
12 ounces bacon
1 (20 ounce) package Simply Potatoes Diced Potatoes with Onion
whole green onion
3 (8 ounce) cans baby clams
1 lb fresh shrimp or 1 lb frozen shrimp
3 tablespoons liquid smoke
sea salt
ground black pepper
2 tablespoons flour
1 tablespoon basil
1 tablespoon cumin
2 tablespoons Old Bay Seasoning
1 tablespoon dried thyme
1 tablespoon cayenne pepper
4 teaspoons texas pete
2 (8 ounce) bottles clam juice
1 (16 ounce) bag spinach
1 (8 ounce) box frozen spinach (thawed and squeezed dry)
1 quart half-and-half

Steps:

  • Mix flour and all spices together in a bowl.
  • In deep pan fry bacon slices crisp remove and crumble in a bowl.
  • Drain off bacon grease leaving any particles in pan.
  • Add olive oil and heat on medium high scraping up any brown particles.
  • Add bag of Simply Potatoes with onions and 1/4 cup chopped green onion reserving tops for garnish.
  • When potatoes just start to brown add peeled deveined roughly chopped shrimp, cook for about 2 minutes.
  • Add bowl of spice mixture and stir for 1 minute.
  • Add back in crumbled bacon reserving some for garnish if desired.
  • Add Liquid smoke and texas pete.
  • Add whole baby clams with juice.
  • Add bottled clam juice.
  • Bring just to boil then lower heat to simmer for 5 minutes.
  • Add Spinach.
  • Slowly stir in half and half.
  • Simmer gently for 35 minutes stirring occasionaly.
  • Salt and Pepper to taste.
  • Garnish with green onion tops and crumbled bacon.

1 pkg. (8 oz.) PHILADELPHIA Neufchatel Cheese, softened
2 Tbsp. chopped fresh basil

Steps:

  • Heat oil in large saucepan on medium heat. Add onions and garlic; cook and stir 5 min. or until onions are crisp-tender.
  • Stir in tomatoes and 1/2 cup wine. Bring to boil, stirring frequently. Add cod; stir. Simmer on medium-low heat 6 min. Add scallops and shrimp; stir. Simmer 4 min. or until shrimp turn pink, scallops turn opaque and cod flakes easily with fork, stirring occasionally.
  • Whisk Neufchatel and remaining wine until blended. Add to chowder along with the basil; mix well. Cook and stir 2 to 3 min. or until heated through.
