Achiote Rice with Hot Dogs image

Hot dogs don't necessarily have to be nestled in buns. In this recipe, they're served on a bed of achiote rice and sprinkled with freshly chopped cilantro.

1 green pepper, chopped
1/2 cup chopped onions
2 cloves garlic, minced
1 Tbsp. tomato paste
1 pkt. (0.25 oz.) seasoning with coriander and annatto (about 1 tsp.)
3 cups fat-free reduced-sodium chicken broth
1-1/2 cups long-grain white rice, uncooked
1/3 cup chopped fresh cilantro, divided
6 OSCAR MAYER Wieners, cut diagonally into 1-inch-thick slices

Steps:

  • Cook peppers, onions and garlic in large deep skillet or Dutch oven sprayed with cooking spray on medium heat 3 min., stirring frequently. Add all remaining ingredients except cilantro and wieners; mix well. Stir in 3 Tbsp. cilantro; bring to boil. Cover; simmer on medium-low heat 20 min., stirring occasionally.
  • Meanwhile, cook wieners in skillet sprayed with cooking spray on medium heat 2 min., stirring frequently. Remove from heat; cover to keep warm.
  • Top rice mixture with wieners; sprinkle with remaining cilantro.
