Italian sausage ricotta pesto pie is an easy and delicious Italian dinner that's a little bit different from the usual fare with layers of cheeses, sausage and sauteed veggies!

1 (15 ounce) package frozen pie crust
3 (3.5 ounce) links hot Italian sausage, casings removed
¼ cup chopped red onion
¼ cup finely chopped red bell pepper
2 cloves garlic, finely chopped
1 cup ricotta cheese
¾ cup shredded mozzarella cheese, divided
½ cup pesto
¼ cup grated Romano cheese
1 teaspoon lime juice
1 teaspoon Italian seasoning
½ teaspoon garlic powder
½ teaspoon onion powder
¼ teaspoon salt
¼ teaspoon lemon pepper
2 small zucchinis, thinly sliced
¼ cup chopped walnuts
1 tablespoon olive oil

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Remove pie crust from the freezer.
  • Heat a large skillet over medium-high heat. Add sausage. Cook, breaking up the sausage, until juices are released, about 3 minutes. Add red onion, red bell pepper, and garlic; cook and stir until sausage is browned and crumbly, about 5 minutes more. Drain and discard grease.
  • Combine ricotta cheese, 1/2 cup mozzarella cheese, pesto, Romano cheese, lime juice, Italian seasoning, garlic powder, onion powder, salt, and lemon pepper in a small bowl. Spread over the pie crust. Sprinkle the sausage mixture over the cheese mixture. Arrange zucchini and walnuts on top. Sprinkle with remaining mozzarella cheese.
  • Bake in the preheated oven until crust is browned, about 30 minutes.

Yield One 9- or 10-inch pie shell

1 1/4 cups all-purpose flour
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
8 tablespoons (1 stick) cold unsalted butter, cut into pieces
3 to 4 tablespoons ice water

Steps:

  • Place the flour, salt, and pepper in the bowl of a food processor, and pulse to combine. Add the butter and process until the mixture resembles coarse crumbs. While the machine is running, gradually drizzle in the water, processing until the dough comes together to form a ball.
  • Transfer the dough to a lightly floured surface and shape it into a flat disk. Wrap it in plastic wrap and refrigerate it for at least 1 hour or up to overnight.

1 frozen puff pastry sheet (1/2 of 17.3-oz. pkg.), thawed
4 oz. (1/2 of 8-oz. pkg.) PHILADELPHIA Cream Cheese, softened
1/2 cup crumbled feta cheese
1 cup loosely packed baby spinach leaves, chopped
2 green onions, finely chopped
2 Tbsp. pesto

Steps:

  • Heat oven to 375ºF.
  • Unfold pastry sheet onto cutting board; cut into 12 squares. Press 1 pastry square onto bottom and up side of each of 12 muffin pan cups sprayed with cooking spray.
  • Bake 12 to 14 min. or until pastry cups are puffed and golden brown. Meanwhile, mix cream cheese and feta until blended; set aside. Combine spinach, onions and pesto.
  • Use rounded handle of wooden spoon to press indentation into center of each pastry cup, being careful to not press through to bottom of cup.
  • Spoon cream cheese mixture into pastry cups; top with spinach mixture.
  • Bake 7 to 10 min. or until heated through.
