2 1/2 cups all-purpose flour
2 tablespoons sugar
2 1/2 teaspoons baking powder
1 teaspoon baking soda
1 1/2 teaspoons cumin
1/2 teaspoon salt
3/4 cup Simply Potatoes Traditional Mashed Potatoes
1/2 cup buttermilk
1/2 cup goat cheese
1/2 cup sour cream
2 eggs
2 tablespoons butter, melted
1/3 cup green onion top, chopped
1/3 cup bacon, cooked and finely chopped

Steps:

  • Preheat oven to 350 degrees. In a medium bowl, combine the flour, sugar, baking powder, baking soda, cumin and salt. In a separate bowl, whisk together mashed potatoes, buttermilk, sour cream, goat cheese, eggs and melted butter until well combined. The wet ingredients will be slightly lumpy. Stir the wet ingredients into the dry and fold in green onions and bacon. Pour batter into a greased 8"x8" pan and bake 40-50 minutes until a tester comes out clean.

Yet another good way to eat sweet potatoes! This is good for breakfast or with dinner. Serve it warm...and offer a little butter or cream cheese to go with it! (from an Easy to Bake Easy to Make recipe)

3/4 c all-purpose flour
3/4 c whole wheat flour
1 Tbsp minced onion
1 1/4 tsp baking soda
1/2 tsp salt
1 1/4 c sweet potatoes, uncooked, peeled and shredded (about 2 medium)
1/3 c sugar
1/3 c vegetable oil
2 eggs

Steps:

  • 1. Preheat oven to 350 degrees. Grease bottom of an 8-inch round baking pan.
  • 2. Combine both flours, onion, baking soda and salt in a medium bowl; mix well and set aside.
  • 3. Combine sweet potatoes, sugar, oil and eggs in a large bowl; mix well.
  • 4. Add flour mixture to sweet potato mixture; stir until combined. Spread batter evenly in prepared pan.
  • 5. Bake bread until toothpick inserted in center comes out clean, 25-30 minutes. Plan pan on wire rack to cool slightly. Cut into wedges and serve warm!
  • 6. Hint...since you only need 1 tablespoon of minced onion in this recipe, you can mince the whole onion and freeze portions up to 3 months to use later!

Great bread idea! This sweet potato bread is baked using two types of Gold Medal® flour in less than an hour.

1 1/2 cups uncooked shredded sweet potato (about 1/2 potato)
1/2 cup sugar
1/3 cup vegetable oil
2 eggs
1 cup Gold Medal™ all-purpose flour
1/2 cup Gold Medal™ whole wheat flour
2 teaspoons instant minced onion
1 teaspoon dried rosemary leaves, crumbled
1 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon baking powder
1 tablespoon sesame seed

Steps:

  • Heat oven to 350°. Grease bottom only of round pan, 9x1 1/2 inches, with shortening.
  • Mix sweet potato, sugar, oil and eggs in large bowl. Stir in remaining ingredients except sesame seed. Spread in pan. Sprinkle sesame seed over batter.
  • Bake 25 to 30 minutes or until toothpick inserted in center comes out clean. Serve warm.
