A savory stew of pork and potatoes to warm you inside and out. Great with crusty bread or corn muffins for dipping into stew and cleaning the bowls!

1 tablespoon extra virgin olive oil
2 pounds cubed pork stew meat
salt to taste
ground black pepper to taste
garlic powder to taste
2 tablespoons cornstarch, or as needed
8 red potatoes
1 green bell pepper, chopped
1 red bell pepper, chopped
1 sweet onion, diced
1 (11 ounce) can whole kernel corn
1 (14 ounce) can stewed tomatoes
1 (10.75 ounce) can cream of mushroom soup
1 ¼ cups milk
1 (14 ounce) can beef broth
1 tablespoon Italian seasoning

Steps:

  • Heat the olive oil in a skillet over medium heat. Sprinkle pork on all sides with salt, pepper, and garlic powder, and lightly coat with cornstarch. Place pork in the skillet, and cook until lightly browned but not done. Transfer to a slow cooker. Place potatoes, green bell pepper, red bell pepper, onion, and corn in the slow cooker.
  • In a bowl, mix the tomatoes, cream of mushroom soup, milk, broth, and Italian seasoning. Pour into the slow cooker.
  • Cover, and cook 1 hour on High. Reduce heat to Low, and continue cooking at least 1 hour.

Stews are one of my favorite foods. They can be put together to simmer, leaving me time to get things done around the house. I know you'll appreciate the convenience of this one-dish meal.

1 pound lean boneless pork, cut into 1-inch cubes
1 cup chopped onion
1 teaspoon dried basil
1/2 teaspoon dried rosemary, crushed
1/4 teaspoon pepper
1/2 cup water
1 can (16 ounces) no-salt-added tomato sauce
2 cups sliced carrots
1 medium green pepper, chopped
1/2 pound sliced fresh mushrooms

Steps:

  • Place pork in a Dutch oven that has been sprayed with cooking spray. Cook over medium heat until browned. Add onion, seasonings, water and tomato sauce; bring to a boil. , Reduce heat; cover and simmer for 1 hour or until meat is tender. Stir in the remaining ingredients. Cover and simmer until the vegetables are tender, about 30 minutes.

Savory and Sweet Pork Stew with Ancho Chiles image

1 medium red onion, sliced
Juice of 2 limes
Salt and freshly ground pepper
5 or 6 dried ancho chiles, stemmed and seeded
4 cups chicken stock
1/2 cup blanched whole almonds
1/2 cup unsalted peanuts
1 tablespoon unsweetened dark cocoa powder
1/2 teaspoon ground cloves
3 to 4 cloves garlic, grated or made into a paste
1 small yellow onion, chopped
Handful of raisins
2 pounds pork shoulder, cut into bite-size cubes
About 2 tablespoons vegetable or peanut oil, plus more for drizzling
2 large bay leaves
1 cinnamon stick
12 flour or corn tortillas
Queso fresco or Cotija cheese, crumbled

Steps:

  • Separate the red onions into rings and place in a small plastic container. Dress with the lime juice and season with salt and pepper. Cover and store in the refrigerator.
  • Place the ancho chiles in a pot and cover with the chicken stock. Turn on the heat and warm the stock to reconstitute the chiles, 10 minutes or so.
  • Meanwhile, in a large Dutch oven, toast the almonds and peanuts over medium heat until browned. Transfer the nuts to a food processor. Reserve the pot. Add the ancho chiles with the stock to the food processor along with the cocoa powder, cloves, garlic, yellow onions and raisins. Season with salt and pepper. Puree until smooth. (You may need to do this in two batches.)
  • Pat the pork dry and heat a thin layer of oil in the Dutch oven over medium-high heat. Sprinkle the pork with salt and pepper, then brown in two batches, adding more oil between batches as needed. Return all the pork to the pot and pour the ancho sauce over it. Bring the mixture to a boil and add the bay leaves and cinnamon stick. Reduce the heat to a simmer and cook until the pork is very tender, 1 hour 15 minutes to 1 1/2 hours (depending on how large you cubed the meat).
  • Warm or char the tortillas. Serve the stew with the lime-pickled onions, crumbled cheese and the tortillas.
  • Cook's Note: If you are not serving the pork immediately, cool and store it in the refrigerator. Reheat over medium heat.

1/2 teaspoon pepper
1 1/2 teaspoons olive oil
1 jar (12 ounces) pork gravy
1 tablespoon Dijon mustard
1 tablespoon red wine vinegar
1 tablespoon Worcestershire sauce
1/8 teaspoon ground red pepper (cayenne)
1 bag (1 pound) frozen broccoli, red peppers, onions and mushrooms
1 pouch (4.7 oz) Betty Crocker™ butter & herb mashed potatoes
Water, milk and butter called for on potatoes pouch
1 egg, beaten

Steps:

  • Season pork with pepper. Heat oil in 10-inch skillet over medium heat. Cook pork in oil 3 to 4 minutes or until brown, turning to brown evenly.
  • Stir together gravy, mustard, vinegar, Worcestershire sauce and red pepper; stir into pork. Heat to boiling, stirring occasionally. Stir in vegetables. Heat to boiling; cover and simmer over medium-low heat 8 minutes, stirring occasionally.
  • Make potatoes as directed on pouch, using water, milk and butter. Add egg; whip with fork until smooth. Spoon potatoes over simmering pork mixture. Cover and heat through 5 minutes.

Wonderful Comfort food that uses Pork Stew Meat. I had bought some and I didn't know what to do with it. Now I do.

Number Of Ingredients 17

1 tablespoon extra virgin olive oil or 1 tablespoon canola oil
2 lbs cubed pork stew meat
salt
black pepper
garlic powder
2 tablespoons cornstarch
8 red potatoes
1 green bell pepper, chopped
1 red bell pepper, chopped
1 sweet onion, diced
1 (11 ounce) can whole kernel corn
1 (14 ounce) can stewed tomatoes
1 (10 3/4 ounce) can cream of mushroom soup
1 1/4 cups milk
1 (14 ounce) can beef broth
2 teaspoons ground cumin
1 tablespoon italian seasoning

Steps:

  • For some reason it won't let me add a ingredient. You can also add a 4 ounce can green chiles, chopped in with the tomatoes.
  • Heat the olive oil in a skillet over medium heat.
  • Sprinkle pork on all sides with salt, pepper, and garlic powder, and lightly coat with cornstarch.
  • Place pork in the skillet and cook until lightly browned but not done. Transfer to a slow cooker. Place potatoes, green bell pepper, red bell pepper, onion, and corn in the slow cooker.
  • In a bowl, mix the tomatoes, cream of mushroom soup, milk, broth, and chiles, cumin and Italian seasoning. Pour into the slow cooker.
  • Cover, and cook 1 hour on High. Reduce heat to Low, and continue cooking at least 1 hour.
  • This can also be cooked on the stove top. Add all together, bring to a boil and then simmer for 3 hours stirring occasionally. Cook time varies on method used. Check meat to make sure it is done.
